Celebrate Earth Day with FAIR Spirits

By | Mixology News

We’re celebrating Earth Day with spirits that are changing the way we think and drink.

Preiss Imports is cultivating a new perspective and appreciation for the finer artisanal side of life offering the Spirits of the World. One spirit FAIR, returns a percentage of its profits to the farming communities.

Created in 2009 by Alexander Koiransky to create a positive impact on people and the planet. FAIR does not just label its products as “ethical,” the brand creates real sustainable change with a global and all-encompassing movement. Fair Trade is a way to make a conscious choice for a better world. We asked Henry Preiss, of Preiss Imports about FAIR vodka.

Talk to us about FAIR’s culture of sustainability.

Our diverse suppliers many of which farm the land or have direct contracts with farmers. Some have organic certifications, kosher certifications. All are concerned with where their ingredients come.

Why is this important?

Sustainability is key to continuing to produce products that rely of fresh ingredients and annual crop yields.

Spirits brands find drinkers more environmentally conscious. Tell us about this development.

This is a true statement yet at the same time it is also very difficult to manage. We do our best to make sure the ingredients used in the brands we sell have properly vetted ingredients that. All that said unless you are drinking at the distillery, and even then, there is consumption of energy, not always from solar or wind power, there is delivery by ocean vessel and trucks and as such we are still living in a world where consumers also enjoy the variety that the current system allows us. Consumers still prefer glass which can be recycled or aluminum which can also be recycled but often comes from unfriendly countries. If we were a single brand producer and distributor it would be a different question to answer.

Where do you see your brand’s commitment to sustainability headed in the future?

We are also looking for suppliers that work towards achieving the greenest way to produce and run their businesses

What would you like bartenders to know about your brand?

Preiss Imports isn’t about one brand but a plethora of brands that ignite creativity like few other importers can provide

Celebrate Earth Day with Redwood Empire Whiskey

By | Mixology News

A Toast to Earth Day with Redwood Empire Whiskey. The company’s name is an homage to the majestic towering redwoods of northern California.

Redwood Empire honors the collaboration of man and nature with its sustainably produced line of highly regarded handcrafted whiskeys and a dedication to environmental stewardship that includes an innovative tree planting program.

Taking inspiration from conservationist and Sierra Club founder John Muir, the distillery has put sustainability at the core of everything it does.

The company’s partnership with Trees for the Future to plant one tree for each bottle sold dates back to day one, says Brand Manager Elliott Sneen. “Trees for the Future thoughtfully plants trees where they make the largest impact,” he says. “Over several countries, they’re restoring degraded land, and as a result allow for further growth of forest gardens which provide nourishment to families that would have otherwise been on the pathway to hunger.” Redwood Empire has already planted over 350,000 trees with the goal of hitting half a million by this summer.

We spoke to head distiller Laruen Patz and master distiller Jeff Duckhorn to learn more about this eco-friendly distillery.

What does it mean to be a California Whiskey?

Duckhorn: California whiskey to us means the freedom to push the boundaries of what traditional whiskey has been. We get to take the knowledge of distillation handed down from the past and add our own wrinkle to it through tweaks in grain selection, different barrel maturation techniques and blending of aged whiskey stocks. I like to think of it as Slow Whiskey, equivalent to the slow food movement. Taking more time throughout the process to create something more complex and nuanced at the finish.

Tell us a bit about your Grain to Glass philosophy—why is this important to you?

Patz: Every element of spirit production is an endless rabbit hole of perusable knowledge. Proofing alcohol to the correct abv percentage and playing with aspects of solubility, maturation manipulation via barrel selection and defining an aging program, distillation concentrations and duration, and of course grain selection and fermentation. Grain to glass production allows distillers to explore all the aspects of their craft and is the only path to true mastery of the process we all share a passion for.

Duckhorn: A grain to glass program at a distillery is where distillers really get to flex their creative muscle and put an individual stamp on the whiskies being created. Local grain and malt sourcing and utilization of the unique marine climate here in Sonoma County leads to a softer and more delicate spirit.

What should bartenders know about the process of making Redwood Empire Whiskey?

Patz: Every barrel lot of whiskey we harvest is tested via sensory perception, at CASK strength with a well-trained olfactory you can scent an imperfection straight from the barrel. This ensures we maintain the quality and integrity of each blend, also it’s fun.

Duckhorn: We take a very hands-on approach to making our whiskey. A lot of time was spent early on deciding which raw materials to use, mash bills, barrel type and char level, proof at barrel entry and many more decisions leading to the finished product. We believe in creating subtlety and complexity through blending different mash bills and ages of spirit.

Distillers are coming up with innovative ways to attract new drinkers, where does Redwood Empire fit in?

Patz: Interest in spirits has shifted away from simply drinking to enjoying. By sharing the biological and chemical magic of high proof alcohol through process transparency and education we can act as a resource for our community of consumers. In fostering a deeper understanding and appreciation for distilling’s unique blend of art and science we can transform a drinker into a spirit enthusiast.

Duckhorn: Bourbon has historically been king among whiskey here in the United States, but there are a lot of other grains available to play with. Rye whiskey has been experiencing explosive growth and American Single Malt is starting to take off. The American Whiskey category allows for a lot of creativity by blending several different whiskey types to create something new. Our Lost Monarch Whiskey is a great example of that. Not a Bourbon or a Rye technically, but a marriage of the two leading to a whiskey with the sweetness of a Bourbon but lots of great spice as well, perfectly suited for cocktails.

Fairy Ring

Ingredients:

  • 1 1/2 oz Lost Monarch Blend
  • 1/2 oz fresh lemon juice
  • 1/2 oz simple syrup
  • 6 large mint leaves
  • 1 large ripe strawberry

Preparation: Muddle the mint and strawberry in a cocktail shaker. Add whiskey, lemon, simple syrup and ice to the shaker and shake hard for 15 seconds. Double strain into a chilled cocktail glass. Garnish with fresh mint sprig.

What Makes a Spirit Eco-Friendly with Sustainability Designer Elise Som

By | Mixology News

We’re counting down to Earth Day, April 22, 2022.

Elise Som, co-founder, and director of sustainability for Mijenta Tequila knows a thing or two about caring for our planet. Her background where the environment is concerned is impressive, to say the least. If anyone can teach us how to properly salute a sustainable spirit, she can. Here’s what Elise had to say about drinking sustainably.

Talk to us about  Mijenta’s culture of sustainability.

Sustainability is one of our fundamental principles. Mijenta is built on the desire to maintain nature and all the wonders it has to offer, seeking to reverse environmental impact through actions carried out at all stages of the life cycle through the principles of the circular economy. That is why sustainability is at the heart of Mijenta’s process, and from farm to bottle, Mijenta is committed to minimizing our environmental impact, and maximizing the community’s energy efficiency. A few initiatives that Mijenta has adopted to reduce waste and carbon emissions include:

  • Packaging elements are purchased directly from Mexico
  • Paper components are made from agave waste (called bagasse)
  • Mijenta purchases excess bottles for their glassware that has already been produced and would have otherwise gone to waste
  • In 2021, Mijenta announced a partnership with Whales of Guerrero, a non-profit working to bring Guerrero’s oceans back to a healthy balance and will soon announce a new partnership with La Tortuga Viva, a community organization that supports sea turtle conservation on the coast of Mexico.

Why is this important to the brand?

Community and sustainability run central to our philosophy at Mijenta. From the very start, Mijenta’s founders were dedicated to doing well by doing right. Mindful of adverse effects, it is Mijenta’s duty to protect our heritage and preserve our environment. With this in mind, actions are carried out at all stages of the life cycle; from sustainable sourcing to responsible procurement practices, conscious packaging land and ocean preservation.

Drinkers these days are environmentally conscious and care about the origin of spirits. Talk to us about this development.

As citizens are learning more and more about the devastating effects that global warming is having on the planet and how quickly we need to act as a community, consumers are making more of a concentrated effort to support brands that align with their own ethos and avoid those that are adversely affecting both the planet and their workers.

Ultimately, this is the responsibility of the producers to choose systems that, at the very least, don’t harm, and ideally restore what has been lost and support both the planet and people. Sustainability has been a pillar of our brand from the very beginning, and we will continue to further these initiatives and give back. That said, we are very grateful that consumers are recognizing this too by choosing products that give back and prioritizing the planet when it needs it most.

Where do you see this concept evolving to in the future?

We are hopeful that all brands, especially larger corporations, will begin and continue to make the steps towards carbon neutrality and join in the work to reverse the effects of global warming. Each year we offset our carbon footprint and are thrilled to see others follow suit. It needs to be a collective effort.

What would you like bartenders to know about  Mijenta?

Mijenta’s Blanco and Reposado flavor profiles are created intentionally and over many many months. Maestra Tequilera, Ana Maria Romero Mena, oversees the entire production of Mijenta from harvest to bottle and has worked to increase certain flavors, build the terroirs and combine the elements of creation, including elevation, soil and agave. Our tequilas celebrate the agave and enhance its fragrant, sensual aromas. With the goal of bringing the land and the ancestral art of harvesting and distilling agave to the foreground, the flavor of Mijenta’s tequilas is a story that unfolds from within and that brightens up any cocktail from within.

What is the best way to enjoy  Mijenta  Tequilas?

Blanco – Mijenta Blanco is perfect for cocktails, best pairing with citrus, pepper and herb flavors to compliment those in the tequila. On the nose, Mijenta Blanco offers notes of vanilla & caramel with flashes of tropical fruits & hints of cinnamon and spices. On the palate, Mijenta Blanco is complex & aromatic, with flavors of honey, vanilla, caramel, fresh fruit & spices.

Reposado — The Reposado is best enjoyed neat, on the rocks or as a nightcap cocktail, such as an Old Fashioned.  It pairs well with dry fruit, soft cheeses, game meat, as well as flavorful Asian dishes. For dessert, Reposado is best savored with vanilla flavors, coconut and semi-bitter chocolate.

ELISE SOM

Elise is a sustainable designer and environmental consultant who pursued her masters in sustainability from Harvard University and Parsons, the New School of Design. Elise’s work is deeply rooted in nature, culture, and traditions. Originally a trained interior architect, Elise ran the interior department for Sir David Adjaye’s before starting her design company. She opened Elise Som Design Studio in 2012 in New York City but moved back to London to pursue broader sustainable designs such as furniture and products. Elise strongly believes that Mother Nature is the best designer and therefore encourage that we follow its guideline as we create our special liquid. Elise considers that sustainability and transparency are the new normal to millennial consumers and her Motto is to say that “true luxury is to design with a responsible heart.”

By | Mixology News

Our countdown to Earth Day continues with Copalli Rum.

Copalli Rum Cocktail

In honor of Earth Day 2022, Copalli Rum launches  Cocktails for a Cause, which partners with bars, restaurants and retailers to raise funds for organizations which support environmentally responsible initiatives. The program will run during the month of April in honor of Earth Day, April 22.

During the month of April, participating accounts in California, Florida and New York will create cocktails using any of the Copalli Rum expressions—White, Barrel Rested or Cacao. Each cocktail will be finished with a custom garnish which features a QR code that explains more about the program and the organizations which are benefiting.

As an added element the garnish can be taken home and planted, producing a bouquet of wildflowers. For each featured cocktail that is sold during April at participating accounts, $2 will be donated to local charities such as Surfrider in Southern California and Florida, the Billion Oyster Project in New York and CUESA in San Francisco.

“Sustainability is core to the DNA of Copalli Rum, not just the marketing program du jour,” says Mark Breene, CEO, Copalli USA. “This program—in honor of Earth Day—is a great opportunity to engage consumers and our partners in the on and off premise while reinforcing the importance of being environmentally responsible.”

A clean, pure rum sustainably produced at the Copal Tree Distillery in the rainforest of Southern Belize, Copalli Rum is made from just three ingredients—organic sugar cane, pure canopy water and yeast—and is produced at a distillery designed to be carbon neutral.
