Just because it’s cold outside doesn’t mean we can’t enjoy a Tiki cocktail! Sip on this fruity and delicious taste of summer. Created by Mariena Mercer – General Manager at Chandelier Bar and the property mixologist for The Cosmopolitan Resort, Las Vegas

Ingredients:

  • 1 1/2 oz. Knappogue Castle 14-Year-Old Single Malt Irish Whiskey
  • 1/2 oz. Kai Coconut Pandan Shochu
  • 1/4 oz. Tempus Fugit Creme de Banane
  • 1 oz. Pineapple Juice
  • 3/4 oz. Lime Juice
  • dash Pandan Paste
  • 1/4 oz. Coconut Chai Roobios Syrup*
  • Angostura Bitters
  • Frida Glass or highball
  • Crushed

Garnish: Simple syrup and Electra Dust, 2 dashes of Angostura Bitters, and edible flowers

Preparation: Assemble all ingredients and shake with ice for 20 seconds. Paint simple syrup on glass and apply Electra to the lips (or rim) of the glass. Pack the glass with crushed ice and strain the cocktail over ice. Finish with 2 dashes of Angostura Bitters and edible flowers.

*Coconut Chai Roobios Syrup

(1-liter water, 1-liter sugar, 4 tablespoons loose-leaf Coco Chai Roobios loose leaf tea). Bring all ingredients to a boil and simmer on low for 20 minutes. Let infuse for 1 hour and strain out solids. Refrigerate.

Peanut butter and cocktail are a match made in heaven. If you are looking for a decadent drink, this will be the perfect thing to cure that sweet tooth.

Ingredients:

  • 2 oz. Whisper Creek Peanut Butter Chocolate
  • 1 oz. Pickers Vodka
  • 1 oz. Dark Creme De Cacao Liqueur
  • 3 drops Vanilla Extract
  • Peanut Butter Cup

Preparation: Add all ingredients (except the peanut butter cup garnish of course) to a cocktail shaker. Fill with ice and shake vigorously for 30 seconds before straining into a chilled glass. Garnish with a peanut buttercup.

(serves two)

Eggnog lovers can agree that the holidays wouldn’t be the same without it. To sophisticate that childhood favorite, add some whiskey to it!

Ingredients:

  • 2 1/2 oz. Teeling Small Batch Irish Whiskey
  • 3 oz. Whole Milk
  • 2 1/2 oz. Double Cream
  • 2 1/2 tbsp. Sugar
  • 1 Egg (separated into whites and yolks)
  • Fresh nutmeg

Preparation: Whisk egg yolk in a bowl with 2 tbsp of sugar until the mixture is pale yellow and thick (this is best done with an electric handheld mixer). Stir in milk, double cream, and Teeling Small Batch Whiskey. When ready to serve, using a handheld electric mixer, whisk the egg white until foamy and opaque. Add the remaining sugar and whisk the egg white until soft peaks form when the whisk is removed. Pour the eggnog into a large glass and fold in the egg whites until well combined. Ladle the eggnog into glass tumblers and serve with a little freshly grated nutmeg over the top of each glass. Enjoy!

This spicey and sour cocktail will be the perfect thing to shake up and serve this weekend. With citrus flavors and excitement from the cinnamon, this drink will become a go-to.

Ingredients:

  • 1 1/2 oz. Egan’s Vintage Grain
  • 1/2 oz. Fresh Lemon Juice
  • 1/2 oz. Fresh Blood Orange Juice
  • 1/2 oz. Cinnamon/Clove Rich Simple*
  • Egg Whites

Preparation: Combine all ingredients in a shaker. Dry shake until pressure changes, add ice and hard shake until fluffy. Double strain into a large coupe. Garnish with chocolate bitters in a pretty design andor a dried blood orange round balanced on the rim.

*Cinnamon/Clove Rich Simple

Make a rich infused syrup by dissolving 16 oz sugar in 8 oz water and adding 2 cinnamon sticks and 4-6 whole cloves to the mix. Leave them in until the finished syrup comes to room temperature.

Each of these four drinks was developed by the beverage team at a different resort. So you can travel by cocktail and plan for next year’s (hopefully) post-covid vacations.

On chilly Chicago nights, guests at the Deer Path Inn, a 57-room boutique hotel inspired by English innkeeping traditions, can tuck into the inn’s individually wrapped, Santa-approved turndown chocolate chip cookies and sip on a Red Velvet Hot Cocoa for ultimate #cozyseason vibes.

Ingredients:

  • 8 oz. Chocolate Chips
  • 1 cup Whole Milk
  • 1 tsp. Vanilla Extract
  • 4 drops of Red Food Coloring (or more if deeper color desired) 
  • 1 oz. Vanilla or Cream Flavored Vodka

Preparation:  In a small sauce pot, on medium heat, add the chocolate chips. Once they start to melt, start adding in the milk, while stirring with a silicone covered whisk. Stir until all melted and smooth. Bring to a low boil, stirring often, and add vanilla or cream flavored vodka, red food coloring.  Stir and cook for about a minute. Serve it in a clear cappuccino cup and top it off with whipped cream and more chocolate chips.

Preparation: Build the cocktail in any insulated glassware and top with hot Rishi’s “chamomile medley” tea. Garnish with a nutmeg-dusted lemon wheel.

The Sultan, reminiscent of your favorite winter vacation, is a hot cocktail inspired by snow-laden mountains and ski trips. Whiskey from Park City—combining rye, bourbon, and scotch for extra complexity—is the basis of this drink from manager Josh Hockman at everyone’s favorite local hangout, The Brass Tag.

Ingredients:

  • 1/2 oz. High West Campfire Whiskey
  • 1/2 oz. Utah Honey
  • 1/2 oz. Fresh Lemon Juice
  • 2 dashes Scrappy’s Seville Orange Bitters
  • 3 oz. Hot Water

Preparation: Combine and stir honey, hot water, and lemon juice in a glass. Add the bitters and whiskey. Garnish with cinnamon, an orange peel, and fresh grated nutmeg.

Don’t get spooked, but the Wally Toddy is named after the in-house ghost who is a legacy of the historic building—a Comstock mine-era lumberman’s home prior to becoming a restaurant. This simple recipe is the perfect holiday treat and will transport you from your kitchen to scenic Lake Tahoe in no time.

Ingredients: 

  • 1 1/2 oz. Makers Mark Bourbon
  • 3/4 oz. Honey Simple Syrup (equal parts water and honey boiled down)
  • 1/2 oz. Fresh-Squeezed Lemon Juice
  • 4 oz. Hot Water

Preparation: Build the cocktail in a snifter glass and serve with a lemon twist.

  • 1/2 oz. All Spice Dram

Preparation: Shake and double strain over crushed ice, garnish with nutmeg.

Ingredients:

  • 1 oz. ABERFELDY 12 Years Old Single Malt Scotch Whisky
  • 1 oz. Unfiltered Apple Juice
  • 1/2 oz. Lemon Juice

  • Sparkling Wine (to top)

Preparation: Add ABERFELDY 12, apple juice, lemon juice and syrup to a glass and stir. Pour into a champagne flute and top with sparkling wine. Garnish with a rosemary sprig and a dehydrated apple slice.

  • 1 1/2 oz. Lobos 1707 Mezcal
  • 3/4 oz. Red Wine Syrup
  • 3/4 oz. Lemon Juice
  • 1 bar spoon of Apricot Jam
  • 1 Dried Apricot

Preparation: Combine all liquid ingredients and apricot jam with ice in a shaker. Shake, strains, and serve in a rocks glass. Garnish with a dried apricot.

  • 1 oz. Vodka

Chilled 100 Spotlight: Derrick Li

Chilled 100 member, Derrick Li, is part of the San Francisco market. 

Derrick immigrated from China to the United States in 2007 to start a better life for himself. He began as a graphic designer in San Francisco’s Chinatown while he was taking ESL classes at the City College of San Francisco. He wanted to learn and improve his English skills.

He came across a Bartending & Table Waiting class and decided to enroll. He developed a passion for bartending and became inspired to become a professional bartender. After completing the course, he was referred to work at Benihana restaurant which was his first bartending job in 2012.

In 2016, Derrick joined USBG and participated in several competitions, and gained recognition. He is the Bar Director at the Palette Tea Garden restaurant in San Mateo and he has also worked as a drink creator and bar consultant. He has become obsessed with mixology and enjoys experimenting with new drinks.

Derrick truly enjoys the craft and loves meeting all of the fun people in the community. He believes that if you dedicate yourself and work hard, anything is possible.

What’s your go-to cocktail?

My go-to cocktail is: Old Fashioned classic cocktail

What are your favorite cocktail trends?

My favorite cocktail trends: would love to see perfect balance cocktail that with unique ingredients such as fermentation.

Do you have any unique skills / what separates you from other bartenders?

My unique skills I think would be (using) Chinese Baijiu, that is different from anybody else. I have been using it as my key ingredients for cocktail about 4 years already. That was unique and fun ingredient to play with!

What cocktail ingredient could you not live without? What ingredient is overrated?

Pineapple. I am a huge rum and baijiu lover; I can’t live without it for sure. I think the worst cocktail ingredient is simple syrup. There are so many different ways to obtain fat and/or sugar in your cocktails nowadays — with the proper product knowledge, that is.

What’s one piece of advice you could have given yourself when you first started out as a bartender?

Start reading and stay focus on what you love and get it done!

Ingredients:

  • 4 oz. (Vegas local) Ellis Island Egg Nog
  • 1 oz. Brandy
  • 1 oz. Heritage BSB Brown Sugar Bourbon
  • 1 Star anise, for garnish
  • Cinnamon dust, for garnish
  • Nutmeg dust, for garnish

Preparation: Combine all ingredients and pour into a coupe glass. Garnish with cinnamon, nutmeg and star anise.

  • 2 oz. Origin Eggnog
  • 3/4 oz. Cognac
  • 3/4 oz. Pineapple Rum
  • 1/2 oz. Overproof Traditional Dark Rum
  • 1/2 oz. Simple Syrup
  • 2 dashes Aromatic Bitters

Preparation: Combine ingredients and shake vigorously until chilled. Strain contents into a Nick & Nora or stemmed cocktail glass. Garnish with fresh grated nutmeg and a charred cinnamon stick. Enjoy on a cold night or in charming company (preferably both).

“This recipe uses both rum and cognac to emphasize the baking spices and depth of the eggnog, as well as light tropical fruit notes. The result is a well balanced cocktail that evokes a Colorado holiday with beach front memories. The unique richness of the A2 Guernsey milk envelopes your palate in flavor and is a deceptive match to the robust spirits. When shaken, the A2 proteins create a rich head with a dense foam to add another layer to rest garnishes and aromatics on. Feel free to add charred pineapple slices, orange peel, or even a spritz of your favorite absinthe on top to make the cocktail your own.“

Preparation: Combine ingredients and shake over ice. Strain into martini glass and top with grated nutmeg and a cinnamon stick.

Don’t Nog It ’til You Try It

From Charleston’s The Bar at The Spectator Hotel master cocktail craftsman, Allen Lancaster.

Ingredients:

  • 1 oz. Brown butter washed Striped Pig Spiced Rum*
  • 3 oz. White chocolate-tarragon eggnog**

Preparation: Combine above ingredients in mixing glass with ice and stir. Strain and pour contents into snifter. Top with fresh grated nutmeg and white chocolate, then garnish with tarragon sprig.

*Brown butter washed Striped Pig Spiced Rum

  • 1lb. Unsalted butter
  • 1 bottle Striped Pig Spiced Rum

Preparation: Add butter to medium sauce pan at medium to high heat. Cook butter until brown, whisking regularly as not to burn. Remove from heat and add rum. Let stand at room temp for 4-5 hours. Transfer to freezer safe container and put in freezer overnight. Take out of freezer the next day and remove hardened butter from the top. Pour contents through fine strainer and again through coffee filter. Reserve liquid and store in dry cool place.

**White chocolate-tarragon eggnog

Ingredients:

  • 12 Eggs
  • 8 cups Milk
  • 4 cups Half-n-Half
  • 1 1/2 cups Sugar
  • 1 tbsp. Nutmeg
  • 1 tsp. White Pepper
  • 2 tbsp. Cinnamon
  • 1 Med Bunch Tarragon
  • 16 oz. Bag White Chocolate Chips

Preparation: Add eggs to mixing bowl, whisk, and set aside. Combine remaining ingredients, except the white chocolate, into a medium sauce pan on medium heat. Let simmer for 10-15 minutes, then strain to remove tarragon. Reserve a small amount and use to temper eggs by slowly whisking it in. Put the remainder back on low heat and add the now tempered egg mixture. Slowly add white chocolate chips, stirring simultaneously, until completely incorporated. Remove from heat, allow to cool, transfer to storage vessel, and refrigerate.
