The Golden Week Cocktail Competition Kicks Off

Cardinal Mendoza and Chilled are kicking off a Golden Week Cocktail competition for all bartenders and mixologists who want to show they’ve scored the golden ticket for cocktailing. The challenge invites you to create a unique and inspiring cocktail using one or more of three winning brands: Cardenal Mendoza Sherry Brandy, Angelus Liqueur, and Fifty Pounds Gin. The Golden Week Cocktail competition is part of the 4th Annual Golden Week, a weeklong international celebration of brandy.

Late Summer has always been one of my favorite times of year. I visit our local farmers market on a weekly basis, and all of the produce always has me inspired to create something new. Produce of ripe melons, fresh herbs, stone fruits and beautiful flowers are very abundant and some of my favorite things to use in cocktails. Taking a sip of La Pivon Vermouth instantly reminded me of herbal garden in a glass. The rich aroma of the botanicals came through harmoniously with the ripe red fruit and subtle spices. On the palate, it translated directly to the flavors on the nose, and I knew that I wanted to use it in a light, refreshing cocktail that merged some of the wonderful flavors of our local produce as well as highlight the delicious flavor of La Pivon Roja Vermouth.

Ingredients:

  • .75 oz. La Pivon
  • .75 oz. Earl Grey Gin
  • .75 oz. Lime Juice
  • .75 oz. Watermelon Juice
  • .25 oz. Ginger-Mint Syrup
  • 2 oz. Club Soda
  • Watermelon Segment (to Garnish)
  • Mint Sprig (to Garnish)
  • Daffodil Flowers (to Garnish)

Preparation: Add all liquid ingredients, save for the club soda, to a shaker tin with ice. Shake and strain into a highball glass with fresh ice. Garnish and serve.

Meet Aaron Joseph

Aaron has worked at some of the area’s most prestigious restaurants including The Inn at Perry Cabin where he quickly advanced from busser to bartender within a few short months. After six years of service, Aaron had the opportunity to assist in the opening of La Samana, a sister property on St. Maarteen. Experiencing island culture and the use of fresh ingredients, Aaron realized his passion for mixology. Upon his return to the states, Aaron accepted a number of challenging opportunities that allowed him to evolve into a mixologist, creating seasonal cocktails and managing beverage programs at Metropolitan in Annapolis, Farmers & Fishers in Washington, D.C, and Bourbon Steak in Georgetown. Most recently, he served as head bartender at Wit & Wisdom, A Tavern by Michael Mina. Aaron was responsible for the creation and execution of Wit & Wisdom’s cocktail program, as well as staff education and training. Elated to simply make good drinks, Aaron has an affinity for putting a clever spin on classic cocktails and enjoys experimenting with house-made syrups and infusing his liquor. Some of Aaron’s accomplishments include 2015 finalist for cognac national drink completion; 2015 finalist for Clement Rhum Ti’ punch competition; 2015 published author for writing the foreword for a book called The Forgotten Cock-tails, a history of Maryland cocktails from 1706 to present; 2014 readers choice for Baltimore’s Magazine Best Bartender; 2014 Portland Cocktail Week winner of the Cognac Experience competition; and 2014 Woodford Reserve Manhattan Competition regional Champion.

I was inspired by the fresh green notes in Bozal Ensamble and wanted to enhance those with what has been growing in my garden. As soon as I walk outside, the scent of tomato plants grabs me right away—it’s one of the signifiers of the short Chicago summer for me. The vegetal quality in the Bozal Ensamble made the infusion of the tomato leaf very natural. For every other element in the cocktail, I picked whatever else was growing in abundance and had a scent that popped out at me like the tomato leaf. Everything except for the citrus represents the wild flavors of summer grown right here.

Ingredients:

  • 2 oz. Tomato Leaf-Infused Bozal
  • .5 oz. Suze
  • .5 oz. Lime Juice
  • .5 oz. Strawberry Cordial
  • .25 oz. Grapefruit Juice
  • Tonic Water (to Top)
  • Thai Basil (to Garnish)
  • Grapefruit Peel (to Garnish)

Preparation: Combine all liquid ingredients—save for the tonic water—in a tin, and shake with ice. Pour over fresh ice into a Collins glass and top with tonic water. Garnish with Thai basil and grapefruit peel.

With roots grounded in her culinary background as a chef, Lauren’s approach to cocktails fuses the worlds of food and beverage to create innovative drinkable and edible cocktails. As a beverage consultant and trainer, Lauren develops drink programs for restaurants and bars. Notably, Lauren created the award-winning cocktail program for the W Hotels and Loews Chicago. She currently heads up the beverage program at Raised Urban Rooftop Bar in the Renaissance Hotel as Bar Operations Manager.

I work at a bar that celebrates my two favorite styles of spirits: agave and cane spirits. Naturally, the two worlds and their drink styles begin to blend and blur together over time. I love agave drinks, but I rarely see them in blended cocktails, frozen Margaritas aside. So I wanted to make a cocktail that combined the flavors of Mexico with the frosty delicious coolers of the islands. Coconut, chili, lime and Pasote blend together to make a delicious, refreshing drink for even the hottest of days.

Ingredients:

  • 1.5 oz. Pasote Reposado
  • 2 oz. Coconut Cream*
  • .5 oz. Ancho Reyes Verde
  • Half of a Lime, Quartered
  • 1:1 Mix of Cayenne and Salt (to Rim)
  • Dehydrated Lime (to Garnish)

*Coconut Cream

  • 1 liter Coconut Milk
  • 750 ml. Coco Lopez
  • 375 ml. Simple Syrup

Preparation: Combine all ingredients in a blender, with roughly .75 of a small shaking tin of pebble ice. Blend and pour into a tall glass, rimmed with chili salt. Garnish with a dehydrated lime.

Ingredients:

  • 1 1/2 oz. Sagamore Spirit Signature Rye Whiskey
  • 1/2 oz. Crème de Mure Blackberry Syrup
  • 1/2 oz. Lime Juice
  • 3 oz. Ginger Beer
  • Fresh Mint and Blackberries (for Garnish)

Preparation: Add whiskey, crème de mure and lime juice to a shaker and double strain into a Collins glass with ice. Top with ginger beer. Garnish with mint and a skewer of blackberries.

As summer comes to a close and we look to the fall season, we have to remember that beautiful weather and warming flavors are on the horizon.

For this month’s new releases, some great whiskies have hit the market just in time for leaf peeping, along with two excellent gins and a savory saffron liqueur. As you stock your home bar for September, take a look at the best new spirit releases from August.

Uncle Nearest 1884 Small Batch Premium Whiskey ($50)

Uncle Nearest Whiskey is inspired by Nearest Green, the first African-American master distiller on record and the man who taught Jack Daniels how to make whiskey. The premium brand just released their 1884 Small Batch bottling, a seven-year-old minimum whiskey that commemorates the final year that Nearest is thought to have put his own whiskey into barrels before he retired. The pale, 93 proof spirit has a bright, fruity flavor with notes of cherries and dark chocolate that sips beautifully on its own or in an Old Fashioned.

Woodford Reserve Kentucky Straight Wheat Whiskey ($35)

At the end of Prohibition, the federal government permitted four styles of American straight whiskey—bourbon, rye, wheat and malt. With the launch of the latest expression in their core line, Woodford Reserve now has all four grain types in their collection. Woodford Reserve Kentucky Straight Wheat Whiskey clocks in at 90.4 proof and offers aromas of cooked, spiced apples and vanilla. On the palate, a fruit-forward flavor of applesauce, mint and coconut makes it perfect for mixing in your favorite whiskey cocktails.

Wild Turkey Master’s Keep Cornerstone Rye ($173)

As the fourth release in the Master’s Keep series, and the oldest rye ever released by the brand, Wild Turkey Cornerstone Rye is truly something special. For this limited-edition expression, Master Distiller Eddie Russell handpicked a lot of his best ryes from char #4 barrels, all aged from nine to 11 years, and blended them to created a balanced, flavorful rye whiskey. The nose is soft with hints of vanilla and baked apple, while the palate delivers bold but smooth notes of black pepper, honey and cherry. Bottled at 109 proof, this is an exceptional expression to sip during moments of celebration.

Apologue Saffron Spiced Liqueur ($40)

Chicago-based Apologue wowed the liqueurs space when they released their savory Celery Root Liqueur late last year. Now, the brand is back with another aromatic expression that will give your palate a break from the sweet. Apologue Saffron Spiced Liqueur uses a fragrant mix of saffron, cardamom, coriander, lemongrass, cinchona and turmeric for a bright, savory liqueur that tastes delicious when mixed with club soda or sparkling wine. If you want to get funky with it, use Apologue Saffron in place of Grand Marnier in a classic Sidecar.

Dingle Single Malt Whiskey, Batch No. 4 ($90)

Dingle opened its distillery doors in 2012, and although it’s a relative newcomer, their excellent spirits have ushered in a new class of modern Irish whiskey distilling. Now, their Batch No. 4 Single Malt Whiskey is finally available in the United States. Dingle sources their own grain, triple distills four casks per day, then marries a combination of whiskies from bourbon, sherry and port casks for this expression. The resulting flavor is a balanced mix of oak and vanilla with notes of dried apricots and raisins that come through from the fortified wine casks. It’s a perfect whiskey to sip neat or on the rocks after a big meal.

Dorothy Parker Rose Petal Gin ($29)

In honor of Dorothy Parker’s 125th birthday, New York Distilling Company has released a pale pink-hued gin to celebrate the lauded writer. The base of Dorothy Parker Rose Petal Gin starts with their award-winning original recipe, which includes botanicals like hibiscus peels and green cardamom pods. The Rose Petal Gin gets its natural color from an infusion of red and pink rose petals, as well as crushed elderberries, which is also one of the key botanicals in the original gin. This expression makes a gorgeous Gin and Tonic, especially when garnished with fresh citrus.

Tod & Vixen’s Dry Gin 1651 ($40)

Located in New York’s Hudson Valley, The Vale Fox Distillery was founded by Eral Gokgol-Kline, who brought in experts like bartenders Gary (gaz) Regan, Leo Robitschek and Jeffrey Morgenthaler, and experienced Master Distiller Roselyn Thomson (formerly with John Dewar & Sons). This month, The Vale Fox released its very first spirit, Tod & Vixen’s Dry Gin 1651. This expression gets the date 1651 because that’s the year Gokgol-Kline’s great, great grandfather arrived in New York from Holland and was given a license to distill. The vibrant gin is made by macerating botanicals like juniper, angelica root and rooibos tea for a smooth, Martini-ready spirit.

Sagamore Spirit Cognac Finish ($70)

Sagamore Spirit has been making a case for Maryland rye, and they’ve released some of our favorite whiskey expressions these last couple years. Their latest bottling, Cognac Finish, is one of the best to date. Sagamore’s straight rye whiskey is finished in French cognac barrels to give the spirit a nose of apricot and cinnamon with a velvety flavor of apple, vanilla and brown sugar. Even at 101 proof, this spirit is smooth enough to sip neat, but we also love it in a Black Manhattan with chocolate bitters.
