A Recap of Mohegan Sun’s First Annual Sun Patio Tree Lighting with Special Guest Frankie Valli!

Over the weekend, Mohegan Sun welcomed the holiday season with the First Annual Sun Patio Tree Lighting.

This past Friday, December 1st, from 5:00pm – 7:00pm, guests of all ages witnessed pure magic as Mohegan Sun lit up the night at the newly-renovated Sun Patio with an event hosted by shining star and true American legend, Frankie Valli! Delectable treats and complimentary hot chocolate, tea and coffee were available, including a decadent Baileys Chocolate Cocktail at the Sun Patio Bar.

After his appearance at the First Annual Sun Patio Tree Lighting, Frankie Valli and the Four Seasons brought their iconic hits to Mohegan Sun Arena for “The Last Encores” tour at 8:00pm. Frankie Valli and the Four Seasons are one of the most beloved groups in Pop music history, selling more than 175 million records worldwide. Known for songs like “Sherry”, “Walk Like A Man”, “Big Girls Don’t Cry” and more, the group continues to tour throughout the US and abroad to packed houses of thrilled fans from multiple generations.

Mohegan Sun Arena has a holiday entertainment lineup that guests won’t want to miss. Recapping Chilled 100 ELEVATE: The Complex Journey of a Garnish with Chris Muir of Wild Hibiscus

Chris Muir, Operation Manager for North America for Wild Hibiscus, was the presenter for this seminar. He took us on a fascinating journey through the growth and production of the garnishes we take for granted served with our specialty cocktails.

Wild Hibiscus is a family business owned and operated by Lee and Jocelyn Etherington. With the help of Lee’s two brothers, who manage the production, and a team of international distributors in Thailand, Europe, the UK, and North America, they help deliver Wild Hibiscus to 50-plus countries.

Why was Wild Hibiscus formed?

At a dinner party in Australia, Jocelyn dropped a hibiscus flower into a glass of champagne. Guests started commenting on how fun it was to watch the hibiscus unfurl in the glass. It sparked an idea. Lee created the first bottle of hibiscus flowers in syrup in 1999.

Lee developed a way to use a mixture of spring water and Australian cane sugar, which keeps the flowers perfectly candied for more than 36 months. A special note from this article’s author. In 1911, I launched my first book. At the reception, I added hibiscus syrup to the champagne and got the same reaction.

The Journey

Bush Tucker is a term used for food traditionally used by native Australians. Hibiscus is one of those foods which can be found everywhere in Australia.

Great care is taken to ensure the farmers selected to grow the hibiscus understand their culture will be honored and that they will profit from growing the plants. Wild Hibiscus is pleased to employ women, who comprise sixty percent of their workforce, approximately 150 women.

The farmers are provided the seed, which takes five weeks to mature. Thus, five to six crops a year can be planted in the same field. After five years, lemon grass is grown in the fields to help nourish the soil and help control the bugs. Sustainability is foremost in the company’s mind.

Bottling the Garnish

  1. Hibiscus are graded, and all damaged flowers are removed.
  2. There are three stages of washing.
  3. They are frozen.
  4. The blossoms are hand-packed into jars and receive a hot water bath.
  5. The bottles are labeled and prepared for their journey to places worldwide.

The Distributor Place Orders

The job definition of the Distributor is to educate people and share the story of the farm-to-bar process. Their orders to identified clients are then shipped.

Today, there is a glitch and a primary concern of their company. Much of the product is shipped through the Panama Canal. The freshwater used in the Panama Canal is getting scarce. Today, only 35-40 ships a day are getting through the canal, with an expectation that by 2024, 12 ships will be able to do so.

The costs of shipping containers from Thailand to the United States East Coast are increasing. It results in the items needing to be shipped to the West Coast ports, which are already burdened with waiting cargo ships in the harbors. Once loaded at the West Coast ports, they must be sent by freight across the United States to fill East Coast orders.

The Future

Not to be deterred, the company continues to branch out and is now growing Butterly Pea Flowers. They grow fast and are renowned for helping to improve soil. The flowers are hand-picked, bagged, and dried on tables in drying rooms. The Butterfly Pea Flower is highly valued for its health benefits and is used in cosmetics.

While experiencing some challenges, not unlike unique garnishes used by bartenders, companies like Wild Hibiscus are and will continue to develop innovative approaches to the challenges the world presents to them.

We’re Recapping Elevate 2023! With BarSmarts

Led by BarSmarts administrator Michael Parks and Kevin Denton Rex, head of mixology and education at Pernod Ricard USA, the BarSmarts as a Management Tool seminar covered the BarSmarts online program.


Created by bartenders for bartenders, the program was founded in 2008 and built to cater to people at all levels. The two-and-half hour BarSmarts Basics program teaches fundamentals, offering a way for users to certify their ability to make and serve classic drinks while gaining inspiration by others in the trade and learning meaningful skills to improve their bar service. The BarSmarts Professional program is five hours long and takes learning one step further, encouraging users to explore additional ingredients and techniques while learning the secrets of great hospitality from industry experts. Both parts of the program are broken up into modules with estimated time commitments, so bartenders can effectively manage their pace.

A glossary of bar terms in both English and Spanish are included, though the program doesn’t demand copious amounts of reading. Instead, users gain knowledge through short videos and snippets that cater to the way people consume information today. Registration comes with access to interactive content that allow users to gamify their BarSmarts experience by unlocking badges and building their personal profile’s “Back Bar.”

Also included in BarSmarts is The Bar World of Tomorrow, which covers knowledge and ideas for a more sustainable bar culture. The course covers topics like sourcing fresh ingredients, saving water and energy, and dealing with waste.

Staff-certified BarSmarts accounts allow managers to register their entire team and utilize the courses as both a management tool and incentive. Multi-venue support is available, and intuitive reports help managers track progress and see where they can best offer support to their employees.

All these BarSmarts courses—which Rex promises will “never be more expensive than a bottle of Jameson”—are available for $29, though ELEVATE attendees were given a promo code for free access.

We’re Recapping Chilled 100 Elevate 2023! Opening Night at Meta

Oh what a night! What a great way to kick off the Chilled ELEVATE 2023!

An evening at Meta – Louisville’s oldest craft cocktail bar and the place to be for innovative cocktails in an eclectic space. Sponsored by The Perfect Purèe and led by their Ambassador, De’Qustay Johnson, we kicked off the night in style with great food, old (and new) friends, fantastic ambiance, and of course, expertly crafted cocktails from the talented bartending staff at Meta.

We got the evening rocking with music by Matt Anthony from Dirty Vinyl, and kept the vibe going with three Perfect Purèe based drinks that were both delicious and creative and definitely made it hard to choose a favorite.

The Satoshi Spritz combined the Perfect Purèe Yuzu Luxe sour with Ichiko Shochu, Roku Gin, Mio sparkling Sake, crushed ice and was topped with a Maurin float.

The Lowrider showcased the Perfect Purèe sweet ginger with Suau Spanish Brandy, Old Forester 86, Contratto Fernet and an orange peel twist.

Thrillhouse had both an alcoholic and non alcoholic version, based on your preference. <em>(Honestly, both options were impressively delicious and we loved the option of an alcohol free drink crafted with as much care as it’s alcoholic version)</em> Choosing either Ritual Tequila Alternative or tequila, the cocktail was then built with the Perfect Purèe Chipotle Sour, lime, and umami syrup.

Billing itself as “The fanciest dive bar or the diviest fancy bar you’ve ever been to”, Meta holds true to its value of being a bar for everyone. The atmosphere is relaxing, diverse, and unique. The staff are professional, engaging, and knowledgeable. If you’re ever in Louisville, make a point to stop by Meta. It was definitely the perfect place to launch this year’s Chilled ELEVATE event.

Frozen Banana Pudding

Ingredients

  • 1.75 L banana bread beer syrup*
  • .750 L Giffard banana liqueur
  • .750 L Brandy
  • .750 L bourbon
  • 5-7 over-ripe bananas
  • 1.5 L whole milk
  • Splash of banana extract
  • Nilla wafers for garnish

Preparation

  1. Blend bananas and milk together. Combine the banana and milk mixture with the rest of the ingredients and blend with an immersion blender.
  2. Add the mix to a frozen ice machine.*
  3. Turn on and wait an hour and a half, or until the mixture is creamy.
  4. Pour into a glass and garnish with whipped cream, sliced bananas, and Nilla wafers.

Additional Notes

*The same consistency can be achieved by adding the mixture to an ice cream/sorbet churner.

Merry & Bright

Ingredients

  • 1 1/2 oz. Dewar’s 12-Year-Old
  • 3/4 oz. Lime Juice
  • 1/2 oz. Vanilla Bean Syrup
  • 2 tsp. Fig Preserves
  • Top with Martini & Rossi Sparkling Rosé

Preparation

  1. Shake ingredients (sans bubbles) and strain into glass over fresh ice.
  2. Top with bubbles.
  3. Garnish with thyme sprig and fresh fig slices.

Ingredients

  • 2 oz. Dewar’s 12-Year-Old​
  • 3/4 oz. Tempus Fugit Crème de Banane Liqueur​
  • 2 tbsp. Hot Buttered Dram Batter*
  • Top with Hot Water​

Preparation

  1. Add ingredients to glass and top with hot water.
  2. Stir to combine.
  3. Garnish with cinnamon stick.

Hot Buttered Dram Batter*


Ingredients

  • 1 lb. butter, softened to room temperature
  • 1 lb. light or dark brown sugar (replace up to 1/2 lb. with confectioner’s sugar)
  • 1 tbsp. cinnamon​
  • 1 tbsp. nutmeg​
  • 1/2 tsp. ground cloves​

Preparation

  1. Add butter, sugar and spices to a stand mixer or mixing bowl and combine until all ingredients are evenly incorporated.
  2. Store covered in the refrigerator.​
