THE THYMES THEY ARE A-CHANGIN’ ….

It's Thyme for Courage, featured image

It takes courage and strength to keep on going when everything around is changing and evolving.

That is precisely why Thyme is our herb of the moment. The word Thyme in its Latin glory of thymus means courage and this lovely lady has been associated with that sense of bold courage since ancient times. Egyptians used thyme in mummification preparations and Roman soldiers ate a robust meal with thyme before entering battle. The thymus gland itself in our bodies, which peaks at its level of importance and productivity at the apex of puberty, is so busy bringing all the T-cells to maturity in the body in order to fight infections for the rest of our lives.

It is no wonder that one of Thyme’s major function for the body is to boost the immune system, aiding in the necessary, courageous armor to ward off disease in the body. In Traditional Chinese Medicine, the metal element associated with the lungs and our wei qi is the first layer of defense against pathogens. And who to best report for duty in supporting that respiratory system? Why, Thyme of course. Also aiding in reducing inflammation and acting as a powerful antiseptic, Thyme is right on time these days. As we remain in a global pandemic, with compromised immune systems creating space for sickness to thrive, it is vital to offer our body the best defense possible!

Along with these functions, Thyme offers other healing benefits. Carvacrol is found in Thyme and has been purported to help increase serotonin and dopamine levels, which is something we could all use. Supporting heart health, healthy skin, and acting as an antioxidant, there is not much this courageous tiny leaved plant can’t do. In the cocktail today, I am also incorporating Butterfly Pea Flower to add an extra boost of antioxidants. This vibrantly colored flower has been used in the Ayurvedic healing tradition throughout history as a wonderful plant ally supporting overall health and wellness. Enjoy with courage and strength!

SMOKE LAB VODKA Classic and Aniseed

SMOKE LAB Vodka is excited to announce the debut of SMOKE LAB Aniseed Vodka in the U.S.

India’s NV Group, one of the largest Grain Spirit Distillers in the country, and SMOKE LAB, the company’s new-age lifestyle endeavor, are bringing a playful exploration of a beloved Indian herb. SMOKE LAB Aniseed Vodka has refreshing notes of fennel and licorice that provide a creamy and sweet fennel blossom on the palate.

India’s first-ever homegrown, luxury vodka is inspired by SMOKE LAB founder, Varun Jain. It’s produced one batch at a time and crafted with locally sourced, high-quality Basmati rice, a crop that is indigenous to the brand’s native country, and Himalayan spring water. Founder and CEO, Jain commented, “We are very proud of SMOKE LAB Aniseed Vodka, our latest new age entry in the vodka category, and thrilled to bring it to consumers in the U.S. SMOKE LAB Aniseed Vodka is a mystical aromatic spirit with a bold and distinct flavor, derived from aniseed. It is extraordinarily smooth and creamy, making it the perfect complement in classic and complex cocktails. We encourage professional and at-home bartenders alike to have fun mixing up cocktails with a range of ingredients that highlight SMOKE LAB Aniseed’s unique flavor profile from premium mixers and juices to fresh herbs & spices, seasonal fruits & vegetables, and creative garnishes.”

With his unique perspective, he is bridging the gap between lifestyle and spirits in India and globally. The brand is also developing new and exciting spirits in different categories that will further reinforce India’s story.

BACARDI’S TRENDS FOR 2021

By | Mixology News

Bacardi Trends Report

Bacardi teamed up with trend forecasters, The Future Lab, to gain insight on the top trends that will impact the spirits industry.

They are forecasting what, where, why, and how people will be drinking cocktails over the next 12 months. They featured everything from the rise of at-home drinking, consumers embracing new flavors, and no/low ABV spirits. Their findings report on all the factors that are driving the industry this year.

Let’s take a look and see what Bacardi has predicted for the year.

Bacardi 2021 Cocktail Trends Report_Infographic

At Home Celebrations

RTDs have taken over as they exploded with a 131% rise in the U.S. Similar, at-home cocktail kits were loved by 40% of consumers, and the rise of e-commerce and online sales grew. The convenience of staying at home and having anything delivered to your doorstep became something consumers obsessed over. Drizly had experienced a 350% growth, according to IWRS so, the use of spirit delivery services will become increasingly popular as the year goes on.

Escapism Rules the Day

With wanting to escape the reality of the world, many people had a desire to make twists on cocktails and use extreme flavors. People are more willing than ever to play outside their cocktail comfort zone by adding spicy, sweet, bitter, and different flavors to their drinks. They also say a spike in spicy margaritas will continue to be popular as well as bitter negronis and gin & tonics with a twist.

According to Bacardi, “The popularity of bitter flavors, in particular, coincides with how consumers are embracing the Italian Aperitivo culture across the globe. Consumers are also seeking classic cocktails for a sense of familiarity, but, with the monotony of lockdown life, there’s been a renewed desire to experiment with fun twists on these time-honored staples.”

Spotlight on Premiumization

There is light at the end of the tunnel, and when we are in post-lockdown, consumers will be going out with a newfound knowledge of spirit and cocktails. As they experimented at home, their cocktail making and bartending skills will give them an appreciation for those creating innovative drinks.

Bacardi adds, “Premium spirits are also forecasted to increase their global volume market share to 13% by 2024, according to IWSR. The best premiumization opportunities in North America lie in tequila (60%), dark rum (32%), and mezcal (29%), based on insights gleaned from the Bacardi Global Brand Ambassador Survey 2020.”

Sustainable Movements

With the want for more transparency and sustainability efforts, nearly 70% of consumers in the U.S. and Canada look for eco-friendly brands. Moving forward, there will also be a shift in bars and bartenders creating zero-waste programs. Sustainability will be at the forefront of people’s minds.

Mindfulness

We are already seeing the shift in wanting to use health-boosting ingredients in cocktails so this trend will be growing for those seeking mindful options. Low ABV cocktails are providing those an alternative drink solution, and 47% of respondents are favoring this category. Bars and restaurants are making the shift, with many having hybrid menus that offer both non-alcoholic and alcoholic drinks.

Bartenders are even opting for immune-boosting ingredients when it comes to making cocktails too. “The Bacardi Global Brand Ambassador Survey 2020 reveals that functional ingredients with energy and superfood-related ingredients rank particularly strong amongst bartenders.” tenders.”

CHILLIN’ WITH VASILIOS FILIPPAKIS

By | Mixology News

Chillin' with Vasilios Filippakis

Actor/writer Vasilios Filippakis was born in August 1991 in Windsor, Ontario, Canada.

He is known for proficiency in his craft throughout several productions including “Hudson & Rex” (2019) and “Shadowlands” (2018). His most relevant act is credited to highly popular “dramedy” series “FAK YAASS”

The show follows the story of Nico Nicolakis and his big Greek family, including his homophobic grandfather, as they journey through accepting Nico no matter his sexuality.

The series excellently portrays the clash between old tradition and the new age, millennial Nico, played by Vasilios Filippakis, who struggles with the idea of returning home, where he has always felt judged and unworthy. With the help of his friends, Anton and Torri, Nico’s heart begins to let his family in, and they begin to accept him for who he is, until a secret family scheme may ruin that forever.

“FAK YAASS” is now available to audiences worldwide as it recently made its official international premiere on YouTube.

Chilled sat with Vasilios to discover his favorite drinks at home/during a night out, along with how he has been coping with the Covid-19 madness.

Tell us about the projects you are working on.

Right now, I’m working closely with Bulldog Productions. We released FAK YAASS worldwide on YouTube after being OUTtv’s number one viewed series in Canada. What I love with Bulldog Productions is that recently we have been focused on creating new LGBT content.  From features, to podcasts, and music – we are branching out and kind of doing it all. It has been keeping me busy!

With your busy schedule, what do you like to do with your downtime?

The morning is a time that I have carved out just for myself. Typically, I love waking up early with a fresh cup of coffee to spend the time to focus on my intentions and goals.

When you go out to eat, where do you like to dine?

I LOVE Mexican. I’ll eat at any Mexican place, anytime of day.

Chillin' with Vasilios Filippakis

Chillin’ with Vasilios Filippakis

What types of dishes do you typically order?

Give me the Guac! Also, vegan cauliflower tacos are on the top of my list.

Any favorite bars?

Woody’s in Toronto! It’s a good time, lots of cuties.

What drinks do you order when out? Favorite drink?

I typically go for tequila soda or vodka soda.

Chillin' with Vasilios Filippakis

Do you prepare drinks at home?

Does opening a bottle of red count?

Have you ever been a bartender?

I have been! I worked at Rainforest Cafe back in the day.  You would think it’s a kids restaurant and it would be an easy gig. But, the number of mixed cocktails that were blended and array of garnishes did not make it a walk in the park.

What dishes/drinks are you making at home right now during “stay-at-home?”

I’ve been really big on soup right now. It’s nice to make a huge pot and keep it for a few days. I always store some in the freezer for later.

How are you coping?

Honestly, I’m enjoying the time off. I feel like I’m usually on the go so it’s been nice to chill at home. I think it’s such a great time to focus on yourself and accomplish things you’ve always wanted to do. You know, the stuff you might look at and say,  “only if I had more time”, well, now you do!

You can watch the whole series here.

What are some of the less obvious signs for you that you’re overdoing it at work?

One less obvious sign can be as simple as being thirsty when behind the bar, not drinking enough water can easily lead to fatigue, headaches, and injury. These are all things that affect bartenders on a regular basis, and I think that one thing that can help is making sure to drink several glasses of water during a shift.

Share some of your top tips for staying well behind the bar.

A few tips for staying well behind the bar would definitely be to drink water, stretch, stop and take deep breaths, and to make sure to cook a good meal and bring it to work with you.

Do you have any recommendations for tools bartenders can use to stay well?

Foam roller, tennis ball, and a cork yoga mat. All of these tools if used everyday after a shift will make you wake up feeling rejuvenated guaranteed, you just got to give it some time.

What are some of the ways you keep stress and fatigue at bay?

It can be hard to fight stress and fatigue, especially when behind the stick, but not drinking before bed, having a glass of water before bed and after you wake up, stretching, and working out can all make or break my entire day. Not to mention making sure I start my day with a fruit smoothie for some good energy and maybe a black coffee!

How can bartenders work with their employers to create a healthier work environment?

Request mandatory stretch breaks and food breaks! I think that recognizing you need these things, and all employees deserve these things can be a great step moving in the right direction not just for you but for our entire industry, let’s shake it up!

The distillery’s most sought-after whisky is offering over 100 cases nationwide. For owners Scott and Becky Harris, this will be double what they released last year.

Catoctin Creek Rabble Rouser

Catoctin Creek Rabble Rouser

“Due to better planning and growing reserves, Becky and I are really excited to offer more Rabble Rouser this year,” said co-founder and general manager, Scott Harris. “Because it’s been so limited in the past, this may be the first time a lot of folks will be able to purchase it, and we’re looking forward to hearing what they think!”

The whisky, bottled at 100 proof and aged for four years, is distilled from 100% rye at a lower proof, to capture the flavors that are typically lost in pot stills. The tasting notes provide a rustic profile that is reminiscent of the states of Virginia. With notes of nectarines, clover, honey, sandalwood, peaches, deep earthy notes, and more, the whisky is nothing short of flavorful.
