We’re Recapping Chilled 100 ELEVATE 2023: Agave for All!!

The Agave for All seminar, brought to ELEVATE by Proximo Spirits and Southern Glazers Wine & Spirits, included an intro to tequila, including its origins from the agave plant and how it influences the industry today.

The spirit’s roots date back to 1532, when the Spanish moved north into Mexico and encountered native people known as the Tiquili. Their lands were filled with the blue agave succulent, tequila’s principal ingredient.

In 1600, the Marquis of Altamira built the first commercial distillery in the town of Tequila, near present-day Jalisco. By 1893, after what was dubbed “Mezcal brandy” won numerous awards and praise at the Chicago World’s Fair, vino de Mezcal de tequila was renamed Tequila to help distinguish it from other mezcal wines that were produced in other parts of Mexico. Tequila had officially arrived.

The Margarita made its way onto the scene in 1936, after a barkeep named Madden supposedly made an accidental tequila swap while crafting a Brandy Daisy. As the tale goes, the Irishman’s version of the Daisy—or margarita, in Spanish—became a local favorite. Jose Cuervo’s advertising brought the margarita mainstream by 1964, and today, it is America’s most popular cocktail.

In 1974, “tequila” became the intellectual property of Mexico, and four years later, it was the first Mexican product to receive an appellation of origin. In 1994, the regulation of tequila was transferred from Mexico’s commerce department to the new El Consejo Regulador del Tequila—and both tequila and mezcal remain the world’s sole spirit category that can only be produced in a single country.

By 2020, tequila’s market share was at an all-time high due to its popularity in the U.S. and around the world. It is now used every day for more than just basic margaritas and palomas, and numerous agave-focused bars are opening across the United States.

We’re Recapping ELEVATE 2023: Building your Personal Brand Seminar

“If we don’t define our own ‘personal brand’ for ourselves, other people will define it for us.” That was one of the powerful opening lines at the Building your Personal Brand seminar held during our Chilled Elevate 2023 event.

Industry marketing and PR professionals Anastasia Tarasova, Greg Cohen, and James Curich gave an in-depth view into learning and recognizing your values and strengths, capitalizing on your passions, and crafting your personal brand into something you can use to propel yourself to the next level in your career.

It may seem like simple logic, but the truth is not everyone does what it takes to get where they want to be, regardless of their desire to achieve certain goals. Getting organized, staying focused, and putting into place some proven strategies are key to building your own success, on your own terms.

Begin by defining how people will see you. Have you thought out what you want your “personal brand” to look like? Once you are clear on who you want to be seen as – Train. Learn. Show up. Build a strong network, and most of all – be consistent.

Next – Determine your purpose. What do you want people to think about when they think about you and your business/brand? Take the time to write that out. Define yourself in one “elevator pitch” sentence that sends a clear and concise message about you.

Now that you understand what you want for your image and goals—Move! Put yourself out there and work at it every day. Be specific and thoughtful in your actions, both in life and on social media. Take the time to celebrate others—cheering on their successes, efforts, and accomplishments. Do the work that needs to be done. Ask others in the same field as you how things look – and be ready to accept their honest feedback. Assess and reassess as you move forward and grow. Never stop learning, on your own and from the people around you.

In short, show up for yourself, every single day. Become the “go to” person in your field, proving what a valuable asset, you are. Keep your focus, staying true to your highest standards and you will be able to build your brand and control your own legacy.

We’re Recapping ELEVATE 2023: Jim Beam Distillery Tour & Ice Carving Class

ELEVATE bartenders were treated to a tour of James B. Beam Distilling Co. in Clermont, KY. The interactive experience took attendees through the company’s entire bourbon-making process, offering a behind-the-scenes look at how the brand has been churning out whiskey for more than 200 years.

It’s a method that starts with a specific mash bill and Kentucky’s limestone-filtered water, and wraps up in an aging process that is twice as long as the law requires. Giving it at least four years in the rickhouse — as opposed to the mandated two — allows the bourbon to extract its caramelized sugars, oak flavor, and golden-brown color.

Attendees also received a peek into House of Suntory’s Dojo program. Corey Galotta, brand manager of Courvoisier and House of Suntory East, explained that the exclusive program covers the art of Japanese bartending, hospitality, craftsmanship, and culture.

As part of this hands-on preview, Hidetsugu Ueno, world-renowned bartender and owner of Bar High Five in Tokyo, traveled to Kentucky to give ELEVATE attendees a live ice carving tutorial. After Ueno demonstrated hand carving an ice ball and shared tips and tricks of the trade, bartenders threw on gloves and used their own sets of tools to craft an ice sphere. The balls were served in a glass with Legent, so attendees could taste the one-of-a-kind Kentucky straight bourbon whiskey.

“Legent is the latest addition to the House of Suntory portfolio,” Galotta said. “It is a Kentucky bourbon [made] with Japanese craftsmanship and blending principles.”

Partially finished in wine and sherry casks, Legent is a collaboration between two industry legends: Jim Beam’s seventh-generation master distiller Fred Noe, and Suntory’s fifth-ever chief blender, Shinji Fukuyo. The result of their joint effort is a balanced and rounded bourbon that starts off rich, warm, and oaky. But like a Japanese whisky, it also features complex layers and a smooth finish.

We’re Recapping ELEVATE 2023: Four Roses Distillery Tour Does Not Disappoint

One of the highlights of the Chilled 100 ELEVATE are the tours to the distilleries.

Boarding buses offer an opportunity to have conversations with other attendees. At the same time, you travel through the Kentucky countryside and can see the rolling hills. This year, we had the added pleasure of seeing the fall leaves showing their brilliance under the Kentucky sunlight.

We arrived at Four Roses Complex in Lawrenceburg and were graciously greeted by the staff, who ushered us into their relatively new educational and retail space. Waiting on the large bar were espresso cocktails. With cocktails in hand, we browsed a bit in the retail department of the building.

Then, we were divided into two groups. Group 1 immediately went on the distillery tour, while Group 2 entered the educational room where bourbon tasting was set up.

Group 1

Headphones are provided for every individual to enhance the ability to hear your guide above the roar of the machinery in the distillery. Walking down the hill to the distillery, we passed the original buildings. The buildings are on the National Registry of Historic Places for its yellow Spanish Mission architecture, an unusual site in this part of the country.

Continuing down the path, we walked outside the building where the mash is delivered and where waste from the brewing is saved until farmers come to claim it for their fields. Sustainability remains a guiding force in the brewing process.

The yeast, the most valuable and guarded component of bourbon processing, bubbles in various stages in large open tanks within the building. The process always begins with a descendant of the original yeast. You can smell it, taste it, and take photos and videos. Water is still obtained from the original source, the Salt River.

All the while, your guide shares the stages necessary to produce award-winning bourbon. Once you complete the approximately 45-minute tour, you head up to the main building for tasting.

Group 2

The large room had four bourbon samples on each labeled placement and a package of oyster crackers. We found our place and listened to the company’s history.

Factoids:

• Four Roses was named because Paul Jones Jr. proposed with a four-rose corsage in about the 1850s.
• After Prohibition, Seagram’s bought 4 Roses.
• Europe is their biggest market.
• They have 25 warehouses, which are long and wide, so barrels do not have to be stacked high. This building construction helps eliminate temperature fluctuation from the ground to the top barrel.
• Barrels are charred for 45 seconds only before the aging process begins.

• Four Roses Small Batch Select Bourbon – 104 Proof/Aged 6-7 years.
• Four Roses Single Barrel Bourbon – 100 Proof/Aged 7-9 years.
• Four Roses Small Batch Bourbon—90 Proof/aged 6-7 years.
• Four Roses Bourbon—80 Proof/Aged Minimum of 5 years.

The distillery tour, the bourbon tasting, and learning about the history led to one thing left to do: shop. We headed into the expansive and well-appointed displays with everything from Four Roses Bourbon to glassware to sip from.

With our purchases in hand, we headed to the buses. The staff with a special gift was waiting for us at the door. The gift was a bartender’s backpack, rugged, well-padded by the Cocktail Kingdom, adorned with the Four Roses logo.

Back on the bus, it was nap time. We knew in the afternoon; we would have the opportunity to attend more outstanding seminars organized by the conference planners at the Brown Hotel.

Kevin Hart’s 24k Margarita from his Watch What Happens Live Appearance!

Last week, Gran Coramino’s founder Kevin Hart appeared on Bravo’s Watch What Happens Live with Andy Cohen.

The appearance was in celebration of Kevin’s new movie “Lift” which premiered on Netflix on January 12th. During the show, Gran Coramino’s “Bartender of the Year” Chai Lee was behind the bar and created the 24k Gran Coramino Margarita.

24k Gran Coramino Margarita

Ingredients

  • 2 oz. Gran Coramino Cristalino
  • 1 oz. Lime Juice
  • 0.5 oz. Agave Syrup
  • 0.25 oz. Ginger Liqueur 
  • 0.25 tsp Gold Brew Glitter
  • Rock Sugar, Brew Glitter & Lime Wheel, for garnish

Preparation

  1. Mix glitter & rock sugar on a small plate.
  2. Moisten half of a rim of a rocks glass with lime juice, then dip in glitter/sugar mixture to coat.
  3. Fill glass with fresh ice and set aside.
  4. Combine Gran Coramino Cristalino, lime juice, agave syrup, ginger liqueur and glitter in a cocktail shaker.
  5. Fill shaker with Fresh ice, cover and shake for about 20 seconds.
  6. Strain cocktail into reserved rocks glass.
  7. Garnish with a lime wheel, enjoy!

ELEVATE bartenders and presenters took a break between seminars to taste Redbreast Whiskey, which is produced by Irish Distillers Pernod Ricard.

Kevin Denton Rex — head of mixology and education at Pernod Ricard North America and the executive director of BarSmarts — offered pours of the brand’s signature bottling, Redbreast 12. “It’s Irish whiskey from Midleton Distillery,” he explained. “It’s 100% pot still, so it’s oilier and full of flavor.”

Single pot still whiskey is crafted from a mash of both malted and unmalted barley that is triple distilled in copper pot stills. It is unique to Ireland and known as the quintessential style of Irish whiskey.

After distillation, Redbreast 12 is matured in a combo of Oloroso sherry seasoned Spanish oak butts and bourbon seasoned American Oak barrels to create a whiskey with a spicy and fruity aroma that features touches of toasted wood. It is full flavored and complex, with a silky finish that boasts a balance of sherry, spicy, fruity, and toasted notes.

Redbreast 12 launched in 2011 and has won multiple awards, including Gold at the 2014 World Whiskies Awards for Irish Pot Still Whiskey 12 Years and Under and Master at the 2019 Irish Whiskey Masters for Irish Single Pot Still. Red Breast 12 was also awarded Gold Outstanding at the 2019 International Wine & Spirit Competition for Irish Whiskey. This was the competition’s highest honor; an achievement accomplished with an impressive 98 points.

Redbreast is the largest selling single pot still Irish whiskey in the world, with an origin that dates to 1903. Its name comes from the European Robin, otherwise referred to as Robin Redbreast, a bird that is native to Ireland and known for its distinctive red-orange plumage.

Redbreast’s current collection includes a 15 Year Old, its Lustau Edition, a 12 Cask Strength, a Single Cask 20 Years Old, and a Tawny Port Limited Edition.

We’re Recapping Chilled 100 ELEVATE 2023! Tropical vs Tiki

Topical versus Tiki was a fun and informative seminar led by Daniele Dalla Pola.

A definite passion for rum, life, and all things tropical was evident as Daniele taught us the differences between these two types of cocktails, while also mixing us up a few delicious drinks to sample throughout our class.

A decades-long career has certainly made Daniele an expert on authentic Tiki culture. A master Tiki Mixologist with a passion for all things rum, Daniele is the owner of Esotico Bar in Miami, as well as Kaona Room—a “Speaky-Tiki”—which is a fun modern twist on the traditional speakeasy.

During our seminar, we covered a variety of topics, including the difference between a tropical drink and a tiki drink. Though both tropical drinks have a lot in common, I think we could agree that while all tiki drinks are tropical, not all tropical drinks are tiki. Typically, tropical drinks are made from fresh, fruity ingredients. They are light and refreshing to drink, and many of them tend to be rum based. For instance, a simple blend of pineapple juice, coconut cream, and rum gives you a Piña Colada.

A tiki drink adds a complexity of layers into the mix. A magic formula of sweet, sour, spice, and creativity. An example of a popular tiki drink would be the Mai Tai. A delicious blend of light and dark rum, fresh lime juice, orange liqueur, and Orgeat syrup. Other well-known tiki drinks include the Navy Grog, the Zombie, and the Rum Runner.

The Daiquiri is widely considered the father of all tropical and tiki drinks. Since the original daiquiri was created in 1898, the variations have been endless, including the famous Hemingway Daiquiri, named for Ernest Hemingway who fell in love with them during his travels.

Seeing a growing trend in this category, tropical and tiki drinks are indeed having a moment to shine in the current drink scene. It was impossible to leave this seminar and not want to find the nearest bar and have a tropical versus tiki taste test!
