Classic Cocktails: The Long Island Iced Tea

Ah, the Long Island Iced Tea.

While it may not be the classiest drink, it has its purposes and today we’re sharing our favorite classic version of the cocktail.

The story behind this boozy beverage is hazy, but most signs point to it being created during prohibition. If the drink was created during prohibition, it hails from Long Island, Tennessee, and was created by Charlie “Old Man” Bishop and improved by his son, Ransom Bishop. Another origin story comes from Long Island, NY and a cocktail competition entry by a Robert “Rosebud” Butt.

Regardless of where and how it was made, the Long Island Iced Tea has become a bar staple, here’s our favorite recipe.

Classic Long Island Iced Tea

Ingredients:

  • 1/2 oz. Whiskey
  • 1/2 oz. Tequila
  • 1/2 oz. Rum
  • 1/2 oz. Gin
  • 1/2 oz. Triple Sec
  • 1/2 oz. Lemon Juice
  • Cola (to Top)
  • Cucumber Ribbon or Lemon Wedge (for Garnish)

Preparation: Combine all ingredients, except for the cola and garnish, in a shaker with ice. Shake until chilled and diluted. Strain into a highball glass and fill with fresh ice, then top with cola and garnish.


There isn’t too much you can do to riff on a Long Island Iced Tea, it’s a hard drink to make into a craft cocktail. That said, here are two bartender recipes worth mixing up for yourself.

Long Island Iced Tea

Adapted by Dan Sabo, Ace Hotel, Los Angeles, from the original 1972 recipe by Robert Butt, Oak Beach Inn, Long Island NY. (Created for the Museum of the American Cocktail’s “Touring the Cocktail.”)

Ingredients:

  • 1/2 oz. Absolut Vodka
  • 1/2 oz. Beefeater Gin
  • 1/2 oz. Olmeca Altos Tequila
  • 1/2 oz. Myers’s Platinum White Rum
  • 1/4 oz. Cointreau
  • 1/4 oz. Lemon Juice
  • 1/4 oz. Lime Juice
  • 1/4 oz. Simple Syrup
  • Float of Coca Cola Mexicana
  • Lemon Wheel, for Garnish

Preparation: Add all ingredients (except Coca Cola) to a mixing tin, add ice and shake. Strain into a highball filled with crushed ice. Float Coca Cola on top. Garnish with a lemon wheel and a straw.

Ingredients:

  • 1/2 part Vodka
  • 1/2 part Gin
  • 1/2 part White Rum
  • 1/2 part White Tequila
  • 1 dash Triple Sec
  • 1 part Sweet Leaf Tea Lemon Iced Tea

Preparation: Fill a cocktail shaker with ice and add all ingredients and shake it up. Pour into a glass.

Ingredients:

  • 3/4 oz. Sandeman Porto Founders Reserve
  • 1 1/2 oz. Straight Rye Whiskey
  • 1/2 oz. Lemon Juice
  • 1/2 tsp. Superfine Sugar
  • 1/2 oz. Fresh Egg White
  • 1 oz. Chilled Sparkling Water
  • 1 segment Fresh Pineapple

Preparation: In a mixing glass, stir sugar and lemon juice together. Add whiskey, port, lemon juice and egg white. Shake extra hard with ice and strain into a chilled small highball glass containing the sparkling water. Garnish with pineapple—perch it on the rim of the glass.

Ingredients:

  • 1 1/4 oz. Hibiscus-infused Elyx Vodka
  • 1 oz. Pimm’s
  • 1/2 oz. Rainwater Madeira
  • 1 1/2 oz. Bitter Lemon Soda
  • 1/2 oz. Grapefruit Juice
  • 1/4 oz. Lemon Juice
  • 1/4 oz. Simple Syrup
  • 1 Strawberry, Cut into Pieces

Preparation: Muddle a strawberry, then build ingredients in shaker. Strain over cobbled ice in a pint glass and garnish with sliced strawberries and lemon wheels.

Ingredients:

  • 1 oz. Tanqueray No. TEN
  • 1 oz. Amontillado Sherry
  • 1/2 oz. Lime Juice
  • 1 tsp. Demerara Syrup
  • Ginger Beer, to top
  • Lime Wheel or Peel, for garnish

Preparation: Place all ingredients in a mixing tin and shake until chilled. Top with 2 ounces ginger beer and strain into collins glass. Rocks and lime to garnish.

Preparation: Shake ingredients together with ice and strain into a coupe glass. Garnish with a lemon swath.

  • 2 dashes Barrel Aged Whiskey Bitters
  • Dehydrated Cinnamon Orange Slice Soaked in 151

Preparation: Add all ingredients into mixing tin with ice and stir. Double strain into rocks glass over ice. Garnish with a dehydrated cinnamon orange slice soaked in 151 and set on fire.

Acclaimed restaurateur Stephen Starr is set to open LMNO—a new Baja Mexican concept located in Philadelphia’s Fishtown neighborhood.

The LMNO cocktail menu puts extensive agave and craft spirit offerings in the spotlight. Built with customization in mind by Director of Beverage Operations Mark Murphy, bright and bold cocktails can be crafted with any spirit. The Our Daily Veg cocktail is prepared with a fresh blend of cucumber, green bell pepper, poblano, tomatillo, and cactus juices, along with a choice of spirit. Tequila, mezcal, and even gin fit right in with this veggie-centric refresher. The LMNO Margarita, a menu staple, is made simple, fresh, and bright with 100% agave tequila, fresh squeezed lime juice, and a lime-infused sea salt. The selections of Micheladas follow suit, with styles from traditional to over-the-top, to be paired with any draft, bottled, and canned beer.

Nodding to Fishtown’s artistic roots, the restaurant’s interior reflects a DIY aesthetic that merges lo-fi sensibilities with a vibrant, freestyle approach to color and curation.

Chilled spoke with Director of Beverage Operations, Mark Murphey to find out more.

Tell us a bit about your background in the industry.

I’ve been in the industry ever since I was old enough to work (my first job was selling pretzels). My jobs in restaurants have covered the full spectrum: busser, host, captain, dishwasher, line cook, baker, and of course, bartender. I’ve worked in more bars than I can remember, from full dives to high volume clubs, to nerdy cocktail bars. Over two decades in the industry, combined with a degree in education, allows me to develop spaces and programs with a big emphasis on building great teams.

Talk to us about LMINO- what kind of experience can guests expect when visiting?

First and foremost, the bartender team at LMNO is crushing it. Yes, they’re making high quality cocktails, but they’re doing it while maintaining a friendly, fun, and easy-going vibe. Guests can expect tasty drinks, an unexpected and awesome food menu, and an amazing staff to lead the way.

Tell us about the DIY concept.

Ever since I built the bar program for El Vez in New York City, my affinity for tequila and other agave spirits has taken the forefront. The first step for developing the menu here at LMNO was to build our extensive library of tequila, agave, and other craft spirits. After that, I decided I didn’t want to create a menu that was limited by the spirits we used. So, why not build the flavors and balance, but give the guest the opportunity to explore all the fun things we have on our shelves? Same style goes for our Micheladas, choose your style, and explore our beer list.

Talk to us about the beverage program.

The DIY cocktails are certainly the focus, but we of course have a house margarita which is super bright, balanced, and crushable. In addition, there is a frozen spiced mango margarita and, my personal favorite, a frozen red sangria. The cocktails, spirits, and beers are all rounded out by our wine offerings. The ‘by the glass’ and bottle options have a heavy focus on natural and Baja wines, providing some incredible wines you can’t find anywhere else in the city.

Give us 4-5 tips for opening a bar/running a successful bar.

There are as many factors for success as there are versions of success. Here are my four priorities (in no particular order).

  1. Organization – This applies to everything. First is the actual space: the layout of the bar, equipment, storage, bottles, glassware, coolers, supplies, syrups, juices, etc., is vital to how quickly and effectively your team can put out drinks and interact with the guests. Second is the product: knowing what you have, how you move through it, and all the costs associated it.
  2. Knowledgeable staff – It’s not just training a team to be as informed as possible about the things they serve, but to teach them how to talk and interact with guests in a way that makes ‘the unknown’ fun, easy, and accessible. There can be a fine line between informative and pretentious, and I always want to be on the side of being inclusive.
  3. Don’t take yourself too seriously – I like to say, “I take what I do very seriously, but not myself.” Bars are fun. They’re places that are solely built around a shared human experience and connection. This can be achieved with a beer and a shot, a glass of wine, a terrible cocktail or the best you’ve ever had. People first, always.
  4. Accessibility – this goes for every aspect: guests, staff, management, the menu, the space. If I ever make a bar that is just for myself, it will be in my home. Every time I create a menu, one of my primary goals is to be sure I (personally) don’t really want to order every drink on the menu. I want spirits, profiles, and ingredients to be broadly appealing. Same goes for the space. My favorite bars rarely have much to do with what is being served, but rather it is about being in a space with as many different people as there are bottles on the shelves

  • 2 oz. Espanita Tequila Añejo
  • 3 ripe Figs
  • 1/2 oz. Orange Liqueur
  • 1 oz. freshly pressed Lime juice
  • 1 bar spoon Grenadine
  • 1 bar spoon Honey (optional)

Preparation: Fill the glass with fresh ice. In a cocktail shaker, muddle three figs and add the rest of the ingredients. Stir until honey is well dissolved. Add ice and shake well. Strain through the fine mesh strainer into the prepared glass and garnish the drink with a fig wedge.

  • 2 oz. Broken Shed Vodka
  • 3/4 oz. Cranberry Juice
  • 1/2 oz. Cinnamon-Clove Simple Syrup*
  • 1/4 oz. orange curaçao
  • 1 dash orange bitters
  • Optional: blood orange seltzer
  • Cranberries, rosemary, cinnamon stick and star anise for garnish

Preparations: Combine all ingredients except soda in a shaker over ice. Shake to chill. Strain into a rocks glass over a large ice cube and top with seltzer. OR double-strain into a chilled martini glass. Garnish as you see fit. For a more festive feel, freeze cranberries into your ice cubes the day before making the cocktail.

*Cinnamon-Clove Simple Syrup

To make cinnamon-clove simple syrup, dissolve 1 cup sugar in 1 cup hot water. Add 2 cinnamon sticks and 10 whole cloves. Let steep for 30 minutes. Strain out solids and store in a glass bottle in the refrigerator.

Preparation: Heat the milk, caramel syrup, and amaretto.  Pour into a glass suitable for serving hot drinks.  Add Mozart Chocolate Coffee and stir well.  Top with whipped cream and decorate with ground coffee beans.

  • 1 1/2 oz. El Dorado 8 Year
  • 3/4 oz. Rapa Giovanni Cherry
  • 1/2 oz. Mr Black Coffee Liquor

  • 1/4 oz. Rocket Fuel (Rocket Fuel is a cold brew concentrate from Sweetleaf in Greenpoint)
  • dash Rum Fire
  • dash Cardamom extract

Garnish: Shaved nutmeg

Preparation: Add all ingredients to a shaker over ice. Shake until cold, serve up.

  • 1 part Koskenkorva Vodka

  • 1 1/2 oz. Cognac
  • 1/2 oz. Vanilla Liqueur
  • 3 oz. Heated Black Chai Tea
  • 1/2 oz. Cardamom Syrup
  • 1/2 oz. Almond Milk
  • 2 dashes Cocoa Bitters

Preparation: Make chai and stir in the syrup bitters and almond milk, ensuring the liquid is piping hot. In a heat safe glass, combine the tea with the spirit and stir to combine.

  • 2 cups Finlandia Vodka
  • 1 1/2 cups pineapple juice
  • 1 cup lemon juice
  • 1/2 cup honey syrup

  • 2 oz. Deadwood Rye
  • 1 oz. Brennivin Rugbrau Aquavit or Norden Reserve Aquavit
  • 1/4 oz. Ginger Syrup
  • 1/4 oz. Blackstrap Syrup (2:1 ratio molasses: water) or Caffo Licorice
  • 3 dashes Angostura Bitters
  • Garnish: Candied ginger & orange twist flag

Preparation: Add ingredients to a shaker tin and shake. Pour over ice into a rocks glass, and top with candied ginger and an orange twist flag to garnish.

Osteria Stella, the sister restaurant and housed parallel to Brother Wolf in Downtown Knoxville, TN are both concepts conjured up by duo Aaron Thompson and Jessica “Rabbit” King.

A love letter to their daughter, Osteria Stella offers an authentic Italian culinary experience with the help of Chef Consultant Amalia Brusati, a Milan native, and Chef de Cuisine Salvador Sanchez. Their focus is simplicity in their ingredients and dishes, and the availability to pair these with an extensive selection of native Italian wines spanning across all 20 wine regions. The space was inspired by their baby daughter, Stella, and it is the couple’s love letter to her.

In direct contrast to Brother Wolf, Osteria Stella is described by King as being “dark, cool, moody, and very comforting,” and a heavy hammered leather curtain separates the two spaces. “The accents are antique gaudy chandeliers that line the ceiling, and it’s all about contrast. Big, comfy, velvet and leather booths with cherrywood tables inhabit the space, and as you look towards the back of the restaurant, you see three very feminine paintings in what could be considered a super masculine space.” Guests can expect to feel relaxed, warm and snuggly. “They can scooch back and forget about the world outside while enjoying a great meal and glass of wine,” exclaims King.

The Brother Wolf menu is available here, but fine dining Italian and wine is the focus. Thompson, who curated the wine list, favors family-owned wineries that produce less than 100,000 cases, and in most instances, under 20,000, with female-led operations spotlighted, where possible. The wine list represents a definitive selection of producers representing each of Italy’s regions, with bottles ranging from $35 to $980 and by-the-glass from $10 to $45, including premium selections via Coravin. Some of the regions include Friuli-Venezia Giulia, Lazio, Basilicata, Lombardia, Marche, Sicilia, and Abruzzo.
