The Rault Family Is Making Organic Cognacs at The Distillerie du Peyrat

The  Distillerie du Peyrat  has distilled Cognacs for several decades but the family has been present as distillers in the Charentes region since 1705.

Around thirty years ago, after having distilled Cognac for bigger, well-known brands, the owner, Jean-François Rault, decided to produce and market his own Cognac with a rather unique specialization in the Cognac area: the production of organic Cognacs. 

 

Distillerie du Peyrat now produces exclusively 100% organic Cognacs. Located in a small village 10km East of Cognac on the banks of a river, du Peyrat produces, distills, and ages their eaux de vie with the respect of the environment and the intense expression of the terroir.  

 


 

 

About the product 

Location of the vineyard is in the Fins Bois delimited area of production, just a few kilometers away from the delimited Grande Champagne area, also known as the first cru. 

 

We recently had a chance to catch up with Antoine Rault, who works with his brother and father to run the du Peyrat distillery and ask him about the family’s commitment to sustainability. 

 

Talk to us about your brand’s culture of sustainability. 

Mitigating the impact of our activities on the environment, local wildlife and biodiversity is at the heart of our approach. Distillerie du Peyrat is a 100% organic brand, meaning that we only source grapes from organically grown vineyards - ruling out synthetic fertilizers, pesticides, and herbicides from the production process - to create our cognacs. These grapes either come from our own vineyards – 30 HA of Ugni Blanc in the Fins Bois region – or from our network of local partner winegrowers, all involved in Organic agriculture.In addition to that, we promote cover crops in the vineyards and the planting of endemic tree hays to support wildlife and biodiversity. On another note, we have laid out 300 square meters of solar panels on the roofs of our premises, producing up to 35,000 Kwh of electricity a year. 

 

Why is this important? 

We are well aware of the pressure that human activities exert on both climate and biodiversity . Even more so because we – as winegrowers – are directly and increasingly affected by extreme weather episodes (hail, frosts, drought etc.) and soil artificialization. Nature is essentially the number 1 resource for us – its preservation should be our top concern to make sure that there is a future for our activity and for the generations of winegrowers to come. 

Spirits brands are beginning to find consumers more environmentally conscious. What can you tell us about this development?  

It seems that there is a general tendency for consumers to be more attentive about the origin of a product and more aware of the ways it is actually conceived. Consumers also increasingly share their opinion, voice their concerns through social networks which create a direct communication platform with brands. We do think this is really positive as consumers are a driving force to challenge producers’ practices, but also to promote innovation and diversity in categories of existing products. 

 

Where do you see your brand’s commitment to sustainability headed in the future?  

Distilling Cognac involves relying on fossil energies to heat our Charentais Pot stills, but also electricity to cool water down.  In the future, we are looking to invest in alternatives to reduce our dependency to these energies, while continuing the tradition of Cognac making. We also want to work on reducing the footprint of all elements composing the packaging of our Cognac bottles with our supplying partners. 

 

What would you like bartenders to know about your brand? 

Behind the Cognac brand, Distillerie du Peyrat is also a family project and has been so for 5 generations. Talking about sustainability, we still own/operate our vineyards, the distillery and aging cellars ourselves to this day. So In a sense, you can look at our cognacs as a testimony of our family passion and savoir-faire! We really hope you enjoy them.

Get to Know Sotol with 3 Badge’s August Sebastiani

There’s Mexican spirit out there that deserves some major limelight. It’s sotol, and 3 Badge Beverage president August Sebastiani and his team want the world to know all about it. 

Before you think this is just another agave spirit—think again.

 

Hailing from Northern Mexico, sotol is a spirit that isn’t derived from the agave plant like its Southern Mexican spirit brethren. It’s made with sotol, scientifically known as dasylirion, a genus of plants that is strangely enough part of the asparagus family and more closely related to the succulents on your windowsill. 

 

With sotol comes an opportunity to step up your cocktail game. Sotol offers a pathway to express a new side of Mexican culture, taking bar guests on a journey through the indigenous history of Northern Mexico. And we’re seriously excited about it. 

 

We chatted with Sebastiani to discover all the details and learn more.  

 


 

Tell us a bit about the sotol category. 

We are very excited to be adding a player to the nascent sotol category. Now, sotol is in a similar place to where mezcal was just a few short years ago. It lends itself to much exploration and growth. This being the case, much of our brand is focused on category education, above all else. We have found a product that is both exciting on its own and quite versatile for the cocktail set, and we want to share this fresh category as effectively as possible.    

 

How does sotol compare to other Mexican spirits on the market today? 

Principally, sotol isn’t an agave. It’s distilled from the dasylirion plant, which is a succulent closest in relation to an asparagus. Like mezcal, different varieties of this plant introduce different characteristics into the spirits produced. For example, our Texanum has a larger flavor profile with a lot of pronounced vegetal notes, allowing it to really stand up well in a cocktail. Our Wheeleri on the other hand, offers something that is a little leaner. It is more of a sipping sotol, to perhaps even be enjoyed at room temperature in a wine glass or brandy snifter. 

 

What is important for bartenders to know about sotol and its uses? 

As with all our offerings, we look to source products that can stand out in a mixed beverage. However, we also firmly believe that the only products worth mixing are ones that can also stand out on their own. As far as specific cocktails, with sotol, the sky is the limit! Selfishly, we are quite excited to see what the mixology set will create. 

Talk to us about Quechol specifically. What makes this brand stand out? 

We wanted to build a brand that honors a piece of history and tradition from Northern Mexico, the same region where our sotol is being sourced from. Quechol was inspired by its very meaning, which is “precious feather” in the Nahuatl (Aztec) language. Quechol was often used in ancient Aztec poetry to refer to a divine bird with colorful plumage. Amantecas, known as feather workers, would often create intricate headdresses for their people from the many colorful birds of their region. So, Quechol looks to the future of the developing sotol category while also honoring its rich history.  

Talk to us about Quechol’s vibrant packaging.

Quechol was designed to reflect and honor the divine bird and feather references found in Aztec poetry. The unique bottle shape was inspired by the shape of a spoonbill’s bill, being long, flat, and curved, while the capsule showcases a bold turquoise colored plumage. The earth tone label has added fibers throughout for a unique appearance and showcases the brand mark with waves and grooves like that of a feather’s texture. And on the lower label, we’ve included the translation to a piece of old ancient Aztec poetry that is unique to each expression. 

 

Where do you see the Sotol category headed, and what does the future look like for Quechol? 

Quechol is an exciting venture for us because it provides us with an opportunity to help grow the sotol category and tell its story. We would like to appeal to the curiosity of agave enthusiasts with a product whose category still has so much left to be discovered. Authentic Mexican spirits have a rich history and an exciting future, and we want to do our best to continue to share the best of what these spirits have to offer.   

 

 

Tell us about the portfolio of Mexican spirits at 3 Badge as a whole and how does Sotol fit into this lineup? 

Our Mexican Spirit portfolio, now made up of Bozal Mezcal, Pasote Tequila, and Quechol Sotol, is a fun effort that is helping to open doors and get to know more about the cultural impact of spirits throughout Mexico. The intimate relationship of food and beverage represents and honors traditions that run deep throughout generations and extend well beyond Jalisco and Oaxaca and Durango. Whether complemented with wine or mezcal or sotol, breaking bread with loved ones and sharing stories is what it’s all about. At 3 Badge, we look to help celebrate those relationships and experiences. 

 

What makes these brands stand out in the market? 

Just about everything! First there is the packaging, where we spare no expense in making a stellar first impression. Then we have the brand messaging, which gives the retailer or bartender a reason to share them or tell their stories. Then there is the distribution, which makes sure that they are available not just across the globe – which they are – but more importantly, that they are at the hip new farm-to-table spot around the corner that everyone is raving about. It’s successes at every stage of our route to market that sets us apart. 

 

Talk to us about the culture of sustainability surrounding Quechol and the other brands in the 3 Badge Portfolio. 

This is a very important topic for us 3 Badge. For Quechol specifically, we produce in Durango, which is a very warm part of the world. This allows for our facility to be 100% solar powered. This clean energy is used for general operations, milling and even warming the spring water used for fermentation. The production facility with which we’ve partnered is also built largely with bricks made from production waste. Once the facility expansion currently in progress is complete, these bricks will continue to be made for those in need in the area. We are also dedicated to maintaining a healthy balance of agaves in the local ecosystem, so for every bottle produced, one or more agaves is planted.  

 

The premium agave spirits segment in booming. Why do you think agave spirits are so popular now? 

People are learning! We find ourselves at a unique time in really any consumer product. With literally the entirety of human knowledge at our fingertips thanks to digital technologies, the consumer knows more about what they are buying or tasting than ever before. And for agave spirits, which have so much to be learned about them and such a rich history, this makes them incredibly exciting.

4 Cocktails Made Better with Honey, by IG Influencers

Check out these classic cocktail recipes made better using Bärenjäger Honey Liqueur created by industry influencers Jay and Leah, a couple who share a love of cocktails, great food, restaurants, and spirited travel! @gastronomcocktails

 


 

Bärenjäger Bee’s Knees

Ingredients:

  • 2 oz London Dry Gin 
  • 3/4 oz Bärenjäger Honey Liqueur 
  • 1/2 oz lemon juice 

Preparation: Combine all ingredients in a shaker with ice. Shake and strain into coupe. Garnish with lemon peel. 

 

 

Golden Hour 

Ingredients: 

  • 1 1/2 oz. Mossburn Speyside Scotch 
  • 1 oz Bärenjäger 
  • 1 oz mango puree 
  • 1/2 oz lemon juice 
  • 1/4 oz Lillet 
  • 1 drop molasses bitters 
  • 2 drops Angostura bitters 

Preparation: Combine all ingredients in a shaker with ice. Double Strain into glass with ice. Garnish with mango slice or lemon peel.  

 

 

Honey Bourbon Lemonade 

Ingredients: 

  • 2 oz Bärenjäger Bourbon 
  • 4 oz fresh squeezed lemonade 

Preparation: Add Bärenjäger Honey Bourbon into a rocks glass with ice. Top with lemonade and stir.  

 

 

Honeycomb 75 

Ingredients: 

  • 1 oz Bärenjäger Honey Liqueur 
  • 2 cubes of honeycomb, 1 for garnish 
  • 4-5 oz prosecco 

Preparation: Pour Bärenjäger into tall glass, add honeycomb. Top with prosecco and garnish with honeycomb.  

 

 

Bärenjäger Honey Liqueur is made with the highest concentration of all-natural honey, at 70 proof, it’s the perfect addition to any cocktail in need of an all-natural sweetener.

Blackberry Moonshiner

Ingredients: 

  • 2 ½ oz. Ole Smoky Blackberry Moonshine 
  • 2 ½ oz. Lemonade 
  • Mint 
  • Fresh lemon slice and blackberries (for garnish) 

Preparation: Muddle mint in the bottom of glass. Add ingredients over ice and mix well. Garnish with lemon slice and blackberries.

Chillin With Kelsi Davies

Content Creator, Psychic Medium, Actress, and Singer/Dancer Kelsi Davies has taken the spooky route to fame!

After getting her start as a creator on YouTube, Davies was inspired by a friend to join TikTok as well. She made a name for herself on the new-gen platform with unique paranormal content, acting skits, and choreography. From her viral videos that featured a haunted doll named Lola, she built a loyal fanbase with over 4.5 million followers and 105+ million likes. Another large portion of that following stems from her original YouTube channel, which has amassed over 466,000 subscribers and 24.5 million views. Kelsi’s content provides insight into her everyday life and highlights her passion for the paranormal. She has a large verified social media presence thanks to her one-of-a-kind footage.

 

Davies is also making her mark on the world of music with her two recent singles Done and Darker. Done tells a story of two kindred spirits who are madly in love, but not quite cut out for each other. Darker is about a party being thrown at a haunted house where the ghost is not fond of any visitors. Both are available now on all streaming platforms!

 

Her other current single Heartbeats is a poignant song that details her journey of finding her authentic self after escaping a toxic relationship.

 

Some of Davies’ accolades include: Travel Channel’s Paranormal Caught On Camera, created and hosts the podcast InTALKxicated where she and her guests talk about conspiracies, ghost experiences, mysteries, and more. Available on Apple Podcasts and Spotify, she co-created the mobile app Kelsi Davies: Haunt Escape. The app has gotten great reviews and nearly earned a perfect 5-star rating.

 

She is frequent collaborator with the popular TikTok House PrideHouse LA, founded by fellow entertainers Mollee Gray, Kent Boyd, and Jeka Jane.

 

Chilled had the chance to catch up with Kelsi to learn more about her “spirited” day-to-day life.

 


 

Tell us about the projects you are working on. 

This year is going to be very busy for me! I am starting to get back into acting as well as working on more music. I’m doing all of this while consistently posting on my YouTube and TikTok. I’m also planning on traveling.

 

With your busy schedule, what do you like to do with your downtime? 

My favorite thing to do is relax at home with my cats! But honestly, work. I don’t really have downtime because I enjoy working on new content so much.

 

When you go out to eat, where do you like to dine? 

I love Olive Garden! Their breadsticks are to die for! I also like Cheesecake Factory, Luna Grill, and BJ’s Brewery!

 

What types of dishes do you typically order? 

I’ve been trying to eat healthier lately, so I typically get chicken and rice with a salad. When I’m not watching what I eat, I get spaghetti, chicken gnocchi, fettuccine alfredo, deep dish pizza, and pizookies.

Any favorite bars? 

I’m not much of a bar person. I am allergic to some alcohols, so I have to avoid certain drinks. I love going to gay bars with my friends though, we have so much fun! 

 

Favorite drink? 

If they have them, I love frozen strawberry Margaritas! Or I’ll stick with champagne. No hard liquor for me or I’ll get sick. 

 

Do you prepare drinks at home? 

Not so much. I’m a social drinker so I mostly drink when I go out with friends.  Every once in a while, I’ll have a Truly Hard Lemonade at home. 

 

Tell us about your home bar. What is it stocked with? 

Truly’s! They really are my go-to when I’m at home and want to have a drink. 

 

Have you ever been a bartender? 

No, but it seems like such a cool job!

  

If you could share a drink with anyone, who would it be? 

Lady Gaga, she inspires me so much. I’d love to get to know her and go out for a drink!

New Amsterdam Gin has “elevated their gin to new heights” with the introduction of Stratusphere, The Original and London Dry Gin. The gin brand is spearheaded by the largest winery in the world, E & J Gallo Winery, which unveiled Spirit of Gallo, the fourth largest spirits supplier by volume in the United States with over 90 brands available in more than 90 countries.  

The New Amsterdam Gin brand’s original debut in 2007 and launch in 2008 paralleled the eruption and growing popularity of gin. Coupled with persistent and effective marketing, New Amsterdam has earned quite the following over the past decade and is widely recognized.

New Amsterdam Stratusphere Gin brings with it a “modern spin on the 400-year-old practice of distilling gin,” from the botanicals selected to its unique distillation process. It is made from 100 percent pure grain spirit and is known as New Western, or American-style gin. The Original is a contemporary-style gin that allows other botanicals to shine through over juniper, such as orange, which is at the forefront for this brand. 

The Original is a citrus-forward gin with a crisp, clean taste; a taste so smooth, you can drink it straight. This variant is for those who prefer a sweet cast to their gins, as it boasts sweet, citrusy flavors and ends on a slight floral note. The London Dry, bottled at a 47.3% ABV, is a twist on the juniper-forward styles of traditional dry gin and brings with it a perfect balance of juniper and citrus, rounded out with a smooth finish. The orange is still pronounced, but humbled, as the juniper makes its way to the palate.

Both distinct styles of New Amsterdam Stratusphere earned awards and accolades for their crisp, clean taste and unparalleled smoothness. The London Dry Gin earned a spot on the Wine Enthusiast Top 100 Spirits of 2019.

 


 

Stratusphere Gin & Tonic

Ingredients:

  • 1 ½ oz. Stratusphere Gin
  • 3 oz. Tonic

Preparation: Add ingredients into an ice-filled double old-fashioned rocks glass and stir together to combine/chill. Garnish with lime.

 

Negroni

Ingredients:

  • 1 oz. Stratusphere Gin
  • 1 oz. Sweet Vermouth
  • 1 oz. Select Aperitivo

Preparation: Add ingredients into an ice-filled double old-fashioned rocks glass and stir together to combine/chill. Garnish with an orange peel.

 

Southside

Ingredients:

  • 1 ½ oz. Stratusphere Gin
  • 3 oz. Limeade
  • 6-8 Mint Leaves
  • Top with Club Soda 

Preparation: Add ingredients (except club soda) into a cocktail shaker filled with ice and shake vigorously. Uncap shaker and add club soda. Strain into an ice-filled Collins glass and garnish with mint.
