Drink in History: The Hanky Panky

By | Mixology News

What do witchcraft, a woman barkeep, and the Prince of Wales all have in common?

You guessed it: our featured cocktail, the Hanky Panky, made of gin, sweet vermouth, Fernet-Branca, and an orange twist served up in a Martini glass or coup. Born at The Savoy Hotel’s American Bar in London, the Hanky Panky was created by Ada Coleman.

Yes, you read that right. A female bartender concocted the Hanky Panky. Coleman, aka “Coley,” as her celebrity clients called her, worked her way up as head bartender in 1903. Working there for more than two decades, she was the first and last female head bartender at American Bar, Britain’s oldest surviving cocktail bar that dates back to 1893.

Known for delighting even the most discriminating clientele like Mark Twain, Marlene Dietrich, the Prince of Wales, and Charlie Chaplin, Coleman was inspired to create the tipple for comic actor Charles Hawtrey when he came into the bar after a long day and asked for a drink ‘with punch.’

“[He] was one of the best judges of cocktails that I knew,” Ada Coleman is quoted as saying in the 1925 edition of The People newspaper. “It was for him that I spent hours experimenting until I had invented a new cocktail,” she said.

The next time the comedian came in, she stirred up her punchy creation and served it. First, he sipped it. And then proceeded to drain it down, proclaiming, “By jove! That is the real hanky-panky!” The name stuck, and the rest is history. Interesting to note: In those days, the term ‘hanky panky’ wasn’t associated with sex or shady dealings. It simply referred to trickery or magic.

The first time the Hanky Panky appears in print was in the 1930 cocktail book, The Savoy Cocktail Book by Harry Craddock (also, her successor as head barkeep at the hotel bar).

No doubt, Ada Coleman probably created dozens if not hundreds of cocktails during her time at the American Bar, but the Hanky Panky is what she’s known for. And yes, her legacy lives on.

Rumor has it they serve it two ways: Coleman’s original recipe and a barrel-aged Hanky Panky with four types of gin.

We can just imagine Ada looking down proudly and seeing how far the bar profession has come—not only embracing but celebrating women’s contributions. And for that, we raise a glass to Ada Coleman and her iconic glass ceiling-cracking legacy.

Meet San Antonio’s Ladino Bar Director Kate Houser

By | Mixology News

Kate Houser’s first rodeo in the hospitality industry dates back seven years ago, when she began working as a cocktail server in some high-volume craft bars located in Nashville.

From that point forward, her interest in the field never stopped growing and she gradually worked her way behind the bar.

After developing a formidable cocktail-creating skillset, she moved back to Austin. There, she started her journey with Emmer & Rye Hospitality Group as a bartender at both of their establishments, Kalimotxo and Hestia. Today, she is in charge of crafting the cocktail menus for all of E.&R.H.G’s concepts, including the two just mentioned, and Ladino, their only San Antonio location.

The bar at Ladino boasts a charming and exciting atmosphere, making it an ideal date night spot. The drinks are playful, the bartenders are knowledgeable and friendly, the mood is uplifting, and the lighting is on point.

When creating the beverage program for this modern Mediterranean grill house, Houser’s goal was to offer drinks that aligned culturally and complemented the cuisine.

“I wanted the bar program to help create a sense of place by heavily featuring arak, raki and ouzo, and utilizing unquestionably Middle Eastern ingredients like şalgam, date molasses, cardamom coffee, etc.” she added.

Chilled asked Houser if she had any tips on running a successful drink program, and she was happy to give the following pointers.

  • Take care of yourself and your team. You can’t pour from an empty cup, and neither can your employees. Prioritize your health and having a life outside of work and encourage your team to do the same.
  • Become a pro at the financial aspect of your job.
  • Remember that this is supposed to be fun!

When the weight of responsibility becomes a bit too much, go back to the drawing board. Remind yourself of all the cool parts of your job, and let your passion lead the way!

As a bartender, Kate always valued the importance of self-awareness, humility, and curiosity. She believes all bartenders looking to advance in their field should work on developing these qualities. Mainly because having an elite level of expertise means nothing if no one wants to work or cooperate with you. Once healthy, trustworthy relationships are created with coworkers, she advises bartenders out there to ask themselves two key questions. One being “What am I best at?” and the other, “What areas do I still need to grow?”

Above all, she sees the greatest opportunity for growth as a mixologist by pursuing the subjects that are most intimidating. Once they can master what they fear the most, nothing can stand in their way.

Tony Arnone, Head Mixologist at The Barbershop Cuts & Cocktails, Bringing Bands, Beards, and Booze Together

By | Mixology News

The Barbershop Cuts & Cocktails at The Cosmopolitan of Las Vegas combines old-world barbering with a speakeasy-inspired cocktail experience.

Additional photos by David J. Crewe

Andy Masi, founder of Clique Hospitality, spearheaded the original idea and opened it in 2019, as a nod to the underground Prohibition-era speakeasies.

“It’s like stepping into a time machine, where top-notch grooming meets a killer cocktail program,” explained Paul Edgar, Senior Marketing Director.

The concept draws inspiration from the 1920s, blending classic whiskey culture with exclusivity. The Barbershop achieves excellence in both grooming and mixology by focusing on top-tier talent.

“We hire the best of the best—people who are pros at their craft,” noted Dave Severino, Director of Operations.

Staff regularly attend masterclasses in barbering and spirits to ensure they remain up-to-date on current trends. This relentless pursuit of quality is central to the venue’s identity, providing guests with unforgettable experiences, whether through a close shave or an expertly crafted cocktail.

Live music also plays a pivotal role in creating the venue’s atmosphere.

“Every night, we’ve got a live band, and the vibe shifts depending on the night of the week,” Edgar shared.

These themed nights include Sunday crowd-sourced setlists, “Faded Karaoke” on Tuesdays, and “Wild West Wednesday,” which mixes rock and country. The intimate speakeasy setting enhances the feeling of attending a private concert, making each night a unique experience for guests.

Whiskey is at the heart of The Barbershop’s cocktail menu, crafted by lead mixologist Tony Arnone. Signature cocktails, like the Mustache Ride, featuring Teeling Irish whiskey and Guinness, and the Six String Sling, served with a guitar-shaped ice cube, embody the venue’s rock ‘n’ roll spirit, no pun intended. The Bonnie + Clyde, a Bulleit rye cocktail served in a signed souvenir flask, reflects its blend of romance and memorabilia. The Barbershop’s intimate, secretive vibe has attracted numerous celebrities, with surprise performances by stars like Rod Stewart, Bruno Mars, and Anderson Paak. Guests such as Megan Fox and Simone Biles have added to the venue’s allure.

Embracing its Las Vegas roots, The Barbershop epitomizes the city’s blend of glamour and unpredictability. “Where else can you get a sharp cut and then catch a rock show, all in the same spot?” The Barbershop delivers a quintessential Vegas experience, making it a standout in the nightlife scene.

More than a Medal

The Chilled 100 Seal of Approval is a working bartender’s endorsement, which carries weight where it matters most.

Be Part of the Conversation

The Chilled 100 Spirits Awards puts your brand in front of the most influential bartenders in the business, and they all talk.

Valentine’s Day calls for something special, and Kiss From a Rose is the ultimate way to sip in style.

This stunning cocktail from Costera Cocina Tulum in Chicago, Illinois, is as enchanting as it is delicious, with a perfect balance of tropical sweetness and crisp refreshment. A smooth vodka base sets the stage for luscious passionfruit and juicy guava, while fresh lemon adds a bright, zesty lift.

“This cocktail is designed to feel like a celebration in a glass,” says Parker Hospitality beverage director Carla Lorenzo.

“The flavors of passionfruit and guava bring a bright, juicy sweetness, while the vodka and lemon keep it refreshing and balanced. And of course, the edible glitter and flower add that extra special touch—it’s Valentine’s, after all!”
