Oysters and Celery Gin – A Fall Seasonal Match

Tis the season for wild oysters—when these coveted, briny delicacies are at their meatiest and tastiest.

By matching oysters with complimentary taste profiles, it’s possible to create entirely new taste experiences. Rutte Botanical Distillers have become masters at pairing their spirits with food, and as the official gin at this year’s New York Oyster Week, their range of botanical gins were paired alongside oysters.

Oysters briny history runs as long and storied as gin itself. The New York harbor was once known for its oyster beds, which made them a very popular snack from street vendors in the late 19th century. The history of oysters and the lure of New York City were a perfect pairing for Rutte Gin. The Rutte distillery in Dordrecht, near Rotterdam has been distilling botanical based spirits since 1872. Rutte’s international range now includes Rutte Old Simon Genever, Rutte Celery Gin and Rutte Dry Gin. No added flavors or colorings are used and all of the flavor and color are extracted from fresh fruits, herbs and nuts.

Rutte Celery Gin is distilled with a unique bouquet of botanicals: celery leaves, coriander, cardamom, juniper and orange peel, giving the gin its complex taste. The magic of food pairing with Rutte becomes more pronounced and distinctive in combination with other aromas. Rutte Celery Snapper Cocktail

Ingredients:

  • 2 parts Rutte Celery Gin
  • 4 parts Tomato Juice
  • 1 part Pineapple Juice
  • 1/4 part fresh Lemon Juice
  • 1/4 part Worcestershire Sauce
  • 2 dashes Soy Sauce
  • 2 dashes Hot Sauce
  • 2 pinches Celery Salt
  • 1 pinch Black Pepper
  • 1 pinch Chili Powder
  • Salt to Taste
  • 1 Celery Stick

Preparation: Combine all ingredients for a single cocktail. For several cocktails, multiply the ingredients—except the Rutte Celery Gin—by the number of desired servings to prepare a pre-mixed batch. Add ice cubes and 2 parts of the Rutte Celery Gin to each glass and top with the pre-mixed batch. Garnish with a celery stick.

Ingredients:

  • 2 oz. Braddock Oak Single Barrel Rye
  • 1 oz. Partner Sweet Vermouth
  • 3 drops Bittercube Cherry Bark Vanilla Bitters
  • Luxardo Cherry (for Garnish)
  • Tiny Flower (for Garnish)

Preparation: Combine all ingredients into large mixing glass over ice. Stir until thoroughly chilled and strain into coupe glass. Garnish with luxardo cherry and a tiny flower.

For three days this past August, over 300 people gathered at The LINE Hotel in Los Angeles to attend the third annual BevCon, an industry conference for beverage professionals.

Newly relocated to sunny L.A., the first two conventions were held in Charleston, South Carolina, before moving to the West Coast.

BevCon allowed beer, wine, coffee, and spirits enthusiasts to get together, network, and learn more about their craft. Professional bartenders, sommeliers, buyers, beverage makers, distributors, importers, media, marketing and public relations professionals, educators, and other related companies got together to learn from one another, share resources, and become inspired to grow their respected businesses.

The convention’s opening session focused on collaborations without borders, when FEW Spirits founder Paul Hletko recalled a failed collaboration with rock band Flaming Lips and poured samples of his FEW Breakfast Whiskey, which was finished in maple syrup barrels, as well as a sample of a recent collaboration with Intelligentsia Coffee & Tea.

The opportunity to interact and collaborate with like-minded professionals is not lost on Hletko.

“As a distiller, most of the places I go to are full of other distillers or bar folks. The opportunity to be with wine, tea, coffee, and beer people is a great opportunity to connect and build relationships.”

Other panel highlights included sessions on draft cocktails and how they can alleviate issues with cocktail consistency while proving to be cost-effective. Another learning session focused on addressing and preventing sexual harassment in the workplace. The “Gin Methodology: Single versus Multi-shot” and “Open Up: Making the Case for Aperitif Service” sessions also proved to be very interesting.

During a keynote address, Master Sommelier Bobby Stuckey (who also owns Frasca Food and Wine in Boulder, Colorado) praised the food and beverage industry and stressed the need to be modest.

“There’s no way you can be great in this industry unless you’re humble. You need to have humility to learn, to take advice, and to grow. We can start moving toward excellence today by being humble, editing out the extraneous, and seeking outside influences for ourselves.”

Other seminar highlights focused on rum and the world of sugarcane distillates, mezcal mechanics and the role of the still, the wines of Baja, and the influence of hip-hop on the wine and spirits industry, and also posed the question if sake can be the key to a healthier bottom line.

Pop-up bars around town kept it fun and interesting for visitors, and tasting sessions proved noteworthy for anyone looking to taste new beer, wine, or spirits.

BevCon also donated to Home Team Angels, which provides financial scholarships for those aspiring to grow their business or career, or assist those facing hardships as a result of natural disasters or other unforeseen adversities.

While the imbibing started early in the morning and lasted all day and well into the evening, it was an energetic and focused three days on the craft and inner workings of the spirits industry.

  • 2 oz. Wódka Vodka
  • 1 oz. Bénédictine
  • 2 dashes Angostura Bitters

Preparation: Stir it all up in a shaker filled with ice. Strain into a chilled cocktail glass, and garnish with lemon peel.

  • 2 oz. Wódka Vodka
  • 3 oz. Fresh Orange Juice
  • 1/2 oz. Liquore Galliano
  • slice of Orange

Preparation: Pour Wódka into a highball glass filled with ice. Add the OJ and stir well. Now throw a float of Galliano® on top to make it fancy. Garnish with orange slice.

  • 2 oz. Wódka Vodka
  • 3 oz. Ginger Beer
  • Juice of Half a Lime
  • Lime Wedge
  • Ice
  • Copper Mug (Preferred, but Optional)

Preparation: You’re basically just pouring all of this stuff into a pretty cup. Add Wódka ginger beer, and lime juice to a copper mug filled with ice. Garnish with lime wedge. Voilà!

  • 2 oz. Wódka Vodka
  • 3/4 oz. Dry Vermouth
  • Lemon Twist or Olives

Preparation: Make a “shaken not stirred” joke to anyone within earshot. When they don’t laugh, pour the ingredients into a shaker filled with ice. Get to work. Strain into a cocktail glass and garnish with a lemon twist or speared olives.

Ingredients:

  • 1 1/2 oz. Wódka Vodka
  • 3 oz. Tomato Juice
  • 1/2 oz. Fresh Lemon Juice
  • A Few Drops of Tabasco
  • 1/2 tsp Worcestershire Sauce
  • Celery? Lemon Wedge? A Miniature Burger?

Preparation: Coat the rim of a highball glass with lemon juice and dip it into a mixture of pepper, salt, and celery salt. Add Wódka, tomato, and lemon juice into glass and stir well. Add spices, Tabasco, Worcestershire, and ice, stir it some more. Garnish with whatever ridiculous food item you’re craving right now.

Preparation: Muddle blood orange wedge with syrup in a mixing glass. Add ice and remaining ingredients. Shake and strain into a coupe glass. Garnish with an orange peel.

Meet Graham Coull – Master Distiller for Glen Moray Distillery

In Scotland’s far north, the River Lossie runs through the ancient town of Elgin, whose history was first recorded in 1190 A.D.

The Glen Moray Distillery isn’t quite as old, dating back to 1897 when the original Elgin West Brewery converted to distilling from beer brewing. Unusual for the time, the company’s single malts were aged in a range of casks, a tradition that still holds today.

Only five master distillers have overseen the distillery in its 121-year history, allowing for remarkable consistency across its range of single malts. The current Master Distiller, Graham Coull, took the helm in 2005 from Edwin Dodson, an innovator known working with cask maturation in Chenin Blanc and Chardonnay casks.

Talk to us about Glen Moray Distillery.

Glen Moray Distillery is located in the heart of Speyside in the town of Elgin. The distillery has been operational for over 120 years, and during this time there have only been 5 master distillers at the helm.

What sets Glen Moray scotch apart from other whiskies on the market?

It can be very difficult to put your finger on what makes one distillery different from another. However, the fact that there have only been five master distillers managing and creating the spirit over such a long period of time is unique. It has ensured a consistent approach, but at the same time has allowed each master distiller the time to impart their own character and personality on the distillery and the spirit.

What would you like bartenders to know about Glen Moray Scotch?

The Glen Moray range offers something for everyone. The Classic range is young and fresh, and allows consumers to enjoy different twists of flavor ranging from American oak to port, sherry, and even a something a bit smokier with the peated expression. The Heritage range whiskies (which are 12, 15, and 18 years old) are rich in taste and character, well balanced, and complex.

What’s the best way to enjoy Glen Moray?

The only way to enjoy Glen Moray is how you like it! I would say, however, that whisky is a very sociable drink best enjoyed with friends sharing stories whilst enjoying the complexity of the spirit.

Anything coming down the pike for the brand that you’d like to share?

I’m constantly working with the Glen Moray spirit and experimenting with different cask types and flavor profiles. This year will see the release of a Glen Moray finished in Cabernet Sauvignon red wine casks sourced from France. Glen Moray has a long history of experimenting with wine casks, but this will be the first time that Cabernet casks have been used.
