Porchlight Offers Southern Charm in New York City’s Hudson Yards

Located a stone’s throw away from the newly developed Hudson Yards in New York is Porchlight, a bar with Southern ambience rich in warmth and comfort.

While a sense of familiarity throughout the space draws in locals day by day, other visitors make the trip out to the west side to experience Porchlight’s thoughtful charm. What makes the place so special is how every guest can feel like they are part of the party.

“Guests can expect to be enveloped in our hospitality from the minute they arrive. The staff is there for our guests before they know it. Whether it’s an informal get-together after work, first date or a going-away party, the atmosphere at Porchlight is vibrant and upbeat while also laid back and welcoming. The idea we always come back is, we like to have fun here,” adds Beverage Director Benjamin Brown.

The rest of the fun comes from the extensive cocktail program set forth by Brown and the former Beverage Director, Nick Bennett. Equipped with a sprawling selection of over thirty concoctions, the program is built on the team’s foundation of “taking what they do seriously but not themselves too seriously.”

On the first page of the menu, guests will come across seasonal offerings utilizing ingredients and themes of the moment, giving them the opportunity to give something new a whirl. The remainder of the menu is evergreen, understanding the importance of a guest’s usual drink and honoring the meticulous work that’s gone into creating these drinks that have stood the test of time.

The former and current Beverage Directors share a penchant for carefully-made retro beverages enhanced by fresh spins. Delving into the shared passion and how its reflected in the menu, Brown explained, “Our curiosity with retro drinks stems from their inherent structure. These drinks, similar to Charlie Brown’s Christmas tree, just need a little love. Our Long Island Iced Tea on draft, for example, takes the format from the original of using vodka, gin, rum, and tequila, but Nick gave this drink lots of love by creating beautiful citrus and cola syrups to replace the less-loved sour mix and cola product. These ingredients give that extra love back to the original recipe and therefore challenge our notion of what a Long Island Iced Tea should and could be.”

Falling into the same category are Porchlight’s crafted versions of a 7&7, Cosmopolitan, Salty Dog, and Wisconsin Brandy Old Fashioned. The bartending staff’s passion is guiding guests to these liquid delights in hopes to ultimately exceed their expectations.

When making a modified retro beverage of your own, Brown emphasizes the importance of structure and integrity. “The Long Island Iced Tea example showed us to first look to where flaws lie and then we can start to brainstorm creative ways to bridge that into something playful and delicious. We like to think outside the box and ask ourselves, “Who Wrote The Rule?” Just because a drink has not always been well made, why couldn’t it be?”

Classics are iconic for a reason, but when the proper steps are taken to discover untapped potential, new masterpieces can be conceived. This is the Porchlight way.

Drive-In Old Fashioned

Ingredients:

  • 2 oz Butter-Washed Wild Turkey 101 Bourbon*
  • 1/4 oz. Corn Tea Syrup**
  • 3 drops saline
  • 1 dash Bittermens Transatlantic Bitters

Preparation: Build ingredients in rocks glass/Quick stir with ice. Garnish: Skewered cherry

*Butter-Washed Bourbon

  • 300g. Unsalted butter
  • 1 L. Wild Turkey 101 Bourbon

Gently melt butter taking care not to brown. Mix with Bourbon stirring occasionally for 2 hrs. Put in freezer overnight. Remove solidified butter and strain until clear

**Corn Tea Syrup

  • 100g. Corn Tea (10 packs)
  • 1000mL water

Brew with water just off boil for 5 minutes/strain. Add equal parts by weight white sugar and stir until dissolved.

The Planetarium

Ingredients:

  • 1 oz. Vodka
  • 1/2 oz. Linie Aquavit
  • 1 oz. Cold Brew Concentrate

Preparation: Build ingredients in mixing tin, shake, strain into a Nick & Nora.

*Root Beer Syrup

Heat 12 bottles (144 oz.) of Fitz Root Beer on high until it begins to boil. Reduce to medium maintaining a lively simmer until the root beer reduces to ¼ its original volume (36 oz.). Add 360g. White granulated sugar and stir until dissolved.

The Spackler

Ingredients:

  • 1 1/2 oz. Vodka
  • 1/2 oz. Vanilla Syrup
  • 1/4 oz. Crème de Peche
  • 1/4 oz. Falernum
  • 3/4 oz. Lemon

Preparation: Build ingredients in mixing tin/shake and strain in Collins glass. Top w/ Iced Tea.

Nightswimming

Ingredients:

  • 1 3/4 oz. Bombay Dry
  • 3/4 oz. Banana Syrup
  • 1/4 oz. Orgeat
  • Bsp. Branca Menta
  • 1/2 oz. Lemon
  • 2 dash Absinthe
  • Ice: pebble

Preparation: Build ingredients in mixing tin. whip shake, strain, top w/ 6 dashes Peychaud’s in 17 oz. Beer Glass

Golden Hour

Ingredients:

  • 1 part Basil Hayden® Kentucky Straight Bourbon Whiskey
  • 3/4 part Lillet® Blanc
  • 3/4 part Aperol® Aperitif
  • Grapefruit Peel

Preparation: Combine ingredients over ice in a mixing glass. Stir thoroughly. Strain into a chilled cocktail glass over a large ice cube. Garnish with a grapefruit peel.

Fool’s Gold

Ingredients:

  • 2 parts Basil Hayden® Kentucky Straight Bourbon Whiskey
  • 
3/4 part Fresh Lemon Juice
  • 1/2 part Limoncello
  • 1/2 part Simple Syrup
  • Lemon Wheel
  • Fresh Sage

Preparation: Combine all ingredients in a cocktail shaker with ice. Shake vigorously. Strain into a rocks glass. Garnish with a lemon wheel and fresh sage.

Bourbon Punch

Ingredients:

  • 1 750mL bottle Basil Hayden® Kentucky Straight Bourbon Whiskey
  • 1 cup Sweet Vermouth
  • 1/2 cup Sugar
  • 1/4 cup Orange Liqueur
  • 20 dashes Angostura® bitters
  • 1 cup Tart Cherry Juice
  • 2 cups Soda Water
  • 2 Oranges, sliced into wheels
  • 1 tsp Ground Cinnamon
  • Ice

Preparation: Combine sweet vermouth, Angostura® bitters, sugar and ground cinnamon in a pitcher or punch bowl. Stir until sugar is dissolved. Add the rest of the ingredients (except soda) and stir to combine. Top with soda just before serving.

Pumpkin Spice Spritz

Ingredients:

  • 1.5 oz Wonderbird No. 61
  • .5 oz Lemon Juice
  • 2 tsp pumpkin puree
  • ¼ tsp brown sugar
  • Pinch of cinnamon
  • Hard Apple cider, to top

Preparation: Combine all ingredients in a shaking tin except for the cider. Shake and double strain into a coupe or martini glass. Top with hard cider. Garnish with lemon peel or apple slice. Enjoy!

We Ask Head Bartender Trevor Langer The Story Behind His Cocktail Creations

Originally from the Northern suburbs of Illinois, Head Bartender Trevor Langer has flexed his mixology knowhow at some of NYC’s most iconic bars, including Employees Only, Dear Irving, and Slowly Shirley.

Currently at Jac’s on Bond (NoHo, NYC), Langer brings a genuine and deep-rooted passion for the beverage industry, serving balanced and refreshing cocktails. Along with being a naturally gifted bartender, his playful and entertaining presence breathes life into his work setting.

Trevor’s strengths behind the bar revolve around both efficiency and creativity. While he’s whipping up tasty beverages, he makes sure to waste no movements while still expressing every ounce of his imagination.

When it comes to creating new drinks, Langer usually tackles spontaneous ideas that surface naturally. In the instances he is pressed for time, he instead falls back on what intrigues him the most in the moment.

Reflecting on his methods, Langer said “For instance, a product I love is Chocchi Dopo Teatro, which is an Italian Movie Theatre style Vermouth Amaro. It has notes of popcorn and chocolate and is amazingly bittersweet. I thought let’s make a movie theatre Martini, I made a popcorn infused rum, and mixed that with the Dopo Teatro, and this beautiful cinnamon liqueur, added a pinch a salt and the Rum-Com at Jac’s on Bond was born.

Being generic is something he wants to stray away from as a mixologist. By using experimental flavors like the Vermouth Amaro just mentioned, Trevor is able to keep his drinks fresh and exciting. One of his favorite creations is the Caprese Martini. His love for Caprese salad and imbibing inspired this beauty of a beverage.

“When it comes to “experimental flavors” I just pick from things I enjoy that I haven’t seen on the menu before and think “How do I get that in a glass.”

Currently, fortified wines are his favorite ingredients to play around with. He uses multiple expressions that have a vast array of flavors and mouthfeels.

To his fellow mixologists in the field, Langer offered some words of advice. “You just must like what you do. Bartending was a side gig for me until it wasn’t, as it goes for many. That’s mainly due to me finding more enjoyment doing this than what I was pursuing as my “A” career before. Progression comes naturally at that point.”

Lobster and Martini Bar at Palazzo Avino

Enjoying wine in Italy obviously comes with the local territory, but sometimes a perfect cocktail night can make for a worthy break from all those reds and whites. Over in Ravello lies the opulent Palazzo Avino, a family-run property known for its classy atmosphere (including a recent collaboration with fashion house Valentino) and known to locals as the Pink Palace thanks to the trademark building’s pleasant hue.

That opulence extends to its outdoor Lobster and Martini bar which offers over 100 variations on the classy cocktail. That includes six variations of a dirty martini alone, including a Hot Dirty (made with Pepperoncini), a Balsamic Dirty (with a splash of the vinegar) and a Cetera Dirty (outfitted with regional anchovies). A historic eatery in a tourist mecca:

Ristorante Le Tre Sorelle

The base of the bustling tourist mecca known as Positano is one of the most-photographed places in the country thanks to its picturesque buildings that cascade down the local cliffs which flank the sparkling sea. As a result, more than anywhere else on the Amalfi, you’ll find more tourists than locals. That doesn’t mean the seaside here is full of tourist traps, though.

Ristorante Le Tre Sorelle (which translates to The Three Sisters) has been a staple in the hectic area since 1953 and here one can order a wood-fired pizza or seafood al fresco while you gaze out onto the masses in front of you. Alongside your meal, order up a Campari Spritz (just like Aperol but with that other Italian hallmark) and finish your meal with both a espresso and sambuca (concocted together and aptly named Cafe Corretto). Bella Italia, indeed.
