Four Beer Cocktails to Celebrate the Holidays

While it has been a year filled with twists and turns, we can turn the negative around learn to celebrate in a different way. There is nothing like a cozy winter night accompanied by a seasonal cocktail. Take a break from vodka and rum and use a craft beer to make a festive mixed drink this holiday season.

Warm beer was been a staple across Europe between the 17th and 19th centuries. For a more up-to-date version, try this Mulled Winter Ale using a honey-molasses beer like Rahr & Son’s Bourbon Barrel Aged Winter Warmer.

*Makes 2 servings

Ingredients:

  • 3 tbsp. Honey
  • 2 Cinnamon Sticks
  • 1/4 tsp. Nutmeg
  • 6 Whole Cloves
  • 1/4 tsp. Brown Sugar
  • 1 tbsp. Brandy
  • 24 oz. Winter Ale (two cans of Rahr & Sons Bourbon Barrel Aged Winter Warmer)
  • Extra cinnamon sticks optional

Preparation: Pour the beer in a saucepan over low heat. Add the brown sugar, cloves, nutmeg, cinnamon sticks, and honey. Turn up the heat slightly and keep stirring occasionally for five minutes. Stir in the brandy, then turn off the heat. Cover the saucepan but do not remove it from the stove. After a few minutes of steeping, the mulled beer will be all set for sipping! Ladle into mugs or thick glasses and serve warm, with a cinnamon stick for garnish, if desired.

This creamy beer-nog will pair nicely with a Bourbon Barrel-Aged Imperial Stout like Fermont Brewing’s BBA Dark Star because of the sweet undertones of chocolate and espresso.

*Makes 4 servings

Ingredients:

  • 4 Pasteurized Eggs
  • 1/2 cup Sugar
  • 2 cups Whole Milk
  • 1 cup Heavy Cream
  • 1/2 tsp. Vanilla
  • 1 tsp. Ground Nutmeg
  • 1/2 tsp. Cinnamon
  • 6 oz. Chilled Stout (like Fremont BBA Dark Star)
  • Cinnamon Stick Optional

Preparation: Crack the eggs over two bowls and separate the yolks from the whites. Add the sugar into a bowl with the yolks and beat until smooth. Stir the milk, heavy cream, and vanilla into the mixture. Stir in the nutmeg and cinnamon until evenly mixed. Set aside. Take the bowl of separated egg whites and beat until thickened (you may want to do this with an electric mixer). Whisk the egg whites into the main mixture. Stir in the beer until smooth and even. Pour into glasses of your choice. Add sprinkles of cinnamon and nutmeg for garnish, along with a cinnamon stick, if desired. Serve chilled.

Hot chocolate just screams winter, and this adult version is even better. Tavour recommends using a velvety-soft Porter like Hoppin Frog’s Plum Tuckered Out Double Double Porter.

*Makes 4 Servings

Ingredients:

  • 1 cup Heavy Cream
  • 1 cup Milk (either whole or 2%)
  • 1 cup Chocolate Chips
  • 1/2 tsp. Canilla
  • 16 oz. Porter (like Mikkeller’s Chic Chic Chic-ary)
  • Whipped Cream and Cocoa Powder Optional

Preparation: Add the cream, vanilla, milk and chocolate chips to a saucepan, over medium high heat. Gently stir until the chips are evenly melted and everything is one, smooth mixture. Switch the heat to low and gently stir in the beer. Remove from heat and pour mixture into mugs. Top with whipped cream and a sprinkle of cocoa powder, if desired, and serve up while still warm!

Reminisce on your childhood and build a gingerbread martini. To get those gingerbread notes, use a dark ale like Copper Kettle Brewing’s Snowed In Coconut Oatmeal Stout. With notes of roasted coconut and toffee, it will complement the rest of the ingredients without making the drink too sweet.

*Makes 1 Serving

Ingredients:

  • 1 tbsp. Molasses
  • 1/2 oz. Ginger Syrup (available at grocery stores, or make your own by simmering 3/4 cup sliced ginger with 1 cup sugar and 1 cup water)
  • 1/4 tsp. Cinnamon
  • 1/4 tsp. Brown Sugar
  • 1/8 tsp. Vanilla
  • 1 Ginger Cookie
  • 1/2 oz. Honey
  • 1 oz. Chilled Espresso or Cold Brew Coffee (substitute coffee liqueur for an extra boozy kick!)
  • 2 oz. Chilled Brown Ale
  • Ice
  • Coconut Shavings and Extra Ginger Cookie Optional

Preparation: Start by pouring the honey onto a small plate and crushing up a ginger cookie on a separate plate. Mix in a sprinkle of brown sugar with the cookie crumbles if you have an extra-strong sweet tooth. Rim your cocktail glass (or other glass of your choice) by dipping its edges all around in honey and then lightly into the crumbles. Set aside. Pour the beer, chilled espresso/coffee into a cocktail shaker or tall stirring glass. Carefully add a few ice cubes. Gently stir in the molasses, ginger syrup, brown sugar, and cinnamon. Stir softly for another four seconds. Strain out into the rimmed cocktail glass. If desired, garnish with a ginger cookie and a sprinkle of coconut. Enjoy!

Getting to Know Shōchū with George Kaiho

Street's Fine Chicken- George Kaiho

Here’s a new Japanese spirit in town that may begin replacing sake.

Meet Shōchū, a liquor made from sweet potato, barley or rice. While sake is fermented, Shōchū is distilled. Because Shōchū is only distilled once, the alcohol level stays between 20 – 25 percent, making it stronger than sake. Although sake is currently more popular outside of Japan, Shōchū is more widely consumed in Japan.

For those interested in expanding their cocktail pallet, Street’s Fine Chicken recently created a new, Shōchū cocktail, The Flu Shot, made with chicken stock, Japanese Shōchū, lemon, ginger and topped with fresh cracked pepper. It is a unique spin-off of a traditional Hot Toddy. We had the chance to catch up with George Kaiho.

Talk to us a bit about your background in the beverage industry

I grew up in Japan and now work at a bar named Jettison in Dallas, Texas. I also assist with the cocktail creation at Street’s Fine Chicken.

Tell us about Shōchū – Why should bartenders get to know this spirit?

Shōchū is a distilled spirit from Japan that bartenders should get to know because of its diversity within its category and usability in low proof cocktails—it typically has an ABV of 20-25 percent. A low ABV cocktail is a great addition to any bar menu, offering customers a delicious craft cocktail without the harsh, altering effects that high ABV cocktails can have.

The main ingredients in Shōchū are barley, rice, and sweet potato, but there are many other ways to make the spirit—one of my favorites is with sugarcane from the Amami islands. The spirit exudes many different tastes depending on its ingredients—for example, barley tastes toasty, rice tastes delicate and sweet potato tastes rich. Koji, a yeast that is also used in making Sake, is commonly used to ferment Shōchū’s ingredients. Unlike other spirits, Shōchū is only distilled once.

Talk to us about mixing with Shōchū

An easy way to mix the spirit is to use a barley or rice Shōchū instead of vodka in a traditional vodka cocktail—ultimately making it a low ABV cocktail.

Another easy cocktail that bartenders can make is the Shōchū Hi-Ball (called Chu-Hi in Japan). This Hi-Ball is similar to a Japanese Whiskey Hi-Ball and allows bartenders to play with a lot of different flavors. A Chu-Hi is usually served cocktail style and mixed with a fruity, carbonated soda.

One of my personal favorite Shōchū cocktails is the Earth Wind & Fire, made with a sweet potato Shōchū to add richness and mixed with Mezcal and Green Chartreuse.

Tell us about The Flu Shot cocktail

The Flu Shot is based off the classic Bull Shot cocktail made with vodka, beef broth and Worcestershire sauce. Since Street’s Fine Chicken is a southern chicken house, we’ve always wanted to make a cocktail using chicken stock. The first spirit that came to mind when we created the Flu Shot was a nice barley Shōchū with a low ABV. The barley Shōchū brings warmth to the cocktail and compliments the delicate flavors of the chicken stock. Finishing the cocktail with a dash of horse radish adds a pleasant spice, and a pinch of salt and fresh cracked pepper ties everything together.

Ingredients:

Preparation: Heat Chicken Broth and combine all ingredients in a mug or tea cup.


Sanwa-Seirin Mugi Shōchū

Give us 3-4 tips to serving/mixing with Shōchū

  1. The best way to enjoy or serve Shōchū is the traditional Japanese way, in an Oyu Wari. An Oyu Wari is made with a barley Shōchū and simply mixed with hot water. The common ratio for mixing this is 6:4 (6 being Shōchū and 4 being hot water). The water is used to dilute the Shōchū and lower the ABV to a similar percentage as Sake-about 15 percent ABV.
  2. For bartenders creating cocktail menus, Shōchū is great to sip on during colder weather. The spirit adds a warmth and richness to cocktails that is perfect for the fall/winter.
  3. There are certain Shōchūs that are better for strictly cocktail mixing rather than just enjoying on the rocks. iichiko Saiten is a great Shōchū for cocktail mixing, made with 100 percent two-row barley and fermented with Koji (adds an umami flavor).

Using seasonal ingredients like mulled wine, maple, cranberries, and pears – there’s a little something for everyone!

Ingredients:

  • 2 oz. ABERFELDY 12 Years Old Single Malt Scotch Whisky
  • 1/2 oz. Mulled Wine Syrup
  • 2 dashes Aromatic Bitters
  • 2 dashes Orange Bitters

Preparation: Add ABERFELDY 12, mulled wine syrup and bitters to a mixing glass and stir. Pour into a rocks glass and add block ice. Garnish with an orange peel and cloves.

Ingredients:

  • 2 oz. Knappogue Castle 12 Year Old Irish Whiskey
  • 1 tsp. Grade B Maple Syrup
  • 1 tsp. Tempus Fugit Crème de Cacao
  • 1 tsp. Pierre Ferrand Dry Curaçao
  • 1 dash Angostura Bitters

Preparation: Grab a rocks glass and build your cocktail. Trim and express an orange peel for garnish.

Ingredients:

  • 1 1/2 oz. Bulleit Bourbon
  • 1/2 oz. infused Bulleit Bourbon, from the dried cranberries
  • 1 spoonful soaked cranberries*
  • 1-2 strips orange zest
  • 2-3 drops orange bitters
  • 1 tbsp. simple syrup, or to taste
  • Orange wedges, for garnish

*Bourbon Soaked Cranberries

Ingredients:

  • 2 oz. dried cranberries
  • 4 oz. Bulleit Bourbon
  • 1 cinnamon stick

Bourbon Soaked Cranberry Preparation:

  1. Add the cranberries, bourbon and cinnamon stick to a sealable glass container.
  2. Give it a stir and let the mixture sit on the counter for 1 day.
  3. Remove the cinnamon stick and put the bourbon cranberries in the refrigerator.
  4. Keep up to 1 month, refrigerated.

Cocktail Preparation: Fill a glass with ice. Add the bourbon, infused bourbon, some of the bourbon cranberries, orange zest, orange bitters, stir the cocktail and taste. If needed, add sugar syrup a little at a time until the cocktail is sweetened to your liking. Garnish with two orange wedges.

  • 2 oz. of Five Wives Heavenly Vodka
  • 1 oz. of Godiva Chocolate Liqueur
  • 1/2 oz. of Baileys Irish Cream
  • 2 tbsp. of Cinnamon
  • Handful of Marshmallows
  • Star Anise

Preparation: In your favorite hot chocolate drink, add 2 oz. of Five Wives Heavenly Vodka, 1 oz. of Godiva Chocolate Liqueur, and 1/2 oz. of Bailey Irish Cream. Pour into a rock glass pre-rimmed with cinnamon. Top it off with a couple of marshmallows and garnish with star anise.

  • 1 oz. of Five Wives Sinful Vodka
  • 1/2 oz. of Butterscotch Schnapps

Preparation: In a shaker filled with ice add 1 oz. Underground Herbal, 1 oz. Five Wives Vodka, 1/2 oz. of Butterscotch Schnapps, and 2 oz. of Baileys Irish Cream. Shake thoroughly before pouring into a prechilled tumbler.

  • 1 1/2 oz. of Madam Pattirini Gin
  • 2 oz. of Prosecco
  • 1 oz. of Pear Juice
  • 3/4 oz. of Spiced Brown Sugar Syrup
  • 5 oz. of lemon Juice
  • sprigs of Thyme
  • 2 Sliced Pears
  • 1 stick of Cinnamon

Preparation: In a shaker mix 1 oz. of Madam Pattirini Gin with 1 oz. of Pear Juice, 3/4 oz. of Brown Sugar Syrup and 1/2 oz. of lemon juice. Pour into a chilled tumbler with ice and top with a splash of Prosecco. Garnish with sprigs of thyme, pear slices, and a stick of cinnamon.

Even more research has been found regarding red wine on brain diseases like Alzheimer’s and Parkinson’s.

Martinis that made with vodka or gin, olive juice, and olives have heathy monounsaturated fats. Be sure to skip the blue-cheese stuffed olives if you want to keep things on the lower calorie side.

Lebron James Backed Lobos 1707 Tequila and Mezcal Launches

Inspired by a century’s old distillation process, Lobos 1707 brings a fresh face to the tequila and mezcal markets this winter.

Each of the four spirits being launched are made using traditional methods and finished in Pedro Ximénez wine barrels from Spain for a totally unique flavor profile. The company is led by Founder and Chief Creative Officer Diego Osorio, Chief Executive Officer Dia Simms, and was backed early on by Lebron James.

Osorio notes that creating Lobos 1707 was a way of storytelling, which appealed deeply to Lebron James when he was introduced. “I knew the first time I tasted Lobos 1707 Tequila that it was special,” James explained. “Lobos 1707 is about celebrating the strength of the group and bringing people together. It’s about celebrating the strength of the group and bringing people together. It’s about shared passion and values.”

The collection is launching this winter with four variants: 

Lobos 1707 Tequila, Joven

This balanced tequila is made with a base of 100% blue weber agave Blanco Tequila blended with a measure of the line’s Reposado. The mix is then carbon-filtered and finished in historic Pedro Ximénez wine barrels. The result is a balanced spirit with notes of tobacco, herb, and earth.

Featuring notes of lightly roasted coffee, cocoa, and oak, this tequila rests in American white oak barrels for over six months before its final finish in historic wine barrels. The process starts with slow cooking 100% Blue Webber agave grown in Los Altos de Jalisco; the liquid is then extracted, fermented, and mixed with a measure of Extra Añejo.

This aged tequila is the perfect segue to tequila for any brown spirit lover. Best served neat, or on the rocks, it features aromatics of rich agave, sherry, citrus, and tobacco and has tasting notes of oak, sherry, and molasses. The agave used is harvested after a minimum of six years and then slow-cooked, extracted, fermented, and aged for three years.

The 100% Espadín agave used in Lobos 1707’s Mezcal is grown for a minimum of six years on the volcanic soil of the steep slopes of the Oaxacan Sierra. Once harvested, the agave is roasted in a conical Oaxacan fire pit that reaches temperatures of 900º; it’s then ground in a horse-pulled Egyptian mill and finished in the brand’s historic wine barrels. You’ll notice the unmistakable smokey nose of Mezcal mixed with a dark and peppery aromatic. On the palette, you can expect an intensely smokey flavor with subtle spice and gradual smoothness.

Ryan Hauret, assistant manager, tells us more about Sparrow + Wolf and what they do to help reduce waste within the ever-changing bar world.

Chef Brian Howard’s Sparrow + Wolf is an American cookery influenced by his travels, his classic training, and midwestern roots. Their focus is balancing old and new as well as cooking in synergy with the seasons. Located in Chinatown, they continue to be influenced by their surroundings. The beverage menu is constantly changing with the seasons so there is always something fresh to try.

They have a “pull-from-the-pantry” mentality, which basically means they keep their focus on the synergy between the front and back of the house. They have less inventory, lower waste produce, and a focal point on creating cocktails that pair directly with their food.

This method allows them to buy less while also finding innovative ways to use a single ingredient.

They maximize their profits by closing the loop between bar and kitchen. It’s simple, “the less you are throwing away, the more you use, the more you make. By being conscious of what we throw out or reinvent either in the kitchen or bar, you save money, which in turn maximizes the uses for waste,” Hauret says.

Tips for Bartenders & Chefs to Balance Food & Drinks Menu

  1. Collaboration! The bar team and chefs should be on the same page. “If your teams aren’t on the same page, your menus will read that way.”
  2. Urge your bar team to prep in the kitchen with the BOH team. A natural bond will form, which will help keep equilibrium between menus.
  3. Educate your teams. Challenging both BOH and FOH to learn about the other avoids disharmony between menus.

With the new year around the corner, a London startup company has created a low ABV botanical blend for those who are looking to moderate their drinking and calorie intake.

ILLOGICAL DRINKS, an alcohol company based in the UK, has released MARY to the public. This delicious blend is made from four drink experts, who sustainably source garden herbs for a fresh taste with fewer calories.

Mary is the first low calorie but low alcohol blend on the market. It allows for non-excessive drinking but doesn’t force the consumers to give up alcohol completely. For a 25ml pour, there are just 9 calories with a 6% ABV. It would take the consumption of six Mary and Tonics to equal a regular Gin and Tonic.

The sophisticated dry taste comes from plants including basil, thyme, and sage. The drink has a lighter touch on the body and mind because it doesn’t carry the heavy effects of a traditional spirit. Mary is also vegan, sugar-free, and zero carb.

Ingredients:

2 oz. MARY

2/3 oz. Fresh Lemon

2/3 oz. Orgeat Almond Syrup

1 Lime Leaf

Egg White or Alternative like Better Bitters Miraculous Foamer

Preparation: Add all ingredients into a shaker, give what is called a dry shake (shaking with no ice) then add the ice and give a good shake before straining into a nick & nora glass (or a stem glass of your choice) you will see a beautiful silky texture and foamy head of the cocktail. Garnish with a lime leaf.

Middle aged single malts hold a special place in both my heart and my wallet, since those rungs of the ladder are where Scotch Whiskies start to really show some personality while retaining a relatively reasonable price tag.

Laphroaig is one of the best known distilleries of Islay, an island famed for its smoky, saline style of malt whisky, but they walked away from the middle aged stuff in 2009. Now they are back, and they have come back in style.

The original Laphroaig 15 Year Old was one of the classic single malts, so much so that Prince Charles named it his favorite whisky and it earned the distillery a royal warrant in 1994, essentially making it an official whisky brand of the royal family. The distillery replaced it with an 18 Year Old version a decade ago, and while a fabulous whisky, the older malt didn’t occupy the middle aged sweet spot in the same way the 15 year old did.

Now Laphroaig has closed that gap in its regular line-up with a new 16 Year Old expression, which will replace the 18 Year Old expression. This was first released over in the UK as an Amazon-exclusive in September, but now it is available on a regular basis in the United States. Bottled at 48% ABV (a bit more potent than your typical single malt), it is priced at $90 per 750ml bottle.

When Laphroaig re-released the 15 Year Old on a limited basis in 2015 for their 200th Anniversary, I snagged a bottle, so I compared it to the new 16 Year Old version. Both share the same advantage over the younger Laphroaigs, in that the peaty, smoky aspect of the whisky is moderated and in better balance with the honeyed, spiced sweetness of the malt. That is what makes these whiskies so much more approachable to drinkers in general, some of whom are turned off by a potent current of smokiness. Yet the extra year gave the 16 year old something of a wet, earthy note, adding to its already rich body, so the slightly extended aging definitely made a difference, and an improvement.

Ingredients:

  • 1 1/2 oz. White Rum
  • 1/4 oz. Amontillado Sherry
  • 3/4 oz. Simple Syrup
  • 3/4 oz. Fresh Lime Juice
  • Topped with Sparkling Rose

Preparation: Shake it up and serve it up or on the rocks.
