NYC Kokomo Winter Cocktails

NYC’s Caribbean restaurant Kokomo highlights flavors that bring a tasty and refreshing experience to every cocktail. Depending on the changing climate, Kokomo alters its menu along with the changing seasons, of course, but with a twist on the tropics.  

In the winter months, when most people seek warming and comforting foods, the Kokomo experience delivers, while offering the Island vibe.  

The winter menu highlights Caribbean stews, rum-based Hot Toddies, and its famous In Love with the Koko spiked hot chocolate. According to bartender Rael Petit, “Our bar program highlights Caribbean flavors featuring cocktails like frozen Rum Punch, Good Guice specialty cocktails, and Margaritas paired with curated small plates. My favorite food and beverage pairing is our Red Peppa Jerk Chicken with the Blouse & Skirt cocktail. The spice of the chicken and the refreshing flavors of tequila and agave in the Blouse & Skirt complement each other well.” 

Rael invites people to step out of their comfort zones and try new flavors this season. “A lot of times we stick to what we know,” he says. “But I believe people are more open to trying new things and new flavors these days. We’re looking for any outlet to explore … and tag. Food and beverage are it!

 


 

We Limin’

We Limin Winter Cocktails'

Ingredients: 

  • 1 1/2 oz. Grey Goose Vodka 
  • 1/2 oz. St-Germain 
  • 1/2 oz. simple syrup 
  • 3/4 oz. lime juice 
  • 3/4 oz. guava juice 

Preparation: Shake all ingredients with ice pour ono the rocks with fresh ice. Top the drink with three turns of cracked pepper. Garnish with a fresh mint sprig.

The winter menu includes warming dishes such as curry mussels, griot pork chops, and chickpea hummus with tamarind and scotch bonnet sauce. Their lineup of cocktails features I’m in love with the Koko—a rum-laced hot chocolate cocktail and new items such as a delectable Plantini (a plantain Martini) and theSpice Island (Courvoisier, Guava, and lemon).

Ti’ Punch – The Caribbean Tradition That’s Missing From Your Bar

Traditional Caribbean Ti’Punch is a cocktail that leaves you feeling like you’re on a white sandy beach, gazing at crystal blue waters. You may be thinking: I could really use a mai tai right now. Or, perhaps a mojito. But, there’s a tropical drink that’s been missing from your life. Two words: Ti’ Punch. 

A few years ago, I took a whimsical trip to Guadaloupe, an archipelago in the French West Indies, just North of Dominica and Martinique. I had no idea what to expect, really. To be a fish out of water was exciting. I barely spoke French. All I knew was that there were gorgeous Caribbean blue waters, volcanic sand beaches, and a fascinating Creole culture to explore. Did I mention my Norwegian Airways ticket was only 80 bucks? 

Maybe a day or two after landing in Pointe-à-Pitre, Guadeloupe’s capital, I quickly learned that Guadeloupeans had a high standard for hospitality, a standard that involves rhum.  No matter what part of Guadaloupe you ventured to, you would probably find a rhum beverage in front of you, whether you ordered it or not. 

The most popular of those beverages is Ti’ Punch, a delicious cocktail made of 3 simple ingredients: rhum agricole, cane sugar, and lime. You can find this cocktail all over the French West Indies. In fact, Ti’ Punch is the national cocktail of Martinique. 

Let’s get one thing straight – Ti’ Punch has nothing to do with teaas our English-speaking brains might think. The Ti is Creole French for petit, or small. So, Ti’ Punch translates to ‘small rhum punch.’ Now, Ti’ Punch is nothing like the ultra-sweet rum punch you may be thinking of, not anything like it at all… 

 

Ti’ Punch isn’t just a cocktail – it is a tradition 

Ti’ Punch is an entire experience. Presenting a bottle of local rhum agricole, with a side of cane sugar and fresh cut limes is the way Guadeloupeans warmly greet guests. At the various restaurants, homes, and BnBs I visited, more often than not I was presented with this trinity of ingredients. Not in a glass, but laid out separately, waiting for you to play bartender. 

It was such a joyful experience to muddle together the cane sugar and lime, and mix it all with the rhum. It made you feel right at home. And, that’s the exact purpose of Ti’ Punch. 

Of course, you can find Ti’ Punch served as a cocktail as well. It is almost always served neat to avoid dilluting the pure flavors of the rhum. But, when the island sun is too hot to handle, don’t be surprised if your Ti’ Punch is served with ice. 

Experiencing Ti’ Punch is a pathway to understanding the diversity of rhum in Guadeloupe, as well as the French West Indies. The type of rhum added to Ti’ Punch gives the drink its very own identity.  

In Guadeloupe and Martinique, rhum agricole is the go-to spirit in Ti’ Punch. Unlike most rums, which are made from molasses, rhum agricole comes from freshly-pressed sugar cane juice, a process very unique to the French West Indies. This makes rhum agricole pure, dry, and ridiculously easy to drink. I’m telling you, I drank rhum agricole quite often on my trip and my hangovers were minimal. Every morning, I felt refreshed while sipping delicious Guadeloupean coffee in a hammock, very prepared in case another Ti’ Punch came my way (and it did…) 

 

The Rhums of Guadeloupe 

Guadeloupe is also home to delicious rhum agricole that often don’t get as much attention. I will tell you – they deserve all the attention. Guadeloupe’s islands have a dazzling and diversified terroir, bestowing a unique character to every rhum agricole. 

You can’t talk about Guadeloupean rhum or sugar cane production without mentioning Maria-Galante. This little pancake-shaped island is said to be the birthplace of Ti’ Punch. The drink was created to celebrate the French abolition of slavery on April 27th, 1848.  

Maria Galante is home to 3 different distilleries within just 61 square miles. That’s the most distilleries per square mile, anywhere. Right off the ferry, you can visit distilleries with historic rhum making traditions. The oldest distillery is Père Labat, producing rhum agricole since 1863. There is also Bielle as well as Habitation Bellevue, the first eco-friendly distillery in all of Guadeloupe. 

Back on ‘mainland,’ which is made up of the two large islands, Grande Terre and Basse Terre, you will find the majority of rhum production. Damoiseau is the most common Guadeloupean rhum agricole distillery. I greeted its blue and red label many afternoons and evenings on my trip. This distillery is found in Grande Terre, an island graced with breathtaking limestone cliffs. The island’s elevation and limestone-rich sandy soil allow sugar cane to reach it’s ripest potential. This gives Damoiseau’s young and aged rhum a tropical fruit character that adds a little more boldness to your Ti’ Punch.  

On the other side of Guadaloupe lays Basse Terre and its popular distillery Rhum Bologne. There, sugar cane grows not far from the sea, at the edges of La Grande Soufriere, Guadeloupe’s active volcano. Many believe that the volcanic soil and sea are behind Rhum Bologne’s freshness and complex character of citrus, spice, and earth. All these flavors make this rhum agricole very easy to sip on. 

No matter what rhum agricole you choose, Ti’ Punch won’t let you down. It makes for the perfect greeting, ice breaker, or even a nightcap. It is a true symbol of Guadaloupe and Martinique’s hospitality, one that can lend a smile and a little zest to anyone’s life. So, when in doubt, make yourself a Ti’ Punch. In seconds, you’ll be somewhere laying beneath the palms, thousands of miles away. 

 

Recipe for Traditional Caribbean Ti’ Punch 

 

Makes 1 Traditional Caribbean Ti’ Punch 

Ingredients:  

  • 2 oz of rhum agricole 
  • 3 tablespoons of cane sugar or cane syrup 
  • 1 thick lime wedge

Method: 

  • Squeeze lime juice into glass and add in crushed lime wedge. 
  • Add in cane syrup or cane sugar. Muddle it with the lime 
  • Pour in rhum and mix together.* 
  • Serve with lime wedge. 

Now you can add ice if desired.

Meet our newest Chilled 100 Bartender Grant Mohwinkel. Currently based in Minnesota, Grant Mohwinkel tends bar at speakeasy Volstead’s Emporium hidden in uptown Minneapolis. The secret bar features an award-winning classic cocktail menu served in an old-world setting. For Chilled 100 Bartender Grant, his favorite classic to create and his overall go-to cocktail is the Aviation. 

 Grant believes that the trends toward bars to becoming more sustainable and ecofriendly are important. He is a self-claimed morning person, which sets him apart from most bartenders given the typical late hours. He also abstains from consuming alcohol and hasn’t had a drink in almost six years.  

 Grant says he could not live without bitters and sherry. Both ingredients he uses often in his creations, like the Coming Around the Bend cocktail which mixes both with rye, Licor 43, and an absinthe rinse. 

 And if Grant could go back and give himself one piece of advice as a young bartender just starting out, what would he say? “It’s ok if you don’t know something,” he shares. “Put your ego aside and learn something!!”

Miami Vice Milk Punch

Clarified Milk Punch is a method of clarifying and preserving punch by curdling it with milk. According to cocktail lore, the Milk Punch is a drink that was innovated, pioneered, and popularized by women. Agnes Behn, one of the first Englishwomen to earn a living for her writing, historically mentions the Milk Punch in one of her plays. And according to David Wondrich in Punch, the earliest known Milk Punch recipe dates to 1711, attributed to housewife Mary Rockett.  

The base cocktail recipe includes citrus juice or acidic ingredient, milk is added, curdled, strained. The process clarifies the drink—removing color and cloudiness—and preserves the cocktail for months or even years if kept cool.  

World renowned bar director Adam Fournier for Fellow in Los Angeles creates a menu that is both culinarily and narratively driven. His Miami Vice Milk Punch is one of the most popular and uniquely interesting on the menu.  

“I love making Milk Punches because it’s a style of drink that allows for a lot of complex flavors and helps expedite service—it’s an easy to serve format—working both for entertaining at dinner parties and in service at a high-volume bar. It’s the ultimate conversation starter and an experience as much as a cocktail.” 


Step 1 

Start Small

Make a few test runs of your cocktail, then break and clarify them on a small scale before you commit to a larger batch. It will allow you to dial in your recipe and perform the proper research and development. The Milk Punch process can be applied not only to traditional punch recipes but to most cocktails.  

 

Step 2 

Get Funky 

The funkier the better. A good Milk Punch almost always tastes funky as hell before you clarify it. Remember the process will add texture, sweetness, and strip away some of the rough edges.  Clarifying ingredients first without alcohol might give the cocktail cleaner results and will keep some wanted flavors (especially when using brown aged spirits). 

 

Step 3 

Experiment 

Play around. Try different flavor combos, different techniques, and even different milks. For instance, the Miami Vice uses coconut milk instead of dairy, which lends different flavors and textures. Decisions are based on whether you want your punch clear or with certain flavors from the milk or spirits integrated.  


Tip 

The tricky part is straining the final mixture through a filter as to not disturb the nest of curd. Filter through a single layer, durable, tightly knit material like a cheesecloth or Superbag.  

Pro Tip 

Never add milk to your batch. Once you have your cocktail recipe dialed in, be sure that you are pouring the batch into the milk and not the milk into the batch, so that it does not instantly curdle.

Believe it or not, there are a few distilleries on the Scottish Island of Islay that do not produce peated and smoky whiskies. Bruichladdich The Classic Laddie made using 100 percent Scottish barley, is an un-peated single malt whisky that carries flavors of butterscotch, wintry spices, and buttery caramel.   • 1 oz. BASTILLE 1789 whisky
  • 1 tsp. honey
  • 1 slice of lemon

Preparation: Brew a cup of your favorite tea and add ingredients.

Ingredients:

  • 1 3/4 oz. Old Pulteney 12 Year Old Highland Single Malt Whisky
  • 3/4 oz. Salted Hot Toddy Syrup*
  • 1/2 oz. lemon juice
  • 3 1/2 oz. black breakfast tea

Preparation: Add the hot tea to a mug with Old Pulteney, the salted hot toddy syrup and lemon juice. Stir and enjoy.

*Salted Hot Toddy Syrup

Ingredients:

  • 3 1/2 oz. honey
  • 2 – 3 slices ginger
  • 1 lemon peel
  • tbsp. peppercorns

Preparation: To make the syrup, add the honey to a pot and heat it up. Watch for it to bubble and begin to go dark in color as the sugars caramelize. While the honey is heating up, make a cup of black tea. When the honey is on the dark side, add the tea along with the ginger slices, lemon peel and a tbsp of peppercorns. Simmer for about 20 minutes to allow the flavors to marry, then remove from the heat and strain. While cooling, add a pinch of salt to taste.
