Celebrate National Mezcal Day!

Para todo mal, mezcal, y para todo bien, también.(“For everything bad, mezcal, and for everything good, as well.”) – Oaxacan idiom

Drunk in “little kisses,” Mezcal has quickly become one of the trendiest categories in the spirit world, but this unique drink is anything but new; in fact, it dates back hundreds of years. When the Spanish first began the colonization of Mexico, agave spirits were already in production, but it’s hard to know how long before or to what extent. We know that ever since, Mezcal has become an integral part of Mexican history, culture, and superstition and is overdue for attention on a global scale.

In celebration of National Mezcal Day, we’re sharing a look at the spirit, a few of the wonderful brands making it, and ways to enjoy it in a cocktail. In case you’ve managed to miss the memo, Mezcal is any spirit distilled from around 30 of the nearly 200 sub-species of agave (all Tequila is a Mezcal, but not all Mezcal is Tequila). Many will tell you that the key factor of Mezcal is its “smokiness,” but don’t expect to note too much-charred wood or tobacco. The key flavors that give Mezcal its reputation are actually notes of chipotle and dry chili but depending on the variety of agave used; it can read floral, fruity, earthy, and even savory.

Unlike Tequila, which can only be produced in a specific region with specific agave (blue weber), Mezcal gives producers a license to play. This freedom has opened the door to an incredible range of highly unique, artisanal distillers. Many producers use traditional methods – cooking the agave with a wood fire, milling with a stone mill, open-air fermentation, and copper distillation. Depending on the techniques, the resulting Mezcal flavor can vary wildly, making it an incredibly exciting and fun spirit to try.

It’s not possible to write an educated article on mezcal and ignore Montelobos; after all, the Co-Founder, Ivan Saldaña, quite literally wrote the book on it – The Anatomy of Mezcal. Background aside, Montelobos is a standout in the category with three varietals and a fourth soon to come. Their process from ground to glass differs per style, creating three highly unique and stunning flavor profiles.

For those new to Mezcal, Ojo de Tigre is a fantastic opening spirit to the category. Made from a mix of Espadín and Tobalá agaves, this joven class isn’t overly smokey and features notes of green apple, citrus, caramel, and smoked cocoa.

Based in Ejutla, Mexico, Banhez is a farmer and family-run Cooperative working to make a fair trade, sustainable mezcal. The line currently has eight expressions made from a range of different agave varietals. One of our favorites is the Ensemble, made from 90% Espadín and 10% Barril agave, which gives it a delightfully sweet and smokey palate with pineapple and banana hints.

Ingredients:

  • 1 1/2 oz. Mezcal Ojo de Tigre
  • 8-10 Mint Leaves
  • 1 oz. Simple Syrup
  • 2 Dashes Lemon Bitters
  • 3 Drops Olive Oil

Preparation: Place all ingredients except olive oil in a shaker with plenty of ice and give it a good shake. Serve in a cold coupe glass and use a fine strainer to catch stray pieces of leaves. Finish with 3 drops of olive oil on top and decorate with a mint leaf.

Ingredients:

  • 2 oz. Bozal Ensamble
  • 3/4 oz. Cardamom Syrup
  • 3/4 oz. Lemon Juice
  • 4 dashes Mole Bitters
  • 1 Egg White

Preparation: Chill coupe glass with ice water. Build mezcal, cardamom syrup, lemon and bitters in shaker tin. Add egg white in a smaller tin. Combine tins together with 2 ice cubes and dry shake vigorously for 10 seconds. Uncap, add ice, cap and seal again and hard shake for 10-12 seconds. Dump your ice water from your coupe and double strain with a Hawthorne strainer through a fine strainer into your chilled coupe.

Ingredients:

  • 1 oz. Doña Vega Mezcal
  • 1 oz. Liquor Strega
  • 1 oz. Averna Amaro

Preparation: Stir, Strain over fresh large cube in a rocks glass. Garnish: Smoked Salt rim

  • 2 Parts Montelobos Mezcal
  • 3/4 Part Cinnamon Syrup
  • 3/4 Part Lime Juice
  • 4 Parts Hibiscus Tea

Preparation: Build all ingredients in a small bowl and mix. Add ice cubes and garnish with cinnamon sticks and orange slices.

Ingredients:

  • 1 1/2 oz. Van Gogh Pineapple Vodka
  • 1 oz. Passionfruit Puree
  • 1 oz. Turmeric Sichuan Syrup*
  • 1 oz. Lemon Juice
  • 1 oz. Egg White
  • 6 drops Elemakule Tiki Bitters
  • Toasted Coconut, Turmeric powder, & Rose petals (optional) for Garnish

Preparation: (Reverse Dry Shake Method) Add all ingredients except egg white into shaker with ice, shake well. Fine strain back into shaker tin, discard ice. Add egg white and shake again, then pour directly into glass.

Turmeric Sichuan Syrup*

Ingredients:

  • 1 cup Sugar
  • 1 cup Water
  • 1 tsp. ground Sichuan Pepper Flakes
  • 1 tbsp. Grated Turmeric
  • 1/2 tbsp. Grated Ginger or Ginger Juice
  • peel of 1 Lemon

Preparation: Heat until sugar dissolves and boil for at least 10 min. Remove off heat. Store in fridge.


Story: “Van Gogh didn’t start painting until his late 20s, in case you feel like you haven’t found your talent” is a quote I’ve seen more recently than ever. It speaks volumes, and I feel strongly in agreeance with. I feel that as my career has changed and evolved so has my palate and my passion for mixology. I lost the love of it a while ago, and now being back in it, I’m finding my talent and loving it even more. I wanted to use distinct flavors that hold their own but can complement each other that I grew up on. Turmeric has an earthy flavor and undeniable golden yellow hue that I grew up enjoying with my dad in all of our cuisines. Much like passionfruit, it’s also so recognizable, flavorful and beautiful. I wanted something to represent my passion and my love of mixology, while incorporating familiar ingredients that got me in love with culinary cocktails in the first place. So, although it took me a while to find my passion again, I’m glad I did.”

Heaven Hill Distillery Releases 2020 Limited Edition Parker’s Heritage Collection

Heaven Hill Distillery recently announced the release of the 2020 limited edition Parker’s Heritage Collection 10-Year-Old Heavy Char Bourbon.

This Kentucky based distillery is exploring the world of premium innovation. The 14th edition will ship nationally at an SRP of $120.

The 14th edition will keep the traditional Heaven Hill Bourbon mash bill of 78% corn, 12% malted barley, and 10% rye, but will be aged with Level 5 barrels, as opposed to the traditional aged in Level 3. The 102 barrels, aged for 10 years, brings forth a caramel and maple sweetness, mixed with a smokiness that evolved after 40 Kentucky seasons in the barrel. The limited-edition Parker’s Heritage Collection will be bottled at 120 proof (60% ABV) and non-chilled to preserve the flavor compounds.

“The Parker’s Heritage Collection is a testament to the attention to detail crafted throughout Heaven Hill’s distilling legacy,” said Susan Wahl, Vice Present, American Whiskies at Heaven Hill. “It is an honor to continue Parker’s interest in innovation through this series and showcase the variety of Heaven Hill Distillery’s portfolio. It is in tribute to Parker and his legacy that we continue to support ALS research and patient care with this series.”

The master distiller of Heaven Hill, Parker Beam, was diagnosed in 2010 with Amyotrophic Lateral Sclerosis — also known as ALS or Lou Gehrig’s disease. From 2013-2019, Heaven Hill has released seven editions including “Promise of Hope” Bourbon, the “Original Batch” Straight Wheat Whiskey, and more. These have raised more than one million dollars toward ALS research and patient care. Keeping that tradition, with every bottle of the 2020 Heavy Char Bourbon edition sold, Heaven Hill with contributing a portion of the proceeds.

The 750ml navy blue labeled bottle will be available in three-bottle cases and at retail stores starting in October. With winning numerous awards from Whisky Advocate Magazine, Whisky Magazine and the San Francisco World Spirits Competition, the series is standing as some of the most praise American Whiskeys in recent memory.

Avaline Celebrates Release of Red Blend

Since the release of the white and rosé, Cameron Diaz and Katherine Power have been bombarded with the question, “are you going to release a red?”

The Avaline co-founders did exactly that. While a red wine was always in the works, they prematurely released it at the request of their followers.

“We created Avaline for our community. With the early success of both the White and the Rosé and constant requests for more wines, we knew we had to move the Red launch up sooner than originally planned and share the love. The Red happens to be my favorite yet,” adds Cameron Diaz.

The vegan wine made from all organic grapes was created to create a peace of mind to their conscious consumer. The blend is also free of any additives. With over 120,000 white and rosé bottles sold from their launch in July, Diaz and Power felt ready to release the red blend.

The two entrepreneurs had a desire to create a wine that wasn’t filled with unnecessary and undisclosed extras. They designed this wine for their consumers who sought after a healthy lifestyle.

Ingredients:

  • 2 oz. Van Gogh Cool Peach Vodka
  • 1 Egg White
  • 3/4 oz. Homemade Peach Ring Candy Simple Syrup
  • Topped with Peach-Nectarine Sparkling Water
  • Peach Ring Candies to Garnish

Preparation: Vigorously shake 1 egg white with NO ice in a shaker. Add ice, Cool peach vodka, and peach ring candy simple syrup then shake again, about 10 seconds. Strain into high ball glass over fresh ice. Top with peach-nectarine sparkling water. Garnish with peach ring candies 

Story: “My boyfriend LOVES peach ring candies. This is a great,unique cocktail for the sweet tooth that doesn’t feel super sugary! This was inspired by a favorite cocktail of mine, the gin fizz – hence the name peach fizz! I love the ombré effect this cocktail takes on in its finished state, like melting watercolors in a Van Gogh painting. Thanks for following along!”

Introducing part five of the Seven Deadly LeSins – Passion with LeSin Vodka.

This seven-part series will bring you 14 totally unique recipes brought together by Chilled 100 Ambassadors and the LeSin team.

LeSin Vodka teamed up with the Chilled 100 to get creative and give back to bartenders with their Seven Deadly LeSins cocktail program. The brand put together a program to not only put much-needed funds directly in the hands of bartenders, but to create unique recipes for both professionals and home enthusiasts to try. Charles Vaughn, Founder of LeSin, explained, “We challenged the talented LeSin teams and Chilled 100 Ambassadors to create something new and amazing that you can look forward to when the world re-opens (and it will), and also something sure to impress your friends when you entertain at home during these different times. We felt this LEVEL UP was something in between on-premise and off-premise, so we called it HOME-PREMISE.”

Vaughn added that the program was about how to do more than just make a cocktail; it was about finding a way to infuse each recipe with energy. After all, when you go out for a night of drinking, there’s so much more to the experience than just what you’re drinking.

Bartender Nadine Medina was challenged to create a cocktail inspired by the theme of Passion and the color Red.

  • 2 oz. LeSin Vodka
  • 3/4 oz. Smoked Honey Syrup
  • 2 oz. Tart Pie Cherries, Juiced

Preparation: Add all ingredients in shaking tin with ice, shake until very cold, pour through strainer into coupe glass. Garnish: Honey comb piece floating, Thai basil flowers and carnation with mini clothespin to the side of the glass. Put in Smoke box for 20 seconds, remove, then garnish with fresh grated nutmeg on top.

Ingredients:

  • 2 oz. LeSin
  • 1 tsp. Honey Syrup (1:1 hot water: honey)
  • 2 oz. Organic Tart Cherry Juice
  • 1/4 oz. Mezcal Rinse (for smoke)

Preparation: Put first three ingredients in shaker tin with ice, shake for bout 30 seconds until really cold. Put Mezcal in martini glass and roll around coating glass, strain and pour drink into glass. Garnish: long pick through cherry with hole in the top to put Thai basil leaves into and set on edge of glass, then dash a little nutmeg on top of drink.

This fall season, The Listening Room in Nashville, is serving their take on the timeless hot toddy cocktail.

While the drink is traditionally a blend of whiskey, honey, lemon juice and hot water, the bartenders at The Listening Room are mixing up something different.

This boozy cocktail combines a mix of spicy and rich flavors by swapping whiskey for bourbon and adding Amaro, the Italian liqueur, vermouth, and apple cider. It’s finished with cold foam and cinnamon for the perfect fall garnish.

  • 2 oz. Diplomatico Mantuano Rum
  • 3/4 cups Water
  • Lemon Spice Tea Bag
  • 1 oz. Apple Cider
  • 1 tbsp. Brown Sugar
  • Cinnamon Stick
  • Lemon Slice

Preparation: Bring water to boil in a saucepan; toss in lemon spice tea bag; steep for 5 minutes; remove the bag and stir in sugar, apple cider, Diplomatico Mantuano Rum, and cinnamon stick. Heat just to steaming; garnish with a cinnamon stick and lemon slice. Optional: add 1/2 tsp. of butter to a mug.

Preparation: In a small warm wine glass, add Tequila and hot apple cider. Float heavy cream. Garnish with grated fresh nutmeg over the cream.

  • 1 1/2 oz. apple cider
  • 1 oz. Re’al, Pumpkin Puree Infused Syrup

Preparation: Add all ingredients to the shaker with ice. Shake, strain, and pour into a martini glass. Garnish rim glass with crushed Graham Crackers.

The multi-course sampling is a patio cocktail experience for 90 minutes, consisting of two of six new hand-crafted beverages.

The menu was developed with each bartender in consideration, so each drink embodies a different personality. To enjoy the light and refreshing drinks, Aquavit has it retailed for $125 a guest.

For their tequila fans, the Tre is made with Lillet, Dolin dry and Cocchi Americano and Melon with tequila, watermelon, basil, and lemon. Their tropical flavor cocktail is the Alota, made with Pyrat XO reserve, Smith & Cross, toasted coconut syrup, pineapple juice, lime juice, and almond bitters.

Aquavit offers the Southeast, which is a blend of rum with tamarind, Banane Du Bresil, lime, and a hint of salt. The tasting will end with the Dimlet, a dill-flavored gimlet with gin, cucumber, and chanteuse, and the Newskool, a bourbon drink with orange liquor, brandy and Benedictine.

The tasting will be presented with small snacks like half-dozen oysters in an elderflower mignonette and artisanal cheese including fresh fruit, jam, and seeded crackers. Tarte Flambee with sausage, mustard crème Fraiche and pickled onions is also served.

Knappogue Honors Female Bartenders with Women in Whiskey Series

Starting October 1st, Knappogue Castle Single Malt Irish Whiskey has recruited 12 women bartenders across the United States to create cocktails reflective of who inspired them in their career.

As a way to honor influential women across the country, Knappogue will launch one of the cocktails recipes on their social media every two weeks, until International Women’s Day on March 8th.

The lineup will have an array of award-winning bartenders including Ezra Star (Boston), Meaghan Dorman (New York), Devon Tarby (Los Angeles), Mariena Mercer (Las Vegas), and Jenee Craver (Chicago). Kanppogue is encouraging all-female bartenders across the board to get involved.

Denaya Jones, the owner of DESstilled drinks events company in D.C., is providing the first recipe for the series. Denaya’s cocktail, Black is Gold, will combine Knappogue Castle 12 Year with Nocino Walnut Liqueur, home-made plum-honey compote, and egg whites. The drink is garnished with gold flakes and an Angostura Bitters crown.

  • 1/4 oz. Barrel-Aged Nocino
Walnut Liqueur
  • 3/4 oz. Plum-Honey Compote*
  • 1 Egg White
  • Angostura Bitters
  • Gold Fakes

Preparation: Brush compote onto half of the glass rim, gently roll in gold flakes, and place glass in the freezer. Combine ingredients in a shaker. Dry shake. Wet shake.
Double strain into a coupe glass. Top froth with an Angostura Bitters crown. 

*Plum-Honey Compote

  1. Thinly slice 2 ripe plums and add to a small pan over medium heat.
  2. Add 2 tbsp honey and bring to the boil.
  3. Reduce to simmer and let reduce for approximately five minutes, stirring occasionally.
  4. Remove from heat and let cool.
