4 Summer Suds to Try Today

4 Summer Suds to Try Today, featured image

There’s nothing better on a hot summer day than a deliciously crafted beer.

Each summer, a few brewers experiment and provide flavors and styles that lean toward the lighter, brighter side of things, including hazy IPA’s, sour and wild beers, and fruit-filled brews.

This year, brewers are hard at work hoping to give craft beer lovers a unique taste while trying not to delve off into the heavier, darker end of the spectrum. One new brew out of Brooklyn Brewery is Bel Air Sour, a light-bodied sour ale with aromas and tastes of fresh-picked peaches, pink grapefruit, dark cherries, dried rose petals, and earthy characters, finishing off crisp and dry.

Another great summer pick that stems from the wild side of brewing is Prairie Artisan Ales’ Twist, a farmhouse ale. This wild ale is a light golden color with floral and citrus hop aromas with a subtle honey scent, along with hints of lemon zest and barnyard characters. Strong citrus flavors show up first, with a balanced malt sweetness and notes of sour pickle and ginger providing an astringent, dry finish.

For those who love a fresh, fruity feel to their summer brews, then New Belgium’s Strawberry Lemon Ale from the brewery’s Tartastic Fruit Series is a perfect match, with a fresh fruit aroma reminiscent of a glass of strawberry lemonade with hints of fresh-cut grass and black pepper and a slight cereal character. Fresh strawberries present at the first taste, followed by notes of lemon honey sweetness and a pale malt backbone that finishes off with a tart, dry feel.

Don’t forget about the traditional summer beers like Deschutes Brewery’s Twilight Summer Ale, which gives off crisp, citrusy hop aromas with flavors of juicy grapefruit and a malty-sweet backbone that has a light, crisp finish.

There are tons of summer brews out there for you to choose from. You’ll have no trouble finding one that will enhance your summer experience and keep you cooled down in between those burger flips.

Chillin’ With Nelson Estevez

Chillin with Nelson-Estevez, featured image

Native New Yorker Nelson Estevez is an actor and mixed martial artist who has worked on his own choreography for fight scenes.

Estevez began his career in NYC training at Terry Schreiber Studios, which gave him strong foundational skills in theater. Estevez recently starred in the film Acrimony, a psychological thriller produced, written, and directed by Tyler Perry. The film also stars Taraji P. Henson, Lyriq Bent, Jazmyn Simon, and Crystle Stewart, and follows a loyal wife who decides to take revenge on her ex-husband. Estevez plays “Casey,” who has a close connection to the family and “Melinda” (Henson).

Tell us a bit about the projects you are working on.

I am excited to say that I landed a supporting role in Tyler Perry’s, Acrimony, starring the very talented Taraji P. Henson. I play the character named Casey, who is one of Taraji’s (Melinda’s) brother-in-laws that tries to be as supportive as possible to his wife June (played by Jazmyn Simon) and Melinda during Melinda’s decisions and eventual actions after feeling “used” and “betrayed” by her ex-husband Robert (Lyriq Bent).

I have also been more behind the scenes working on projects. I’m currently in the process of directing, writing, and producing, so I’ll be submitting to future festivals for an upcoming short film which we raised $23k for. The name of the short is called, “Tubby Hook” and it’s a loose story on tension between the Irish and Dominican communities living in Inwood, Manhattan in the 1980’s. I have also written two pilot series dealing with certain common issues but from Afro Latino perspectives—those are ready to go! I also worked on a film directed by Aisha Tyler (Criminal Minds) called, “Axis” which was just released in streaming platforms iTunes, Amazon, Fandango. Sam Rockwell, Emily Bett Rickards, Emmett Hughes, Adam Rodriguez are just a few of the great actors attached to this film which I am proud to be a part of.

With your busy schedule, what do you like to do with your downtime?

Rest! Sometimes it’s difficult because you just want to keep going with the momentum. It’s easier said than done but sometimes you just need to regroup, rest, and restore your body, mind, and spirit. It’s just as important as the grind.

When you go out to eat, where do you like to dine?

I love some Ethiopian cuisine! I’m usually in little Ethiopia in Los Angeles over on Fairfax Avenue. It’s something about the spices combined with the lentils, split peas, vegetables, and injera. I also love how it’s served on a large plate, which is very communal, intimate and eaten with your hands.

What types of dishes do you usually order?

Vegetarian combo and sometimes I order the full fried fish to come with it; depending on my mood. It makes me feel as if I’m back in Dominican Republic by the beach.

Do you cook?

I do! I’m still learning but have made vast improvements. I love to grill food. I can eat grilled salmon all day, every day. I’m pretty simple and efficient when it comes to cooking.

What types of drinks do you order when out?

I’ll have a Sazerac chilled, Old Fashioned neat, or a Negroni on the rocks. It depends on the bartender/location, and on my mood. I don’t drink much so I’m usually feeling fine after one, super nice after two, and ready for bed after three drinks.

Do you prepare drinks at home?

Once in a while after a long day I might make an Old Fashioned to unwind.

Do you own a home bar?

I own a home bar table but eventually I will own a home bar. Goals.

What will your home bar be like?

I would stock it with a plethora of whiskeys, bourbons, and ryes. I would also stock some scotch and wines for my lady.

What is your favorite drink/cocktail?

Chilled Sazerac. I actually like a splash of the absinthe left in the drink.

Have you ever been a bartender?

Once when I worked for a wedding, I was doing catering after graduating college. It was a limited menu with simple drinks like Jack and Cokes, Seven on Sevens, Cosmos, etc. I was a generous pourer!

Sebago Lake Distillery Launches High End Craft Rum Brands

Sebago Lake Distillery High End Craft Rum, bottles on dark back, featured image

Handcrafted in Maine, Sebago Lake Distillery Rums Embody the Carefree Lifestyle by the Lake.

Sebago Lake Distillery has announced the official opening of their Maine-based distillery and the successful launch of three distinctly different and innovative, handcrafted rum brands, with another set to debut later this year. Sebago Lake is Maine’s only distiller focused exclusively on producing rum.

Sebago Lake Distillery represents the ultimate dream of five long-time friends including two local Mainers. In 2013 the five-some set in motion a long term plan to open their own distillery, energized by Maine’s long and storied history of rum production, and debut a range of unique, high-end rums that embody the group’s passion and the lifestyle of living by the lake where time slows down and fun comes easy. Sebago Lake, the team’s inspiration, provides the perfect backdrop, according to the team, “Life by the lake is more relaxed and carefree. Sebago Lake Rums are crafted for enhancing life as it comes, one sip at a time.”

The team dedicated the next four years to perfecting their craft and laying the groundwork to launch their unique range of craft rums including Original Rum – an extra dry rum made from molasses blended with five carefully selected aromatics for subtle complexity, KOPI Coffee Flavored Rum – a blend of handcrafted molasses-based sipping rums and 100% custom roasted Sumatra coffee, and Spider Island Rum – a dark amber, molasses-based rum blended with aromatics. Spider Island’s rich color is attained through a Belgian-inspired molasses caramelization process.

When asked what makes Sebago Lake Rums so different, Sebago Lake Distillery’s Co-Founder and Head Distiller, Dan Davis, said his team has a mission.

“We don’t cut corners. All of our rums are 100% pot distilled in small batches using only the finest, all natural ingredients and each step of the process—mashing, fermenting and distilling—is executed from scratch right here at the distillery. There are no fancy column stills or electronic controls—every valve is turned by hand and every batch is tasted and refined to perfection to create superior quality rums perfect for sipping lakeside or celebrating with friends when the moment is right. We’re making rum that is approachable for those who don’t generally drink their spirits neat but complex and interesting enough for experienced whiskey drinkers.”
– Dan Davis, Sebago Lake Distillery’s Co-Founder and Head Distiller

Co-Founder and CEO, Dave Tomer, sees a bright future.

“The craft industry is trending upward and consumers are gravitating to locally-made, handcrafted products that emphasize quality ingredients and taste appeal. Both Original and KOPI are showing healthy growth trends in Maine, exceeding the sales volume of many of the more established Maine Craft Rum producers. In addition to a fourth, barrel-aged rum set to launch later this year, we have aggressive plans to bring our rums to neighboring New England States including Massachusetts, New Hampshire, Rhode Island and Connecticut. We believe the passion that we have shared since our dream first took shape is evident in every drop of Sebago Lake Rums. It is a thrill to experience just how much consumers, retailers and on-premise operators agree and are embracing the realization of our dream.”

Trumer Pils California Fresh Cocktail Competition, featured image

A Dash of Creativity with Tradition Can Win You $5,000!

The time-tested Trumer Pils family recipe has been putting smiles on the faces of beer drinkers for centuries, so it’s no surprise the beer has also won a multitude of awards, including three World Cup Gold Medals. Now, Trumer and Chilled magazine are challenging bartenders this summer to incorporate the pils into a California-inspired cocktail in the California Fresh Cocktail Competition.

Trumer Pils, located in Berkeley, California, surfaced in 2004 as a sister location to the Trumer Brauerei, which has produced beer since 1601 in Salzburg, Austria. The Bay Area location allows Trumer to marry the American craft brewing passion with centuries-old Austrian brewing traditions.

“Our handcrafted pilsner remains true to style, focusing on four pure ingredients and extended cold fermentation to create perfectly balanced beer.”
– Lars Larson, Master Brewer

Indeed, all one will find in Trumer Pils (which has a 4.9% ABV) is malted barley, noble Saaz hops, a brewery-developed proprietary yeast strain, and pure water that flows from the Sierra Nevada mountains.

The California Fresh Cocktail Competition Picnic Display

The California Fresh Cocktail Competition

Still, while adhering to tradition is laudable, there’s no reason a brewery can’t also embrace innovation. And that’s where the California Fresh Cocktail Competition comes into play. Bartenders are being asked to create a Trumer Pils cocktail this summer that includes no more than five additional ingredients (and an optional garnish) that captures the spirit of California.

“We are looking for recipes that can be enjoyed in the sunny southern region or the crisp north. Trumer Pils is a refined beer that is very versatile. Not only does it pair well with almost any food, it’s also the perfect ingredient for a cocktail. Mixology isn’t just for spirits and wine—incorporating beer feels like the perfect way to mix things up.”
– Lars Larson

The cocktail competition is yet another way of adding a dash of creativity to tradition. Whether it’s Napoleon setting fire to the Austrian Brauerei and crops in 1800 or opening a brewery in California, Trumer has always managed to forge ahead while also holding onto its past.

The Rise Of The Banana Daiquiri

By | Mixology News

Giffard Banana Daiquiri, white, featured image

Matt Belanger from Death & Co. New York, is known for his undoubtedly fun approach to making cocktails, often with a tropical vibe.

In this riff on the classic Daiquiri, he uses a combination of pot-still Jamaican rums: Rum-Bar Gold and White Overproof, produced at the historic Worthy Park Estate. With their distinctly full, banana aroma and flavor, the rums make an ideal pair for the Giffard Banane du Brésil, that lends the signature banana flavor. He balances the drink with the exact proportion of fresh squeezed lime juice. Et Voila … the perfect Daiquiri is born.

History of the Banana Daiquiri

The daiquiri—intensely loved by bartenders and cocktailians—has seen its fair share of riffs and modifications, but no other flavor complements rum quite like banana. It is well known among industry connoisseurs that Charles H. Baker, author of 1939’s The Gentleman’s Companion, argues the legendary daiquiri was invented in order to veil the combination of rum and water and make it more palatable.  A common grog used to prevent malaria among sailors and the Royal Navy, the solution to add lime juice and sugar to the otherwise medicinal mixture originated with Harry E. Stout and Jennings Cox, who created the cocktail in 1898 in the village of Daiquiri, in Cuba.

The Bartender’s Handshake

Possibly no other cocktail is revered by bartenders quite like the Daiquiri. Though known for its simplicity, the Daiquiri is easy for unskilled bartenders to get wrong merely by using the wrong proportions. In fact, bartenders are notorious for ordering this drink as a sort of “litmus test” to gauge the capability of a rookie or unknown bartender.

Split the Base Rum

A Daiquiri is simple, with the essential elements of rum, lime juice, sugar, and water (i.e., dilution of ice). To add a layer of complexity to an otherwise-standard list of ingredients, bartenders all over the country have started to experiment by splitting the rum base into different styles of rum, often from different islands in the Caribbean, in order to reach a desired “blend” of flavors from the rum. In his version above, Matt Belanger from Death & Co. uses a four-year aged rum from Rum-Bar Jamaica at 40% ABV, along with a bit of Rum-Bar White Overproof Rum at 63% ABV.

Giffard, Banane Du Bresil, go bananas cocktail, bottle and garnishes

Ingredients:

  • 3/4 oz. Giffard Banane du Brésil
  • 1 3/4 oz. Rum-Bar Gold
  • 1/4 oz. Rum-Bar White Overproof
  • 3/4 oz. Fresh Lime Juice
  • 1/4 oz. Simple Syrup

Preparation: Combine all ingredients in a shaker with ice. Shake vigorously and double strain into a coupe glass.
