Mexico City, Hanky Panky’s Pop-Up Tour

By | Mixology News

The times we live in have required those in the bar and hospitality industry to be more flexible and innovative than ever.

Creativity has been the foundation of staying afloat and overcoming the odds with seemingly everything stacked against them. Hanky Panky, a speakeasy “somewhere in Mexico City,” debuted on the list of The World’s 50 Best Bars 2021 at No.12 to win the Disaronno Highest New Entry Award, and with good reason.

Walter Meyenberg, the owner of the successful bar, created a “Takeover Tour” amidst the pandemic in the spirit of collaboration and unity. With more relaxed restrictions regarding inbound travel to Mexico in 2021, Meyenberg decided to bring fellow bartenders and bar operators to them to show their support while creating a unique platform to also showcase their culture; a win-win.

“At Hanky Panky we always thought the pandemic shouldn’t be stopping this amazing industry from thriving, and—in a very safe way—we wanted to still keep in touch with our friends in the whole world as much as possible. It was a nice way of showing support to those friends whose bars couldn’t reopen for the whole year. We tried to bring them to our city and gave them a chance to get back behind the stick here. We also then returned to their bars right before The World’s 50 Best Bars gala (in December 2021) with the amazing possibility of touring Europe, seeing some incredible (old and new) cocktails bars and continuing this crazy cultural exchange.”

Pop-ups and takeovers are becoming increasingly popular in the industry, and Meyenberg is optimistic about them. “I think having a well-thought-out pop-up and takeover is a great opportunity of showing the world what you’re doing, the concept, menu and people behind a cocktail bar. It’s a unique way for consumers to experience the bar they might know very well but in a different way, and travel through their favorite spot in town.”

Gina Barbachano, the bar manager of Hanky Panky, explained that for the in-house takeovers, the visiting bars brought their own cocktails. Taking into consideration the style of Hanky Panky, those cocktails were then paired with four dishes showcasing the speakeasy’s roots. When it was their turn to tour, Hanky Panky created four craft cocktails that featured the richness of Mexican ingredients.

“We used ancient ingredients but with new techniques and in drinks that were created for the occasion and for the bar visited. One example is a delicious slushy-cocktail we created, made with Mexican Chocolate, that was prepared with a Molinillo, the typical Mexican wooden spoon used to melt chocolate.”

Unity and hospitality are at the forefront of Hanky Panky’s mission. “We want to keep the spotlight on an industry that has suffered recently but is still bubbly and very much alive! We do love our job so much, and so do our colleagues abroad, and what we wanted to achieve was to try and be together once again, with great flavors, music, drinks, dance, like we used to!”

This year looks to be a continuation of the team’s showcasing, with some partners including the famous New York’s Attaboy, the Artesian (London), Barro Negro (Athens), Drink Kong (Roma), among others.

Kicking off on January 19th, Hanky Panky presented their first pop up of the year hosting New York’s Attaboy, the legendary bar headed up by Sam Ross, Michael Mcllroy and Haley Traub, which is known for classic drinks and guiding guests’ experiences with no menu. The team created a special list with four different cocktails brilliantly paired with small dishes.

Following the Mexican bar hosted the Artesian, from the Langham London welcoming head bartender Giulia Cuccurullo. Throughout the rest of the year, each month Hanky Panky will be collaborating with a host of exciting partners, including Tres Monos from Buenos Aires, Drink Kong from Rome, and Barro Negro from Athens.

By | Mixology News

February 27 is National Cigar Day, a perfect moment to slow down, sit back and enjoy the taste and aroma of tobacco while uncovering one of the world’s untold stories: the pairing of cigar and rum.

Cigars, like rum, are a unique combination of taste, aroma, and calming effects. So why not pairing both for an elevated experience?

This unique recipe made with Ron del Barrito, the world’s finest sipping rum, stems from La Central, a new restaurant located right in the heart of the Caribbean. It’s the best way to make National Cigar Day a sacred ritual.

Rum and Tobacco

Created @ Ft. La Central

Ingredients:

  • 1 1/2 oz. Ron del Barrilito Three Stars
  • 1/4 oz. tobacco syrup
  • Dashes of Angostura bitters

Chillin’ With Tommy Dewey

By | Mixology News

Actor, writer, and producer Tommy Dewey is starring in the upcoming FOX comedy series Pivoting, opposite Eliza Coupe, Ginnifer Goodwin, and Maggie Q.

Set in Long Island, New York, three women suffer the loss of a dear friend. The harsh reality of life’s brevity impacted them all deeply, altering the way they go about living it. Their newfound path consists of a series of impulsive, ill-advised, and self-indulgent decisions.  Tommy shines as Henry, the male lead opposite Coupe is weathering the storm while his wife goes on her journey of self-discovery.

Tommy also currently lends his voice to the Paramount+Nickelodeon series Rugrats starring as Stu Pickles. The series debuted in May 2021 and dives even deeper into the secret lives of babies and their unsuspecting parents, paying homage to the characters that audiences have loved for over 30 years with fresh and original stories.

Additional credits include his starring role as Alex Cole on Hulu’s Golden Globe-nominated series Casual. Created by Zander Lehmann and executive produced by Jason Reitman, Casual emerged as a critical darling with media raving over Tommy’s performance: “Dewey is an exceptional casting choice because he’s got Lehmann’s smart-dude patois down pat, hitting all the notes of sarcasm, irony, and smug charm that cement the funny-lothario trope, while also nailing the fatigue of it all.” (The Hollywood Reporter)

While working on-screen keeps Tommy busy, he is also a writer and producer (Casual, Sons of Tucson) and recently served as co-creator, executive producer, and star of The CW Seed’s critically acclaimed Now We’re Talking (WGA and Banff nominations).

Chilled had the opportunity to chat with him about his favorite spots to eat and drink, funny bartending history, career future, and more.

Tell us about the projects you are working on.

I’m doing guest run on HBO’s Perry Mason, and making the rounds with two new writing projects. We’re also currently making more Rugrats!

With your busy schedule, what do you like to do with your downtime?

I like to run, which I realize most people find boring and/or insane. I’ve knocked out a few major marathons. I also just installed a wood-fired pizza oven. Between that and my Big Green Egg, I’m pretty busy on the outdoor cooking front. Add that to skiing, reading, home improvement, I have a lot of options for blowing off steam.

When you go out to eat, where do you like to dine?

I’ve got some go-to favorites in Los Angeles – The Tasting Kitchen, Tsubaki and Barbrix. It’s an exciting time to be a food lover in L.A. The restaurant scene is booming. I’ve recently had fantastic meals at Kato and Hayato. I don’t mind a long, multi-course affair.

What types of dishes do you typically order?

I like variety, so I do my best to sample the menu. I love a raw appetizer like sushi, beef carpaccio, etc. With entrees, the weirder the better. I want to eat something I couldn’t possibly make myself.

Any favorite bars?

There are so many great bars in Los Angeles, I wouldn’t know where to start, but I can tell you one that gets a whole lot of my business: Hyperion Public. It’s a sports bar with good food and drinks.

What drinks do you order when out?

If I start with a cocktail, I’ll typically go with one of three favorites. A Gin Martini with a twist, a Vieux Carré or the bartender’s favorite, a smoky mescal offering.

Do you prepare drinks at home?

It’s mostly wine at home, but on special occasions I will make cocktails. If my brothers-in-law is in town, he takes over. He’s a wiz behind the bar.

Tell us about your home bar. What is it stocked with?

I have more whiskey than I’ll ever be able to drink, including some nice Japanese whiskeys. There’s also a decent selection of gins and tequilas. This also feels like a good time to mention that I’ve got beer on tap in my outdoor kitchen.

Have you ever been a bartender?

For ONE night in New York City in 2002. I screwed up so many things so many times, I was never asked back.

If you could share a drink with anyone, who would it be?

Impossible question! But it’d probably be a writer. The late, great screenwriter William Goldman maybe? He seems to have seen it all, and I have questions.

How to Make Any Color Cocktail

By | Mixology News

Have you ever looked across a bar and noticed someone sipping on a fun, bright-colored cocktail?

Have you ever pondered how the bartender or mixologist concocted such a beautiful beverage? Well, there is a plethora of products used to create cocktails of any color imaginable! Here, we will highlight some of the best products, ingredients, and cocktail recipes out there for the next time you crave a vibrantly colored libation to “raise your spirits!”

Red

Perhaps one of the bolder colors seen, a red-colored cocktail can be achieved by adding the ever-popular cocktail ingredients like Grenadine or cranberry juice. There has also been an uptick in the use of liqueurs, such as Campari, as well as simpler options such as cherry or raspberry liqueurs. Plus, fruits like strawberries and veggies like beets will give cocktails a beautiful red hue. There are so many possibilities; color us red! And just like that, Cosmos are king.

Cosmopolitan

Ingredients:

  • 1 1/2 oz. Citron Vodka
  • 1/2 oz. Triple Sec
  • 1 oz. Cranberry Juice
  • 1/2 oz. Fresh Lime Juice

Preparation:Add the ingredients into a cocktail shaker filled with ice. Shake and strain into a Martini glass. Garnish with either a lemon slice or lime wedge.

Pink

Pretty in pink. What a charming color for a drink. Back in the days of Gatsby, pink was a power color, hence the popular Clover Club. We like to use Pamplemousse, crème de noyaux liqueur, and naturally-flavored pink gin to create tickled pink drinks along with raspberry, pink grapefruit, dragon fruit, and hibiscus.

 Yu-B-Pink

Ingredients:

  • 2 oz.  Dartigalongue Un-Oaked Blanche Armagnac
  • 2 oz. Jules Theuriet Pamplemousse Liqueur
  • 2 oz. Yu Gin

Preparation:Pour Dartigalongue Un-Oaked Blanche Armagnac, Jules Theuriet Pamplemousse Liqueur & Yu Gin into a shaker with ice. Shake 30 seconds until chilled. Strain into coupe glass. Garnish with grapefruit or yuzu fruit wheel.

Orange

Aperol, or Grand Marnier are our choices to achieve this color. It is also possible that you don’t have to look further than your own refrigerator for something to give your cocktail a citrusy-colored boost, especially in the summer, when fruits, such as oranges and mangos, are in-season. Don’t forget to try carrot and pumpkin purees in your recipes and turmeric or saffron for a naturally orange color as well.

Turmeric Whiskey Sour

Ingredients:

  • 2 oz. Virgil Kaine Robber Baron Rye Whiskey
  • 2 oz. Turmeric Sour Mix*

Preparation:Add all ingredients into a shaker with ice and shake for 30 seconds. Strain into your glass of choice on the rocks.

*Turmeric Sour Mix

Ingredients:

  • 1 Lime
  • 1 Lemon
  • 1 inch Piece of Turmeric
  • 1/4 cup Pineapple
  • 5 splashes of Acid Phosphate
  • 3/4 oz. Arabic Gum Syrup

Preparation:Blend all ingredients until smooth and strain through mesh.

Yellow

You will sometimes wind up with a cocktail that is as sweet as it is bright here, as Limoncello is a go-to. It boasts that crave-worthy neon-yellow tint. St-Germain, Yellow Chartreuse, and Apricot Liqueur provide similar effects regarding color while contributing floral and herbal flavor profiles. Passion fruit, pear, star fruit, squash, corn, and chamomile are ingredients that will also provide hints of sunshine in your cocktails.

Apricot Spritz

Ingredients:

  • 1 oz. The Bitter Truth Apricot Liqueur
  • 3 oz. Sparkling Wine

Preparation: Fill wine glass with ice, add apricot liqueur and sparkling wine.

Green

Liqueurs such as the sugary and bright Midori and Apple Pucker come to mind here (who can resist an Apple Martini?) Crème de Menthe is another option when craving a minty green beverage or for cocktails with kick, Ancho Reyes Verde or Absinthe. When wanting a more refreshing option, try adding cucumber, celery, or lime! Also, try kiwi, honeydew melon, avocado, basil, Matcha, or cilantro

Dirty Verde

At Michelin Bib Gourmand-awarded Kettner Exchange, Bar Director Claire Rose Sexton combines verdant fresh-pressed juices with blanco tequila for a boozy take on your morning “green juice.”

Ingredients:

  • 1 oz. blanco tequila
  • 3/4 oz. fresh pressed lime juice
  • 1/2 oz. simple syrup
  • 2 oz. fresh cucumber juice
  • 1 oz. Ancho Reyes Verde Poblano Liqueur
  • Paprika oil (for garnish)

Preparation:Combine ingredients, shake with ice, and serve garnished with paprika oil.

Blue

Blue Curacao is certainly the winner when it comes to that bright blue we love to see, especially during warmer months. Hpnotiq is another option for a fruity, tropical blue drink. For a more natural approach, blueberries or butterfly pea flower are options!

Pistachio Martini

Courtesy of Ocean Casino Resort

Ingredients:

  • 1 oz. Disaronno Amaretto
  • 1 oz. Bailys Irish Cream
  • splash of Blue Curacao
  • Light Chocolate Rim with crushed pistachios

Preparation:Add 1 oz. of Disaronno Amaretto, 1 oz. Baileys Irish Cream and a splash of Blue Curacao to mixing glass. Add ice to mixing glass and shake vigorously. Strain straight up into Martini glass or Coupe that has been rimmed with Light Chocolate and Crushed Pistachios.

Purple

Perhaps the most intriguing, purple is a color that is, believe it or not, found in several products. Empress 1908 Gin comes to mind, as well as some brands of Crème de Violette. Don’t count out Chambord, Lavender Liqueur, sloe gin, red wine, plums, or hibiscus

Sleep No More

Ingredients:

  • 1.25 oz. Butterfly Pea Flower-Infused Vodka
  • 1 oz. Dolin Blanc Vermouth
  • .5 oz. St-Germain Elderflower Liqueur
  • .75 oz. Fresh Lime Juice
  • .5 oz. Simple Syrup
  • splash of Rosé Cider or Dry Sparkling Rosé
  • sprig of Fresh Lavender (for Garnish)

Preparation: To infuse the vodka, add 2–4 grams of butterfly pea flowers to 750 ml of vodka. Store at room temperature for 24–72 hours prior to using. The longer you let it sit, the more color is extracted from the flowers. To make the cocktail, combine the infused vodka, vermouth, St-Germain, lime juice, and simple syrup in a cocktail shaker with ice. Shake and strain into a Collins glass over fresh ice. Top with rosé cider or dry sparkling rosé. Garnish with a lavender sprig.

Black

Liqueurs like Black Balsam, Mr. Black Coffee Liqueur, Kahlua will give cocktails a shade of black as will using cold brew coffee or balsamic vinegar. If you want to go totally dark, try adding activated charcoal to your recipe.

Expre Espresso Martini

Ingredients:

  • 2 parts Tosolini Expre Coffee Espresso Liqueur
  • 1 part Koskenkorva Vodka

Preparation: Put all ingredients into a shaker, shake well. Pour into martini glass and garnish with chocolate drizzle. Top with milk foam.

Magically Changing Colors

A fun way to impress guests is with color changing cocktails using butterfly pea flowers. The deep blue flower is typically used in herbal tea and is fun in cocktails because it reacts with certain PH levels like in citrus juices to produce color changing properties. Bartenders can infuse a spirit like gin, rum, or tequila with the dried flowers, or can infuse them in ice cubes that will transform a drink while the ice melts or can create a tincture and use a few drops in the drink.

Virgin Mood Ring

Ingredients

  • 6 oz. house made vanilla bean lemonade*
  • Splash of soda water
  • 1 tsp. butterfly pea flower syrup**
  • Ice

Preparation: Pour Vanilla Bean Lemonade over ice in a Tom Collins glass. Top with a splash of Soda Water. Drizzle Butterfly pea flower syrup over top. Stir with a straw and enjoy.

*Vanilla bean lemonade

(makes about 10 servings)

Ingredients:

  • 2 tsp Mexican vanilla bean paste
  • 1 quart fresh lemon juice
  • 1 quart sugar

Preparation: Mix all three ingredients together with a spoon.

**Butterfly pea flower syrup

(makes about 25 servings)

Ingredients:

  • 1 1/2 tsp butterfly pea flower powder
  • 1/2 cup water

Preparation: Mix powder and water together with a spoon until powder fully dissolves.

Chillin’ With Isha Blaaker

By | Mixology News

The multitalented Isha Blaaker was born in South America in Paramaribo, Suriname, and raised by a single mother in Rotterdam, The Netherlands.

Isha proudly speaks Dutch, English, French, German, and Surinamese Creole.  Before turning to acting and modeling, Isha received both his bachelor’s degree in Business Administration, and his master’s degree in Consultancy at the Erasmus University Rotterdam.

While he was attending university, Isha signed with the international fashion modeling agency, MAX Models. Shortly afterward, he was recruited by Soul Artist Management to come work in the mecca of the fashion industry, New York City.  Throughout his modeling career, Isha has starred in major international luxury brand campaigns for the likes of Hugo Boss, L’Oreal, Tommy Hilfiger, to name a few.

He also has an honorable martial arts background. Until he was 23 years old, Blaaker competed in full-contact karate, having earned the title of National Champion a few times before going semi-pro as a kickboxer.

This February, Isha is set to star in his debut leading role in the upcoming 12th film in Tyler Perry’s iconic Madea franchise, A Madea Homecoming for Netflix.  The Madea films have become widely recognized as a cultural phenomenon, having grossed over $1 billion at the box office, and will now debut the newest installment on Netflix for the first time. This will allow over 214 million subscribers to simultaneously watch and enjoy the film around the world.  A Madea Homecoming continues to follow the journey of Perry’s infamous femme senior character, Madea.  As she prepares to welcome her family who are coming to celebrate her great-grandson’s graduation from college, some hidden secrets threaten to destroy the gathering.  The film is slated for release on Netflix on February 25, 2022.

Chilled had the chance to catch up with Isha to learn more about his bartending past, future projects, and who he’d like to share a drink with.

Tell us about the projects you are working on.

A Madea Homecoming will be my first red carpet and premiere. So, there are a lot of things that need to be organized and on top of that I still have my auditions/training with my coaches.

With your busy schedule, what do you like to do with your downtime?

When there’s a good fight, watching the UFC with my buddies is a must. Vacation is not something I do all that much, but I get to travel a lot for modeling. When work takes me close to my family in South America, The Netherlands, or London, I try to hop off the trail and spend some time with them.

When you go out to eat, where do you like to dine?

My mom’s house. That’s food for the heart and the brain. In New York, the Red Rooster in Harlem. Otherwise, I’m always down for good Sushi or Ethiopian Injera.

What types of dishes do you typically order?

I turned Pescatarian, last year, but secretly I went back to being a Flexitarian. If it’s special and you can’t find it anywhere else, I’ll taste it.

Any favorite bars?

Speakeasys are my favorite. Even though I don’t really drink, I think they’re a cool place to hang out.

What drinks do you order when out?

If anything, an Old Fashioned, a cocktail, or a Desperados. But usually just water. I will say though, any time I do have a drink in front of me, it usually gets downed in a couple minutes. I have no idea why. So, maybe it’s a good thing I don’t drink.

Do you prepare drinks at home?

No. My dad used to drink whiskey with a good Cuban. He’d have a little glass with a lid to preserve the aroma. So, I could have the Balvenie or a Glenfiddich with him.

Tell us about your home bar. What is it stocked with?

Beers for my friends.

Have you ever been a bartender?

Yes, at an event once, so they were mostly pre-made drinks. I did however try to get people to try Flatliners. It’s Sambuca at the bottom of a chilled shot glass. Layer it with a line of tabasco and top it off with half a shot of Tequila.

If you could share a drink with anyone, who would it be?

Israel Adesanya, Conor McGregor, or the Rock. I like the innovative mindset the first two brought to their crafts, and I like the business mindset of the last two.
