All Natural Mixmasters with Bärenjäger Honey Liqueur

Right after the freezing weather of January and February passes, Houstonians prep for March, the month of The Houston Livestock Show and Rodeo, Mardi Gras, St Patrick’s Day, and Spring Break. These events lead to the excitement of crawfish season. Naturally, service Industry professionals prepare the way cities prepare for the Olympics. Sadly, Covid-19 quickly halted these plans, resulting in the events being canceled. The cherished traditions shared between bartender and guest have been postponed, and we yearn for the days of getting together for a friendly boil.

Just imagine that first bite of crawfish too hot to handle, downing a cold beer and enjoying the warm sun on your favorite patio. My drink, Bärenboil, emulates this feeling with Bärenjäger Honey Liqueur which shines in this cocktail. Its poetic notes of honey and herbs are the perfect match for a thirst-quenching mix of citrus, Topo Chico, and a hint of crab boil spice.

This cocktail is spicy and refreshing, complex and low abv. It recreates that special feeling of eating crawfish with your friends and loved ones.

Ingredients:

  • 1 1/4 oz. Bärenjäger Honey Liqueur
  • 1 dash Zatarain’s Concentrated Shrimp & Crab Boil
  • 1 bar spoon lemon juice
  • Topo Chico Sparkling Water (to top up)
  • Lemon (for garnish)

Preparation: Pour ingredients over ice in a Collins glass and stir. Top up with sparkling water and garnish with a lemon wedge.

Born and raised outside Houston, Racheal considers herself pure Texan. Helping her mother at their family restaurant from the age of eleven, she developed a lifelong passion for hospitality.

Racheal calls the club level at NRG Stadium her bar home, slinging cocktails during the rush of NFL games, concerts, and international soccer tournaments. Although most of her experience is in volume, Ms. Buie is comfortable jumping behind any bar to mix cocktails and mingle with guests.

A mother to one, Racheal spends much of her time with her daughter Rosa, her dog Frida, and cats Diego and Nugget.

Top 5 Stress-Relieving Ingredients to Include in Cocktails

There are many ingredients that are natural stress relievers.

Here are our top five stress busing ingredients and how to use them in cocktails.

Blueberries

One of our favorites is the blueberry because eating the tiny blue fruit will lock stress away from your cells. Plus they are full of vitamin C, have lots of nutrients, and are low calorie.

Ingredients:

  • 1 1/2 oz. Tito’s vodka
  • 2 oz. fresh blueberry juice
  • 1 oz. cranberry juice
  • Fresh blueberries (for garnish)

Preparation: Add ingredients to a cocktail shaker filled with ice. Shake well; strain into a chilled cocktail glass. Garnish with fresh blueberries skewered on a cocktail pick or float them on top of the drink.


Oranges

Also high in vitamin C, what’s interesting about the fruit is the citrus scent is an aromatic asset to your health. Citrus smells are thought to curb stress and anxiety.

  • 1 1/2 oz. brandy
  • 1/2 oz. curacao
  • 1 oz. fresh orange juice
  • 1 dash of bitters

Preparation: Add ingredients to cocktail shaker with ice; shake well. Strain into a rocks glass.


Green Tea

Part of our top five, because there is an acid actually found in the tea that is known to reduce stress. It also is a treatment for mental health issues, like fighting anxiety and depression.

(Makes 6 cocktails)

Ingredients:

  • 4 green tea bags
  • 2 cups water (boiling)
  • 1/2 cup pomegranate juice
  • 1 bottle champagne
  • Sliced apples
  • Mint leaves (for garnish)

Preparation: Place tea bags in glass container; pour boiling water over the bags, allowing tea to steep for 3-4 minutes. Remove the tea bags and discard. Stir in the pomegranate juice. Chill the mixture until cold. Place sliced fruit and 2-3 cubes of ice each glass. Dived the green tea between glasses. Top each off with champagne and garnish with mint leaves.


Avocado

The fruit not only has stress relieving acids, it has properties to improve mood.

Ingredients:

  • 1 1/2 oz. tequila reposado
  • 1 oz. Licor 43
  • 1 oz. fresh-squeezed lime juice
  • 1 oz. simple syrup
  • 3 tbsp. avocado
  • Chili powder (for rim)

Preparation: Add ingredients to a blender with two scoops of ice. Rim Margarita glass with chile powder. Strain drink into glass and serve.


Dark Chocolate

Our final ingredient is dark chocolate known to take a bite out of stress. Studies show levels of stress can be significantly lowered after eating just one average sized bar for two weeks.

  • 1 1/2 oz. reposado tequila
  • 1 oz. mezcal
  • 1 barspoon agave nectar
  • 3 dashes Bittermends Xocolatl Mole Bitters

Preparation: Add all ingredients to a shaker tin and shake thoroughly. Serve on the rocks. Garnish with piece of dark chocolate.

Chillin’ With Neil Jackson

Neil Jackson is an English actor and writer out of Luton, Bedfordshire, who has appeared in several television series and films.

Jackson began acting when studying drama at GCSE (General Certificate of Secondary Education) level in Harlington Upper School. Here he partook in several school plays including Annie, Little Shop of Horrors, Hard Times, and West Side Story. He also acted in National Youth Theatre before his move to Cardiff with intentions set on studying sport (boxing) at the University of Wales Institute Cardiff.

Speaking on this matter, he’s quoted  “I was studying sports science in University and boxing competitively and working as a bouncer in clubs and, ultimately, not happy. I had acted in school plays when I was younger and remember enjoying that so much, but I had no idea how to course correct to get back into acting and so was advised to write something that could be performed.  I started writing a play, that became a musical.” This cemented Neil’s desire to pursue acting once more, which paid off as it landed him his first role as an understudy to Strindberg’s Miss Julie, from where his career took off.

Throughout his career Jackson has transitioned from Robert Zemeckis’ Welcome to Marwen with Steve Carrel, into The King’s Man prequel. He also stars in Amazon’s Absentia and DC Universe’s upcoming Stargirl. Additional film credits include Woody Allen’s You Will Meet a Tall Dark Stranger, the bond blockbuster Quantum of Solace, Oliver Stone’s Alexander, and Tom Ford’s Nocturnal Animals.

Chilled sat down with Jackson to see what his life is like when the camera isn’t rolling, along with what projects are on the horizon.

Tell us about the projects you are working on.

I have a few projects coming out over the next couple of months that I’m really excited about. First the CW Network/DC’s Stargirl. Then, a couple of months later, season three of Absentia will be released on Amazon Prime. I’m reprising my role of Jack Byrne. Next, at the beginning of Fall (depending on the Covid situation) I have The King’s Man coming out. This is the prequel to The Kingsman movies and it’s set during World War One. I play Captain Forrest, a man charged with a dangerous mission that could alter the tide of the war.

With your busy schedule, what do you like to do with your downtime?

I like to cook. I have a couple of great recipe books that I love sifting through and then putting some music on, pouring a glass of wine, and just start chopping.

What dishes are you making at home during “stay-at-home?”

We have been experimenting a lot with our food during quarantine. My new favorite is banana pancakes for breakfast. They’re made with mashed up banana, an egg, almond flour, and a dash of baking soda. They are so tasty that it almost seems impossible that they are also healthy.

How are you coping with COVID closures?

I gotta say, I feel like actors have been preparing for this their entire careers. So far, for me at least, Covid-19 is not too dissimilar to life as an unemployed actor. No meetings, no obligations, just a long day to fill in a manner that makes me feel productive by the end of it. I have my routine down by now and that is keeping me sane. The big one for me is setting an early (but not too early) alarm. This not only forces me out of bed in the morning, but it also forces me not to stay up late too.

When you do go out to eat, where do you like to dine?

I live in Vancouver and there is an amazing Indian restaurant here called Vij’s. The owner, Vij, has not only created some incredible and very original Indian dishes, but the whole experience is amazing. You cannot reserve a table. Instead, Vij invites you to sit in their bar area and drink whilst he provides you with fresh snacks until a table becomes available.

What types of dishes do you typically order?

My absolute favorite is garam masala portobello mushrooms in porcini cream curry. That with some fresh chapati covered in gi is heaven!

Any favorite bars?

I am a fan of small, intimate places where I can have a decent conversation. For that, my favorite in Vancouver is Caffe Barneys on Granville. There is a high table at the front in a bay window that is a perfect little perch to work through a bottle of pinot with a friend.

What drinks do you order when out?

My three favorites are red wine: preferably a pinot noir, the old British classic Gin and Tonic, or a pint of Guinness. All my moods can be covered by one of those three drinks.

Do you prepare drinks at home?

I once made limoncello from the fresh lemons in my garden, but I left it in the cellar for too long and it was better-suited to stripping paint. Now I just stick to a simple and refreshing G&T.

Tell us about your home bar. What is it stocked with?

I have Hendrix and Tanqueray gin, as well as a couple of single malts and lots of red wine.

Have you ever been a bartender?

I worked in pubs in the UK. It is not really the same thing. In Britain, at that time, the closest thing I ever came to a cocktail was a Bacardi and Coke. They were the kind of pubs where they had two types of wine—red or white.

If you could share a drink with anyone, who would it be?

My dad. We barely see each other these days as he lives in France and I live in Canada. It would be lovely to sit in a pub one afternoon over a couple of pints and just talk the hours away.

This Sunday, June 21, 2020, Intrepid Spirits will be bringing together bartenders from around the world for an innovative virtual cocktail party like no other.

As the Sun Goes Down is a celebration of the longest day of the year and an opportunity to share a glass with spirits tastemakers across numerous cultures and time zones. Beginning at 7AM (GMT+1) / 2AM, Intrepid’s Instagram account will turn into an all-day soiree featuring a different bartender in a different city, every hour on the hour.

Global Sip: Põhjala, The Baltic’s Largest Beer Producer

Nestled in Estonia’s capital of Tallinn lies the largest beer producer in all of the Baltic region, Põhjala.

This unique brewing operation deserves attention from both locals and visitors alike, and here are the reasons why.

First, the beer is good, and inventive. Additionally, the “Cellar Series” plays around with barrel aging in sherry, port, tequila, and bourbon barrels to develop layers of flavor in these beer options.

Secondly, they have a new brewery and taproom. This taproom features a delightful North American chef who dishes up authentic Texas BBQ. Daily menu specials show innovation in the kitchen, and you just might spot U.S. Embassy employees getting their fill of home at the bar.

Those interested in a brewery tour can register online ahead of time for tours in either English or Estonian, every day of the week but Mondays. Tours of up to 20 attendees will take about 45 minutes and include a few samples of Põhjala favorites. Or, you can simply take a seat in the spacious taproom and sip away without the tour aspect.

Lastly, location location location. In the about-to-boom Port Noblessner area, formerly where Soviet submarines were built, creativity is finding a new foothold. Besides the brewery, the area is home to cool shops, a funky nightclub, fine dining, a self-appointed “embassy of hedonism”, and so much more. Plus, the Estonian Maritime Museum pays homage to the past, while welcoming the upcoming development of this quirky neighborhood. Bonus points that it’s an easy ten-minute drive or less than 30-minute walk from Tallinn’s UNESCO-recognized Old Town area.

  • 1 1/2 oz. Brockmans Gin
  • 4 oz. premium tonic water, chilled
  • Zest of pink grapefruit
  • Fresh blueberries

Preparation: Fill a chilled glass with large ice cubes and add the Brockmans Gin. Pour the tonic water in down the length of a swizzle spoon to keep the fizz. Garnish with the zest of a pink grapefruit and fresh blueberries. For additional berry flavor, muddle fresh blueberries and blackberries in the bottom of the glass prior to mixing the cocktail.

  • 2 oz. Brockmans Gin
  • 1/2 oz. fresh squeezed lime juice
  • 1/2 oz. simple syrup
  • Twist of lime zest

Preparation: Half-fill a cocktail shaker with ice, add the Brockmans Gin, lime juice and simple syrup and stir. Strain into a chilled stem glass and garnish with a twist of lime zest.

  • 1/2 oz. orange liqueur
  • Splash of freshly squeezed lime juice

Preparation: Half-fill a cocktail shaker with ice, add the Brockmans Gin, cranberry juice, orange liqueur and lime juice and shake. Strain into a chilled coupe glass and garnish with a wedge of lime.

Living in Southern California, I love creating tart refreshing drinks for guests and riffing on a classic like the Lemon Drop with Bärenjäger was perfect for this cocktail. Honey, blueberries, and lavender are a match made in heaven. The cocktail is bright, sweet and super refreshing. It’s also easy for everyone to make at home and that’s important now, right?

Ingredients:

  • 2 oz. Vodka
  • 1 oz. fresh lemon juice
  • 1/2 oz. fresh lime juice
  • 1 1/2 oz. Bärenjäger Honey Liqueur
  • 6 blueberries
  • 2 lavender blossoms

Preparation: Muddle blueberries in a tin then add the remaining ingredients. Shake for 5-8 seconds and double strain into a coupe or martini glass. Garnish with 2 blueberries and a lemon twist.


Meet Antonio Gonzales

I started mixing at a very young age at home in San Jose. Raised by a single mom, I needed to learn to cook dinner regularly and I discovered that I loved putting flavors together. With a little help from my mom’s Better Homes and Gardens cookbook, I became adept at cooking and enjoyed putting my own twist on recipes.

Soon I began cooking for friends and loved seeing their faces light up when they took the first bite. My mom said I should be a chef, but as I got older, I never envisioned making a career of it. When I got to college, I needed some extra cash, so I took on a bartending gig in La Jolla, Ca. Now, years later, I’m still behind the bar mixing flavors and doing what I love most. Despite studying to be a teacher, I just could not bring myself to walk away from the bar scene and I have been hooked by the people and the lifestyle for over 20 years.

I found my calling as a mixologist while working at the Ivy Hotel in San Diego. Management asked if I’d be willing to do a class for guests to show them how to create a cocktail from scratch using fresh ingredients. I jumped at the opportunity instantly. At that time, I admit that I was by no means experienced enough to be a mixologist, but confidence and my ability to connect with guests helped me succeed. To my surprise, my classes quickly gained a following and guests were making reservations just to come and learn more from me!

Next chapter was at the Se Hotel’s full mixology nightclub, where I got my hands on molecular mixology chemicals. I credit this experience for recharging my career, and it boosted me to become a true master of the craft. I improved my mixing ability even more and competed every chance I got, from the Nations World Flair Bartending Championships in Las Vegas, to the annual San Diego Spirits Festival to Lustau’s Solera Standout finals in Spain, even to Puerto Rico where I was a finalist for Bacardi Legacy.

Currently, you can find me stirring up some of San Diego’s most renowned cocktails at the Stake Chophouse & Bar in Coronado.
