Based on the first half of 2022 data from IWSR, premiumization of spirits continued to thrive in the United States, driven particularly by the growing popularity of tequila and mezcal. The rise of new brands entering the market played a significant role in the rapid growth of agave-based spirits, including tequilas and mezcals, which emerged as one of the top three fastest-growing categories. This upward trajectory is expected to sustain strong double-digit growth in both retail and on-premise channels until 2026.

KAH Extra Añejo Tequila stands as a prime example of exquisitely crafted tequila that captures the hearts of tequila enthusiasts and connoisseurs. This exceptional spirit pays homage to the meticulous cultivation of agave and the patient nurturing of the spirit over several years. CRUSH American Grill

CliQue Bar & Lounge

From this upscale cocktail lounge located inside of The Cosmopolitan of Las Vegas comes two beautifully crafted libations; Strawberry Fields and Watermelon Sugar. Strawberry Fields is made with Bombay Sapphire gin, Aperol, lemon, fresh strawberry syrup, topped with bubbly Chandon and served in a champagne flute garnished with a sprig of fresh mint and a juicy strawberry ($19). Crafted right before your eyes is Watermelon Sugar, with Botanist Gin, a splash of lime juice, simple syrup, crushed watermelon, basil and pea flower that is chilled with a watermelon ice sphere.

 

 

The Barbershop Cuts & Cocktails

This hidden gem also located inside The Cosmopolitan of Las Vegas is a fully-functioning barbershop in the front, and a speakeasy style lounge in the back! Tucked behind an inconspicuous janitor’s door, they serve Prohibition-era inspired drinks, including two masterfully crafted gin-based cocktails; Ms. Marigold and Wild Orchid. Ms. Marigold has a base of Tanqueray gin mixed with aperol, blood orange juice and topped with prosecco ($18). The Wild Orchid is handcrafted with Botanist gin, creme de violette, lemon juice, egg white, lavender bitters, absinthe mist with a hibiscus rim.

 

 

Bottiglia Cucina & Enoteca

Located at Green Valley Ranch in Henderson, this restaurant is celebrating World Gin Day by serving up their signature Negroni Italiano, made with Botanist Gin, Campari and Martini Rossi reservation Rubino sweet vermouth.

 

 

Tailgate Social

This high-energy sports bar at Palace Station is celebrating with their Gin and Juice cocktail, featuring Bombay Sapphire, cucumber, completed with a sprig of mint and lime.

 

 

The Still

Located at the Mirage Hotel & Casino, this elevated sports bar invites guests to take flight and toast the holiday with the Aviation cocktail. The delectable cocktail is made with Botanist Gin, Maraschino Liqueur, Creme de Violette, lemon juice, topped with Brandied cherries.

 

 

Proper Eats Food Hall

DAYLIGHT Beach Club

Spend this World Gin Day at Las Vegas’ hottest pool club and sip on refreshing gin cocktails with your friends. We ask Grant how he manages to stay on trend with the various beverage programs at Loews Hotels & Co, which owns and operates 25 hotels and resorts across the U.S. and Canada.

 

 

Tell us a bit about your background in the industry and what you do in your role with Loews Hotels.

I’ve spent 30+ years in the Food & Beverage industry.  I started as a bartender in my teenage years, and quickly progressed to management roles consisting of General Manager, Director of F&B, Director of Operations, Corporate Director, and Corporate Vice President for Fortune 500 brands in hospitality. As Vice President of Beverage for Loews Hotels & Co my role consists of: Concept, develop and implement bar and restaurant designs ensuring functionality, aesthetics and an incredible guest experience. Build/leverage relationships with suppliers to maximize and support funding. Establish global beverage mandates for ALL outlets to include restaurants, bars, lounges, pools, in-room dining, grab-n-go and conference and catering. Set companywide overall cost expectations and revenue goals. Film and conduct live training to educate the team and ensure product knowledge. Build, develop and activate all beverage menus. Work with design firms and architects on all new builds and renovations.

I attend all relevant global beverage conferences, training and ideation summits. The inspiration for our programming stems from European cities such as London, Barcelona, Paris and Rome. A perfect example is this summer, each of our hotels are showcasing creative renditions of the Italian cocktail, The Spritz as part of Summerfest by Loews Hotels. Destination-inspired twists on the classic libation will be offered throughout the summer to celebrate locally sourced ingredients and garnishes.

We Ask Marina Wilson about using Espanita Tequila in Cocktails

Marina Wilson, the founder of Espanita Tequila, is empowering the industry with her leadership, artisanal tequila, and her brand’s motto, “Affordable Luxury Without Compromise.”

 

Wilson is no stranger to spirits. Since starting her first company in 2006—Double Eagle Imports—she’s developed her knack for the spirits business and her passion for tequila. “Working with tequila brands for many years, my passion for Blue Agave spirits grew, and so did my appreciation of traditional craft techniques that are involved in the transformation of caustic and stone-hard raw agave “piña” into incredibly flavorful, nuanced spirit,” says Wilson.

Tequila, of course, is that magical spirit from Blue Agave. Wilson saw how the spirit’s artisanal nature was at risk as more and more tequila brands lined shelves and companies switched up production methods. “With the recent boom of tequila popularity and rising exports, we see many distilleries switching to commercialized approaches allowing them to increase output and cut costs, such as using diffusers and autoclaves, to name a few. This often comes at the expense of quality and taste.”

For Wilson, tequila is an art. With her knowledge of the spirit’s artisanal strength, she decided to step toward her passion by starting Espanita Tequila. We ask Wilson about her development of Espanita with mixology in mind.

 

 

Tell us a bit about your background in the industry.

My immersion in the distilled spirits industry started in 2006 when I started Double Eagle Imports. Operating a company focused on importation and sales of craft spirits gave me a valuable experience in all aspects of distilled spirits marketing and sales starting from contract negotiations and product sourcing and to such less exciting but incredibly important matters as customs clearance, compliance with numerous federal and state regulations, warehousing, reporting, etc. This first-hand involvement has created a solid foundation in the tequila business that is very helpful to me today. I believe that for any owner of a distilled spirit brand it is absolutely essential to be knowledgeable of all crucial elements that is involved in operations and have a comprehensive background in the industry even if they end up outsourcing most of the functions.

 

Talk to us about founding Espanita Tequila.

Working with tequila brands for many years, my passion for Blue Agave spirits grew and so did my appreciation of traditional craft techniques that are involved in transformation of caustic and stone hard raw agave “piña” into incredibly flavorful, nuanced spirit. While many other spirits such as vodka lend themselves well to commercial mass-production, this is not a case with tequila. Tending to and harvesting of agave plants still remain a manual effort, for example. Artisanal tequila production techniques are extremely laborious and time-consuming as well. With the recent boom of tequila popularity and rising exports, we see many distilleries switching to commercialized approaches allowing them to increase output and cut costs such as use of diffusers and autoclaves, to name a few. This often comes at expense of quality and taste as most of the steps involved in creating tequila such as cooking of raw agave, fermentation, and distillation, cannot be hurried without sacrificing depth and richness of flavor and softness of the palate. Appreciation of ancestral approaches of tequila making craft has eventually developed in a desire to create an ultimate craft tequila brand that pays homage to the long and fascinating history of tequila in Mexico, and its traditional craft. This is how Espanita Tequila was born.

 

What was your inspiration / what do you hope agave fans experience with your tequila?

The motto of Espanita Tequila is “Affordable Luxury Without Compromise”. We want to offer tequila lovers an authentic handcrafted tequila of the highest quality that it is true to its Mexican roots and heritage, presented in a luxury packaging that enhances a joy of imbibing but at a very approachable retail pricing. It has been a very challenging task, especially in the environment of rapidly rising costs and agave shortages, however, we are proud with the results. Since Espanita’s launch in 2017, we have earned many awards and accolades, including “Tequila of the Year” and “Producer of the Year” from Bartender Spirits Awards in 2021, two “Best Buy” awards and “Top 100 Spirits” placement from Wine Enthusiast. Rated from 93 to 97 points, Espanita product line has in its cache 18 Gold, Double Gold, Triple Gold, and Platinum medals from international spirits competitions for its taste and quality as well as numerous awards and medals for our packaging design and its creativity.

 

 

What is important for bartenders to know about your tequila expressions?

Bartenders are uniquely important in the brand’s journey from a distillery and into consumer’s glass and many people learn about new spirits at a bar, so bartenders’ involvement and acceptance of Espanita Tequila is our huge priority. Tequila cocktails are gaining popularity and many talented mixologists are applying their creativity to creating new delicious mixed drinks starring tequila as its key ingredient. However, for tequila to shine in a cocktail it must be agave-forward and feature richness and depth of flavor. Such tequila will not get lost in a cocktail, with its presence masked by other strong-flavored ingredients, but will carry and enhance the drink, creating a memorable sipping experience. Espanita has been created with mixology in mind. Our tequila features robust flavors of traditionally slow-roasted Blue Agave with its caramelized rich sweetness and wafting citrusy aromas, making it a perfect foundation for a multitude of delectable cocktails.

 

Talk to us a bit about diversity, equality, and inclusion in the tequila biz.

Distribution and sales of tequila still largely remain a male-dominated industry. While many female celebrities have recently successfully introduced their tequila brands, these are more exceptions than the rule and the reality of a small female-founded and operated business is vastly different. However, positive changes are on the way, and this is very encouraging. We have been very lucky to build our distribution footprint with trade partners who don’t just pay lip service to diversity and inclusivity but practice and live equality. I believe that the tequila business will continue to evolve and develop while benefitting and getting richer from an input of founders and suppliers of different backgrounds.

 

What advice can you give others who like to follow in your footsteps?

If you are starting a new tequila brand as an independently owned small business, the road ahead will be rocky. There will be numerous challenges on the way as the tequila market in the US is becoming more and more congested and competitive. The days when starting a new tequila brand would bring immediate rewards are gone forever. In addition, consolidation among the wholesaler’s tier in the US makes it much more difficult for a new brand to find a distribution partner that would dedicate resources to brand’s growth. So, my advice is to have three “P” in your arsenal: Passion for what you do, Perseverance in your efforts and Patience. If you work hard, do not give up easy and do not get discouraged while building your brand, you will see success coming eventually.

 

 

What has been the greatest success for your brand thus far?

We are very proud of our innovative new collections of 100% Agave spirits. In January we have launched our limited “Barrel Reserve” range of aged tequilas that showcase innovative maturation techniques and experimentation with different types of cask finish, leading with our flagship release of the 97-Point rated Espanita Double Barrel Reposado Tequila. A special sipper for any Blue Agave fan, it offers tequila aficionados a perfectly aged tequila with an authentic style, excellent structure, and seamless nuanced finish that showcases tantalizing bourbon accents resting on an Agave center. We are also very excited about a recent launch of Espanita “Signature Infusions”, a collection of all-natural fruit-infused tequilas. We have carefully curated three key flavors for the initial release that pair perfectly with 100% Blue Agave tequila Blanco foundation: Lime, Grapefruit and Pineapple and worked for more than a year to perfect the recipes and maceration techniques. We have already successfully launched our Signature Infusions in NY NJ, MA, CT, GA, OK, KY, IL, AR, MD, and District of Columbia, with more states launching through the end of the year.

 

What are your hopes for Espanita Tequila’s growth in the future?

We are committed to continuously innovate while honoring and preserving traditional roots and heritage behind artisanal tequila production that serve as a foundation of our brand. We hope that this commitment will result in brand’s growth across the US and eventual introduction of Espanita Tequila to international markets. Most of all, we hope that consumers will be enjoying our brand and appreciating the hard work of Mexican artisans involved in production of Espanita Tequila and their passion for this delicious Blue Agave spirit.

  • 2 oz E11even Vodka
  • 1 oz Monin Hibiscus Syrup
  • 3/4 oz Lemon Juice
  • 3 Strawberries
  • 3 Slices Jalapeno

Preparation: Muddle the Strawberries and Jalapeno in a shaker tin with the Monin Hibiscus Syrup. Add the lemon juice and Vodka. Shake and fine strain into glass. Garnish with a sliced strawberry and jalapeno.

 

 

Hello Sunshine

Ingredients:

  • 2 oz E11even vodka
  • 1 1/2 oz Morning Blend Juice
  • 3/4 oz Lime Juice
  • 3/4 oz Ginger Cardamon Honey

Preparation: Pour all ingredients into a shaker tin, minus the citrus soda. Shake with ice, strain into Collins glass over fresh ice. Topped with citrus soda. Garnish with an orange and fresh rosemary sprig.

 

 

Lady Luck

Ingredients:

  • 2 oz Rooibos Infused E11even vodka.
  • 3/4 oz chipotle honey syrup
  • 3/4 oz lemon juice

Preparation: Place ingredients in shaker, add ice, shake well, double strain into stemmed glass. For spirit either: heat 2 bags of rooibos for every 12 oz vodka in small pot on medium/low or place in mason jar, seal, and allow to steep for 24 hours. For honey chipotle syrup: heat 1:1 honey to water until a low boil occurs. Take off heat and place peppers in. Allow to sit for 30 mins. Garnish with queen of hearts.

 

 

Greek Smoke

Ingredients:

  • 1 1/2 oz Apricot chili infused E11even Vodka*
  • 1/2 oz Tobala Mezcal
  • 1 1/2oz Greek oregano lemon sour
  • 2 dashes Dugan and Dame Ghost Bitters
  • 1 oz egg white

Preparation: Reverse dry shake all ingredients. Double strain into coupe glass and spray orange blossom water over the top. Garnish with dried apricot and sprig of Greek oregano.

*Apricot Chili Infusion

  • 4 oz E11even Vodka
  • 2 dried apricots diced
  • 1/2 dried chili pod

Preparation: place in mason jar, seal and sit on counter overnight. (shake occasionally) Fine strain the next day and enjoy.

 

 

Spicy Pear Stiletto

  • 1/2 oz Ancho Reyes Verde Poblano Liqueur

Preparation: Pour all ingredients in mixing glass. Shake hard, double strain over Coupe glass, garnish with rosemary sprig.

 

 

The Miami Sunset

  • 1 1/2 oz E11even Vodka
  • 1 oz Passion Fruit Liqueur
  • 1/2 oz Lemon Juice
  • 1/2 oz Demerara Syrup
  • Top with prosecco
  • Blueberries and Rosemary

Preparation: Add E11even Vodka and 8-10 Blueberries to a shaker and muddle. Then add Passion Fruit Liqueur, Lemon Juice, and Demerara Syrup (100g water/100g Sugar) to the shaker and shake. Double strain into a double Old-fashioned glass with 1 large cube. Fill with prosecco, then dunk cube with barspoon to gently mix.  Garnish with rosemary sprig and blueberries.

Sipping Through a Spa Day in NYC

I’m lying on my stomach as a masseuse dips a stalk of effervescent Venik leaves into some warm water and shakes them over me. My body is rubbed with cocoa, and I suddenly smell distinctly like one of those fancy chocolate bars they sell at the supermarket for $12.

 

 

Then comes the salt, which is rubbed into me as well. Before I continue, I know what you’re thinking, and no, I’m not being prepared to be cooked and eaten for dinner at some sort of gruesome New Age restaurant straight out of that movie The Menu. On the contrary, I’m here at a new mega-relaxation complex in New York City called World Spa. It’s a multilevel spa mecca where your only task is to unwind, whether that means bopping into one of their many saunas, sipping on cocktails, wine, and craft beer, or getting spanked by a Venik leaf.

 

 

Just as it sounds, World Spa boasts spa treatments from around the world. Today, I’m starting my visit with something called a Banya Venik Platza Ritual, which hails from Russia. Along with the chocolate rub and Venik (a delicious-smelling bundle of birch and oak twigs), I’m asked if I want to end my ritual with a shower full of cold water. I said no, and the reasons could have been that I’ve done these cold-water treatments before, or because I want to save water for the sake of the environment. But, in reality, I pretty much chickened out.
 

 

The thought of chicken did make me hungry though, so after visiting the Snow Room (a wood-enclosed space where actual snow sprinkles down from the ceiling and into huge piles) and doing a couple sauna visits (naturally World Spa has a variety of them, including both infrared and aroma saunas), it was time for lunch complimented with a glass of something fruity and boozy thrown in for good measure. Ladies and gentlemen, it’s time to channel my inner Jimmy Buffett.
 

 

Much like everything else here, my options were both eye-popping and well thought-out. In the center of the spa floor lies the World Spa Lounge, a resort-like area next to the space’s indoor pool where patrons sip and bite while cozy their robes. The menu is expansive: aside from salads, sushi and oysters, the cocktails range from the fruity and tropical (Sea Breeze, Sex on the Beach, Tequila Sunrises) to the classy (Bellinis and Martinis, including the Espresso and French variations).

Not wanting to get ahead of myself, I order a crisp Riesling and take in the ingenuity of the place. I feel like I’m on a vacation, even though I’m deep in the Big Apple borough of Brooklyn; beyond these walls lie a creaky elevated train line, dingy warehouses and old school Italian shops and restaurants. In other words: Brooklyn without the gentrifiers.
 

 

My glass of Riesling is delicious, which stands to reason considering World Spa also boasts a wine cave which appears full to the brim with variations and blends from all over the eponymous world. To boot, there’s also a fancier restaurant upstairs which I’ll plan to partake on my next visit.

To balance out the alcohol, I slam an espresso and it’s time for my next treatment: a hydrafacial where my pores are thoroughly cleaned out using a humming machine out of The Jetsons. While my face wasn’t necessarily moldering before my treatment, I leave with my forehead, nose, and cheeks thoroughly squeaky clean.

 

 

I finally leave at 8pm and even though it feels like I just arrived, I first walked in at 2pm. I guess time flies when you’re being pampered while enjoying cocktails, but that’s what happens when you’re a Chilled writer visiting a spa. Don’t pity me, however: it’s a hard job, but I’m happy to take one for the team.
