Elias joins the U.S. based Puerto de Indias team directed by Mike Ginley, Puerto de Indias U.S. general manager responsible for overseeing the expansion and growth of Puerto de Indias Strawberry and Puerto de Indias Black premium gins in the U.S.

Beverage Manager Kelly Dawson enjoys creating new and classic cocktails from the large collection of whiskeys offered at Chicago’s Untitled Supper Club.

The 1920’s inspired speakeasy carries about 530 different American Whiskeys and offers a large private barrel selection that cannot be found or purchased elsewhere.

Dawson’s favorite cocktail to make is the Sazerac and the lesser-known Vieux Carre. Named after the French Quarter, the cocktail was created by Walter Bergeron, who worked at the Hotel Monteleone in New Orleans as the head bartender, before and after prohibition.

“With the variety of guests I see at Untitled, I’m able to recommend the off-menu cocktail to all types of drinkers—young, old, new, and experienced,” explains Dawson. “Guests like it because while it’s fairly simple to make, it’s complex in flavor and, most importantly, very tasty.”

Kelly’s Tips For Creating the Perfect Vieux Carre

If it Ain’t Broke: Classics are classic for a reason. Other than choosing the brand of spirits, I try to keep it as close to, if not exactly, the original recipe. It’s the classic saying—don’t fix what isn’t broke!

Balance: I try to think about how strong or light the spirits are that are being used. You want them to stand up to each other and complement each other. Every flavor is important, so it must be equal to the task.

Quality Ingredients: Use spirits you love, and that taste good on their own. I was taught to make the Vieux Carre with Rittenhouse, which is a great spirit. So is Michter’s Rye or Whiskey Acres. I like the balance of Pierre Ferrand Cognac and Carpano Classico because it isn’t too sweet. Benedictine, Angostura, and Peychauds, and an expressed lemon twist are all you need.

Trade Secrets: I like to jigger everything. It removes human error from the equation. Stir quickly, well, and with lots of ice. It’s important to work with love, intention, and respect for the ingredients. That ultimately comes through to the finished product.

  • 3/4 oz. Rye
  • 3/4 oz. Sweet Vermouth
  • 3/4 oz. Cognac
  • 1/4 oz. Benedictine
  • 2 dashes Angostura Bitters
  • 2 dashes Peychauds Bitters

Preparation: Chill a large coupe. Stir ingredients until glass is cold to touch; strain into coupe. Express orange peel over top and drape peel on side of glass.

The Cocktail That Saved Savannah

What’s the best way to turn an enemy into a friend? Share a cocktail, of course.

When General William T. Sherman traveled south in the famous March to the Sea, he left a 30 miles wide and 300 miles long wake of destruction behind him. When his Union Army reached Savannah in 1864, the townsfolk did what they did best—they threw a party and invited every Yankee in sight! That is how, so sayeth the legend, the Chatham Artillery Punch went down in history as the cocktail that spared a city from the Civil War.

Named for the oldest military organization in Georgia, the Chatham Artillery Punch is as synonymous with Savannah as Martinis are with New York. Around since at least 1800, the Punch was originally made en mass in horse buckets and is one of the very few quintessentially American cocktails to survive Prohibition intact (never get between Savannahians and their tipples).

So it should not come as a surprise that the American Prohibition Museum in Savannah is one of the best places in town to try one; the museum is dedicated not so much to Prohibition’s virtues as to its failures. Indeed, it has a recreated speakeasy at the end of the exhibits with a menu chock-full of historical concoctions. The Chatham Artillery Punch is right at the top.

“Our version is the oldest version we could find, around 1870,” says the museum’s head bartender Jason Rabe, and he warns that the Punch is so old and so popular as to have several versions, some entirely different from the original and far weaker. “They have very little booze, with mostly wine or sweeteners.”

In other words, it’s not a Chatham Artillery Punch if it doesn’t have, well, punch.

Ingredients:

  • 1/2 oz. Old Forrester Bourbon
  • 1/2 oz. Bacardi Superior
  • 1/2 oz. Sacred Bond Brandy, bonded
  • 1/2 oz. Simple Syrup or Oleo Saccharum
  • 1/2 oz. Lemon Juice
  • 3 oz. Dry Sparkling Wine

Preparation: Combine bourbon, rum, brandy, simple syrup, and lemon juice in a shaker with ice. Shake and double strain into a collins glass over freshly crushed ice. Top with sparkling wine. Garnish with a lemon wheel and mint sprig.

Medical Mixology: Respect Your Elder

From season to season, weather tends to affect the body, from the sweet sunshine of summer to the cooling yin energy of winter.

As we in the western hemisphere are knee-deep in hibernating days of winter, there’s a major thread of human complaints. Respiratory and immune system distress manifesting in colds, flu, and sinus infections are rampant at this time of year. Our scarves are wrapped, and extra layers added, with vitamin C gulped by the gallon.

Have no fear; there is a super-herb here! The Elder tree has a rich and mythical past and an even richer present. Flowers and berries of this mighty mother grow heartily and with virtue. Many folklore tales tell of magical properties, the tree herself acting as a protective gateway to other worlds.  It makes sense that her physical attributes also surmise power.  Used for respiratory support and an immuno-booster, this is the time of year that she shines. The dark blue and blackberries are home to anthocyanins, a compound of flavonoids known to be powerful antioxidants. Vitamin C and E wish they had as much antioxidant fortitude as the anthocyanins found in the elderberry.

Anthocyanins also support heart health, and the anti-inflammatory properties found in elderberries can offer relief from joint pain. As I mentioned, super-herb! Ingredients:

  • 1 1/2 oz. Farallon Gin
  • 1/4 oz. Luxardo Maraschino Liqueur
  • 3/4 oz. Elderberry Tonic*
  • 1 oz. Asian Pear/Lime Juice**
  • Top with Synergy Pink Lady Basil Kombucha

Preparation: Add all ingredients except for the Kombucha into a mixing tin with ice and shake with fervor. Double-strain into a festive glass of your choice and top with Kombucha. Add an edible flower of your choice to ensure your drink feels as pretty as she tastes (I use feverfew to soothe the mind). And there you have it. *Elderberry Tonic

In saucepan, bring to simmer (no boiling please!) elderberries:honey (2:1) adding water if needed based on the juice of the berry to reach a thick syrup consistency. **Asian pear/lime juice: juice fresh Asian pears and double strain; combine with fresh lime juice (3:1) Asian pear:lime.
