Drink in History: The Manhattan

What’s the drink order perfect for reviewing a bar? You guessed it: the legendary Manhattan.

For such a simple drink with only three ingredients—whiskey, sweet vermouth, and bitters—it actually takes serious skill to ace one.

If you stir it too much, it’s watery. If you don’t stir it enough, it’s too warm. If there’s too much vermouth, it’s sticky sweet. And because it is so simple, quality ingredients are key. Ever tasted a Manhattan that’s been made with inferior whiskey or vermouth? Then you know of what we speak.

“Indeed, the mark of a bartender who is truly worth his or her salt lies solidly in his or her interpretation of the Manhattan,” cocktail historian Gaz Regan wrote in an article for the SF Gate.

So, who was the genius that mixed up the first one? As with many cocktails, the origins are a watery abyss of theories. And this one even includes the world’s most famous prime minister in the womb!

What we do know for sure is this stunning stalwart was invented sometime in the late 1800s. In fact, one of the earliest records of a Manhattan version was in the 1891 book, The Flowing Bowl- What and When to Drink: Full Instructions How to Prepare, Mix and Serve Beverages, by William Schmidt, called for gum, bitters, absinthe, whiskey, and vermouth.

And this precedes other vermouth cocktails, such as the Rob Roy, Martini, and the Martinez. Therefore, the Manhattan is the godfather or grand poobah (as well it should be) of drinks with vermouth.

The juiciest version of the drink’s origin took place at the Manhattan Club in New York. And yes, the club still lays claim to it today. Allegedly, in 1874, Dr. Iain Marshall created it for a party Lady Randolph Churchill (Winston Churchill’s mom) was throwing to celebrate Samuel J. Tilden’s victory in New York’s gubernatorial election.

However, this theory has major eyebrow-raising flaws. According to David Wondrich in his book Imbibe!, the party was thrown at the same time she was in England giving birth to the future political legend.

Another account, which is the one most cocktail historians agree on, was by bartender William F. Mulhall. Mulhall was behind the stick for decades at New York’s historic Hoffman House (It opened in 1679, and you can still get a stiff drink there today!). In a story penned by the longtime bartender in the 1932 Valentine’s Manual of Old New York book, he wrote: “The Manhattan cocktail was invented by a man named Black, who kept a place ten doors below Houston Street on Broadway in the 1860s—probably the most famous drink in the world in its time.”

Whoever it was that invented the world’s most expertly made cocktail, we can all raise a glass in their honor. And although its historical roots are quintessentially anchored in New York, the Manhattan appears on nearly every craft cocktail bar menu in the world—in some form or another.

To make a traditional Manhattan, crank up Frank Sinatra’s “New York, New York” classic and stir up this recipe:

  • 2 oz. Bourbon
  • ¾ oz. Sweet Vermouth
  • 3 dashes Angostura Bitters

Preparation: Fill mixing glass with ingredients, add ice, and stir gently for 10-15 seconds, and strain into a cocktail glass. Garnish with a cherry.

Mix Up Summer In A Glass With Espanita Tequila

Handcrafted from 100% Blue Agave grown in the highlands of Jalisco, Espanita Artisanal Tequila has quickly become a favorite of bartenders across the country.

Espanita was recently recognized for their commitment to quality with gold medals and overall high scores at 2020 USA Spirits Ratings, MicroLiquor Spirit Awards, Beverage Testing Institute and others.

The brand currently has three expressions – Blanco, Reposado, and Anejo.

As the first in the lineup, the Blanco is bottled fresh from the still for a bright and peppery aroma with an intense, clean, and herbaceous flavor profile. The aroma has hints of marzipan and chocolate mint, with sage, bay leaf, and lemongrass. On the palette the entry is silky smooth with a creamy texture and vibrant, light-to-medium body that has notes of black peppercorn, rosemary, hazelnut spread, thyme, and agave. Expect a long herbal finish with a smooth and mellow lingering agave sweetness.

After aging for six months in lightly charred American oak ex-bourbon barrels Espanita Reposado takes on a light golden hue and succulent flavors. Aroma notes include spiced butter, vanilla butterscotch, crystallized ginger, jasmine tea, with underlying hints of saline and peppery herbs. At first sip you’ll notice a creamy and agave focused profile with notes of kola nut, and walnut followed by gentle hits of sweet tarragon and sassafras. The finish is long and refined with notes of coconut cream, muscat blanc á petits grains and candied banana.

Espanita Anejo is a true gem of a spirit; aging in American oak ex-bourbon casks for 18 months results in a luxuriously smooth and rich liquor. On the nose you’ll find a bouquet of honeyed oak, roasted agave, with traces of citrus tree wood, caraway, and almond nougat. The flavor opens with velvety full-bodied honey and fruit with fresh grass, vanilla, toasted marshmallow, and notes of apple and sassafras. Rich flavors of black tea, coconut flesh, candy corn, banana, and apple round out the finish.

  • 1 oz. Grenadine

Preparation: Fill a tiki mug or a large cocktail glass with ice, set aside. In a Boston shaker, combine Espanita Tequila Anejo, orange liqueur, simple syrup, and juices of lime, mango and pineapple. Add a handful of ice and shake well. Strain into the prepared glass and top with grenadine. Garnish with a pineapple wedge and serve with a straw.

It’s almost Cinco de Mayo so this Drink of the Week is, of course, featuring tequila. Pasote Tequila is a great base for a delicious drink.

Pasote Blanco is distilled from pure rainwater, natural spring water, and agave. The agave is grown from their master tequilero, giving it an herbal and incredibly pure taste. With aromas of agave roasted to perfection and bright citrus, it leaves behind a crisp and light flavor.

  • 1 oz. Pasote Blanco Tequila
  • 1 1/2 oz. Bozal Ensamble Mezcal
  • 1/4 oz. Aperitivo Liqueur
  • 3.4 oz. Passionfruit Syrup
  • 1/2 oz. Fresh Lime Juice
  • 1 oz. WTRMLN Juice

Preparation: Combine all ingredients, shake with ice, and strain over large ice cubes in a glass rimmed with Tajin and sesame seeds.

Light, refreshing, and perfect for spring; the paloma is Mexico’s most beloved cocktail for a reason.

This simple cocktail is just as delightful as a classic margarita. Tequila (or mezcal) is mixed with lime juice and grapefruit soda and a pinch (or rim) of salt. If you want to get fancy, swap the grapefruit soda with a mix of fresh juice and soda water. You can also add Tajín, a spiced salt, or a few slices of jalapeno for a little bit of a kick; spicy riffs pair well with mezcal.

  • 2 oz. Tequila or Mezcal
  • Juice from half a lime
  • Grapefruit Soda to Top

Preparation: Construct your paloma in a glass. If desired, rim glass with salt before mixing spirit and lime juice with ice and topping with grapefruit soda of choice. Garnish with lime circles and a pinch of salt.

Ingredients:

  • 1 1/2 oz. El Mayor Blanco Tequila
  • 3/4 oz. Jalapeño Simple Syrup
  • 3/4 oz. Lime Juice
  • 1/2 oz. Blood Orange Juice
  • Cilantro sprigs
  • Lime wheels
  • Jalapeños
  • Seltzer water
  • Tajin

Preparation: In a shaker filled with ice, pour tequila, simple syrup, blood orange juice, and lime juice and shake! Rim glass with tajin. Double strain liquid from shaker into rimmed glass.

Top with desired seltzer water. Garnish with lime wheels, jalapeño slices, and cilantro.

Adding a garnish or putting thought into glassware is a great way to make a canned cocktail feel more elevated in a hospitality setting. Ravandi added, “It’s absolutely worth the time and effort it takes to add a creative garnish to an ultra-premium RTD like El Luchador.” The sleek cans have an 8% ABV so, the flavor and punch are already there. Adding any form of garnish is going to add texture and a visual appeal to the cocktail.

Marie Brizard Toast to HERStory Competition Begins

Chilled has partnered with Marie Brizard to host the Toast to HERStory competition.

Challenging bartenders across the U.S. for a chance to create an original cocktail recipe to honor a woman who has inspired them.

Risk-taker Marie Brizard was a visionary leader since her brand’s creation in Bordeaux in 1755. A 260-year-old recipe that’s been kept secret and treasured, her flagship anisette liqueur is still considered a symbol of French elegance today. Marie Brizard is challenging bartenders to create a cocktail inspired by a women’s story, whether an iconic woman in history or a personal connection.

Cocktail entries can be submitted starting May 1 until June 6 for a chance to win. The competition invites bartenders to submit an originally crafted cocktail, utilizing Marie Brizard flavors and their HER inspiration.

Ingredients:

  • 1 half Lime
  • 2 spoons of Redcurrant/Blackcurrant Jelly
  • 1 oz. Marie Brizard Apry
  • 4 oz. Marie Brizard Grand’Orange

Preparation: Crush 1/2 a lime directly in the bottom of an old-fashioned fancy glass, add the jelly and ice, then pour in the Marie Brizard Apry Liqueur and the Marie Brizard Grand’Orange Liqueur.  Stir with a spoon.  Decorate with two cherries, a twist of orange and lime peel.

  • 2 oz. Marie Brizard Wild Strawberry
  • 4 oz. Tequila
  • Passion Fruit Juice

Preparation: Pour all the ingredients into a shaker with some ice cubes. Shake, filter, and serve a tumbler-type glass. Decorate with strawberries
