Being Stephanie Macleod, Dewar’s Master Blender of the Year

By | Mixology News

Stephanie MacLeod, dewars barrel room, featured image

Dewar’s Scotch whisky master blender, Stephanie Macleod wins 2020 International Whisky Competition’s coveted Master Blender of the Year title for her ground-breaking innovative Double Double range of ultra-premium blended scotch.

The series pays homage to the brand’s signature double-aging process, transforming to create a landmark four-step aging method or “double double aging.” We asked Macleod (the first woman to win the award in 2019) about being a two-time winner of the accolade and about the Double Double 32-Year-Old expression win, “Whisky of the Year.”

Dewars Double Double 32 Year

Dewars Double Double 32 Year

Tell us about the Dewar’s Double Double collection.

Three things are very important to Dewar’s: age statements, double aging, and the pursuit of smoothness. So, for this range we wanted to elevate all of these elements to create this very special range of three. I believe the reason that these whiskies are award winning, especially in blind tasting competitions, is the incredible smooth and integrated flavor that is created from the four stage aging process, which culminates in a finishing stage in three different types of sherry casks—the sherry type was chosen especially to complement the flavor profile of the blend.

Talk to us about being a groundbreaker and innovator at such an age-old spirits brand.

Well! I’m incredibly proud to see Dewar’s described in such a way—we create new blends and expressions according to what we think sounds and tastes delicious and always with our global whisky drinkers three pillars in mind.

Congrats on your Master Blender of the Year win! Talk to us about winning this award.

Being master blender of Dewar’s is an incredibly fulfilling role, when we create and launch a new blend and then see the reaction of our Dewar’s appreciators. It is so rewarding. Winning this prestigious award from the International Whisky Competition, and for the 2nd year in a row, was a very emotional moment for me, and everyone who works with Dewar’s is extremely proud.

Dewar's Barrel Room

Dewar’s Stephanie MacLeod

What should bartenders know about these innovative Dewar’s blends?

Each and every Dewar’s Blend is double aged—this is an important stage in our blending process, we truly believe it adds a heightened perception of smoothness. Also, when Dewar’s is mixed as a cocktail, you still know you’re drinking a whisky cocktail, the flavor doesn’t disappear into the elements of the cocktail.

What’s next for you and Dewar’s?

At the moment, I‘m working on many different projects for our Blends and for our single malts ranges—working with exciting and beautiful casks from all over the world. I’m also working on expanding my team, recruiting an additional blender!

How should Dewar’s Double Double be enjoyed?

I always advise that when trying a whisky for the first time, try it neat. Get to know the flavor, and then add water, but ultimately enjoy it however you want, our website and social media platforms have lots of cocktail recipes for every season.

Any cocktail in particular?

Dewar’s works particularly well in a Penicillin, because there is a smoky element, which helps to build the intensity and complexity of this iconic cocktail.

Bartenders Craft Together the Limited-Edition Santa Teresa 1796 Rum Label

By | Mixology News

Crafted Together Bottle Lifestyle, featured image

Santa Teresa 1796 Rum, the Venezuelan super-premium brand, launched its Crafted Together limited-edition bottle program in the face of adversity caused by the COVID-19 pandemic.

Santa Teresa brought over 25 bartenders from parts of the world, including Los Angeles, London, Miami, and Madrid, and New York to conceive a new label for the Crafted Together limited-edition bottle.

The chief executive of Santa Teresa, Alberto Vollmer, adds, “Through the Crafted Together initiative, not only did we want Santa Teresa 1796 to support the trade community directly, but we also wanted to inspire bartenders to support one another.”

“I work with American bartenders all the time and find that one of their greatest assets is a talent for taking care of others,” adds Katie Redline, Santa Teresa brand manager. “Though our country is vast and different from coast to coast, the bartending community is a tight-knit group. When the impact of COVID-19 began to take root and bars shuttered throughout the country, bartenders rose to the occasion to support one another and find a whole new kind of inner strength. They’re extremely creative with a ‘can-do’ attitude, which reflects American values such as entrepreneurship and independence.”

Nicole Hoffman

Nicole Hoffman

Nicole Hoffman, bartender and artist out of Venice California created a painting made with alcohol inks as her contribution to the Santa Teresa Crafted Together limited-edition bottle label project. “I think it’s important to constantly be learning, evolving, and bettering oneself,” says Hoffman. “It’s okay to be wrong, buts it’s more important to listen, learn, and grow.” For Hoffman, art and creating is a great way for everyone to stay connected.

Glendon Hartley

Glendon Hartley

The idea of staying connected is shared by Glendon A.M. Hartley, of Back Bar in Washington D.C. “The program really struck me as a way to keep creating and connecting within our industry while we deal with such an unprecedented time.”

Lindsay Burleson

Lindsay Burleson

Lindsay Rae Burleson of Two Headed Dog in Houston adds, “This was a really fun project to work on in the spirit of collaboration and community. Having a positive impact not only on yourself but on your community creates a culture of inclusion and communication.”

Wade McElroy

Wade McElroy

Chicago’s Multiple bartender, Wade McElroy, whose photographic work was included on the limited-edition label concludes creativity and community is key to adapting to these challenging times. “Transformation is a constant,” he explains. “We always have to adapt to evolve and the goal is to reflect on your past and let it guide you into the future.”

To further support and solidify its devotion to the bartending community’s well-being, Santa Teresa will donate $10,000 to the USBG Bartender Emergency Assistance Program. The Crafted Together limited-edition bottle will be available for purchase during National Rum Month this August.

The House of Angostura Introduces New Bitters Flavor: Angostura Cocoa Bitters

By | Mixology News

Angostura 4 oz. Cocoa Bitters, featured image

Bartenders have a new essential ingredient in their toolkit with the launch of a brand-new blend from The House of Angostura: Angostura cocoa bitters.

As the third bitters innovation in the iconic company’s more than 195-year history, cocoa bitters join an esteemed lineup including Angostura aromatic and orange bitters.

Angostura 4oz Aromatic Bitters

Angostura 4oz Aromatic Bitters

As cocktail culture evolves worldwide, bartenders continue to create unique drinks with depths of flavor and sophistication. The new cocoa bitters are well positioned to bring a decadent, indulgent touch to bartenders’ creations. Chad Lawrence, North American brand ambassador for The House of Angostura, says, “The new bitters flavor is a multidimensional celebration of the senses that will take your nose and palate on a wondrous journey with every sip.”

Angostura 4oz Orange Bitters

Angostura 4oz Orange Bitters

With sumptuous top notes of rich, nutty cocoa, balanced with botanicals, light spice notes and a lasting bitter finish, Angostura cocoa bitters envelops the nose in warm spice aromas with floral and citrus undertones. Bartenders looking to add another layer of flavor to bring cocktails to life can add a dash (or several) to classics like the Vieux Carré, Widow’s Kiss or Boulevardier. But, of course, you can’t go wrong using Angostura cocoa bitters to elevate other favorites like the Espresso Martini.

Angostura 4oz Cocoa Bitters

Angostura 4oz Cocoa Bitters

The main ingredient in Angostura cocoa bitters is Trinitario cocoa, a prized cocoa hybrid which has grown on Trinidad and Tobago since 1830, the same islands where The House of Angostura has blended bitters for nearly 200 years.

After harvest, Trinitario cocoa pods undergo an intricate process that yields cocoa nibs. These premium, locally cultivated Trinitario cocoa nibs are then combined with a bespoke blend of herbs, spices, and botanicals to create Angostura cocoa bitters.

“Dedicated to the art of perfectly balanced flavor profiles in its bitters creations, Angostura spent years creating its long-awaited cocoa-bitters blend,” says Mitch Cooper, North America brand lead for Angostura bitters at Mizkan America, Inc. “The marriage of longstanding heritage and precision crafting has achieved a new level of artisanship in the creation of the brand’s latest portfolio addition.”

The development of new Angostura cocoa bitters allows the company to increase its support for local farmers on its home islands. “This partnership improves and protects the livelihoods of the islands’ farmers, while ensuring the highest ingredient quality,” explains Peter Sandstrom, CEO at The House of Angostura.”

The House of Angostura has long been part of the fabric of its home country of Trinidad and Tobago, where the sons of Angostura aromatic bitters inventor Dr. Johann Siegert emigrated and established the bitters company that continues to revolutionize the cocktail world.

Today, in addition to bitters production, the company operates the only rum distillery in Trinidad, where it produces award-winning Caribbean rums.

10 Bars Need Our Help to Stay Open

By | Mixology News

Julius, front entrance, featured image

With the Covid-19 pandemic still roiling the country, bars and restaurants across the nation are grappling with the difficulties of staying afloat through one of the toughest times the industry has ever faced.

As a result, some bars have resorted to crowdfunding in order to pay their rents and keep their doors open. From legendary watering holes in New York City, a beloved jazz club in Los Angeles, a longtime Seattle dive and everywhere in between, here are ten bars that are asking for your help right now.

The Blue Moon

Seattle, Washington

A favorite dive for residents of the Emerald City since 1934, The Blue Moon is known for frequently hosting everything from open-mic nights, opera, singer-songwriters and comedy. Thanks to Covid-19, they are struggling to stay afloat and have set a goal to raise $40,000. “If we meet our fundraising goal,” organizers wrote on GoFundMe, “We can offer paid time off to those of our lovable and deserving team who will continue to work no or limited hours as we reopen.”

Subterranean

Chicago, Illinois

Located in the Chicago’s Wicker Park neighborhood, Subterranean’s status as a club that relies on large crowds makes it more difficult than other bars that can rely solely on outdoor cocktails. As a result, its owners launched a GoFundMe in May in order to pay the bills until the financial stresses of Coronavirus pass. Wrote the owners: “Unable to socially distance, we’re not be able to open (our) doors for shows. We fear that we cannot hang on that long and that we will be forced to close our doors forever. Please, please help save Subterranean so we can be there for you in the future when we can all dance again.”

The Stonewall Inn, Julius’ Bar, Alibi, Henrietta Hudson

New York, New York

Four pillars of the LGBTQ community in the Big Apple are also requesting urgent help. The Stonewall Inn (the birthplace of the modern-day gay rights movement), Julius’ Bar (the Greenwich Village institution that holds the distinction of being the oldest gay bar in New York City), Alibi (the only openly gay bar in the Harlem neighborhood) and Henrietta’s (the oldest Lesiban bar in the United States) have all launched GoFundMes to help their respective businesses to survive. Losing any of the three would not only mean one less place to drink, but one less safe space for members of the LGBTQ community. Said Alexi Minko, owner of the Alibi: “Please help us keep our rainbow flag flying high until this pandemic ends.”

Bullfish Bar and Kitchen

Baton Rouge, Louisiana

The Carribean bar and restaurant made national headlines earlier this year when the New York Times podcast The Daily featured the story of immigrant owners Angel Lombrage (the Bullfish’s chef) and wife Jasmine’s financial struggles in the face of Covid-19. The two were not just at risk of losing both their business and home, but also frightened for the health of their daughters (one is immunocompromised). Already, the two are up to date with their payments and are close to meeting their fundraising goal:

Catalina Jazz Club

Los Angeles, California

Open for 34 years, this Los Angeles jazz club is known for its vibrant live scene which has provided an outlet and solace for residents and visitors alike. Eloquently put by Catalina’s owners: “Music is our elixir for the soul. And that is precisely why the Catalina Jazz Club has devoted its whole life to pouring you its finest concoction — Jazz. For us, Jazz is our way of life. It breathes pain. It knows love. It dreams hope. It bleeds courage.” Covid-19 be damned, they are hoping to continue that way of life.

Hickory Street Lounge

Denton, Texas

Deep in the heart of Texas, the modest Hickory Street Lounge has a similarly modest goal to raise $5,000 to help keep their beloved watering hole serving beer and cocktails into the future. “I’m reaching out to the loyal patrons of Hickory Street Lounge to try and support the staff and the bar,” said organizer Courtney Hawkins. “All proceeds will go to the staff and (to keep) the lights on.”

Peri’s Bar

Fairfax, California

Noting that they are “taking one last shot at staying alive,” owner Johnathan Korty launched a GoFundMe in late June to raise the necessary cash to keep their doors open, calling Peri’s is not so much a bar but a social hub. “Of course, running a bar/nightclub during these uncertain times is not easy,” he admits. “But we will do everything we can to make Peri’s thrive. This fundraiser gives us a fighting chance.”

Celebrate National Rum Day with the Bartenders who Crafted Together the Limited-Edition Santa Teresa 1796 Rum Label

By | Mixology News

Meaghan Dorman

Happy National Rum Day!

Celebrate this year with Santa Teresa 1796 Rum, the Venezuelan super-premium brand, and the bartenders who participated in the Crafted Together program—creating a limited-edition bottle label honoring the industry in the face of adversity caused by COVID-19.

Santa Teresa brought over 25 bartenders from parts of the world, including Los Angeles, London, Miami, and Madrid, and New York to conceive a new label for the Crafted Together 1796 limited-edition bottle.

Santa Teresa 1796 Rum

Santa Teresa 1796 Rum

Inside the limited-edition bottle is Santa Teresa 1796—a bold elegant rum aged in bourbon oak for up to 35-years and then with the Spanish solera method. The result is the perfect spirit with notes of wood, dark chocolate, leather, and nuts.

We asked some of the Crafted Together program’s participating bartenders what they enjoy about Santa Teresa 1796 and their favorite rum cocktails in the spirit of National Rum Day today.

Meaghan Dorman

Meaghan Dorman

Meaghan Dorman, bar director of four cocktail bars in NYC who participated virtually in the program says, “I have always been a fan of Santa Teresa 1796 rum, it’s an elegant layered spirit. I love a half bourbon, half Santa Teresa Old Fashioned. But my favorite rum cocktail is Hotel Nacional.”

Ben Potts

Ben Potts

Ben Potts, of Beaker & Gray, Miami, has also always been a fan of Santa Teresa 1796 Rum, “It’s a delicious Venezuelan rum that I’ve been a fan of for many years. The brand does substantial local outreach but is also dedicated to helping the global bartending community. I like to drink it on the rocks or in a Rum Manhattan. My favorite rum cocktail though is the Old Cuban, it works very well with Santa Teresa 1796.”

Kellie Thorn

Kellie Thorn

Contributing a small painting of her little parlor palm for the label, Kellie Thorn of the Hugh Acheson Restaurant in Atlanta wanted to share her love of gardening with the bartender community for the limited-edition label. “It was so great to connect with other bartenders and help raise money for our community,” she says. “I like drinking Santa Teresa neat or on a large cube, but one of my favorites is in a Rum & Tonic. It’s such a good highball especially when using an aged rum.”

Christa Havican

Christa Havican

For her contribution, Christa Havican of Nobie’s in Houston created a stained-glass panel that was used in a photograph on the Santa Teresa limited-edition label. “I like drinking Santa Teresa neat or in an El Presidente. Also, there is the Vamos a la Playa, served at the Toasted Coconut in Houston, made of rum, mezcal, pineapple shrub and lime—it’s perfect in this cocktail on a hot Texas day!”

The label for the limited-edition bottle symbolizes the sheer resilience and creative talent of the bartending community. Note that all bartenders were compensated for their time and creative input. Describing the label’s unique process, Katie Redlien, Santa Teresa 1796 brand manager, elaborates, “Each bartender participant submitted an individual design, with styles ranging from photography to charcoal drawings to paintings, which was then compiled into a mosaic that graces our Santa Teresa 1796 Crafted Together limited-edition bottle. Just as the different designs come together to make a whole, the trade is comprised of incredible individuals, who create a truly spectacular community when they work together.”
