We Ask Head Bartender Trevor Langer The Story Behind His Cocktail Creations

Originally from the Northern suburbs of Illinois, Head Bartender Trevor Langer has flexed his mixology knowhow at some of NYC’s most iconic bars, including Employees Only, Dear Irving, and Slowly Shirley.

Currently at Jac’s on Bond (NoHo, NYC), Langer brings a genuine and deep-rooted passion for the beverage industry, serving balanced and refreshing cocktails. Along with being a naturally gifted bartender, his playful and entertaining presence breathes life into his work setting.

Trevor’s strengths behind the bar revolve around both efficiency and creativity. While he’s whipping up tasty beverages, he makes sure to waste no movements while still expressing every ounce of his imagination.

When it comes to creating new drinks, Langer usually tackles spontaneous ideas that surface naturally. In the instances he is pressed for time, he instead falls back on what intrigues him the most in the moment.

Reflecting on his methods, Langer said “For instance, a product I love is Chocchi Dopo Teatro, which is an Italian Movie Theatre style Vermouth Amaro. It has notes of popcorn and chocolate and is amazingly bittersweet. I thought let’s make a movie theatre Martini, I made a popcorn infused rum, and mixed that with the Dopo Teatro, and this beautiful cinnamon liqueur, added a pinch a salt and the Rum-Com at Jac’s on Bond was born.

Being generic is something he wants to stray away from as a mixologist. By using experimental flavors like the Vermouth Amaro just mentioned, Trevor is able to keep his drinks fresh and exciting. One of his favorite creations is the Caprese Martini. His love for Caprese salad and imbibing inspired this beauty of a beverage.

“When it comes to “experimental flavors” I just pick from things I enjoy that I haven’t seen on the menu before and think “How do I get that in a glass.”

Currently, fortified wines are his favorite ingredients to play around with. He uses multiple expressions that have a vast array of flavors and mouthfeels.

To his fellow mixologists in the field, Langer offered some words of advice. “You just must like what you do. Bartending was a side gig for me until it wasn’t, as it goes for many. That’s mainly due to me finding more enjoyment doing this than what I was pursuing as my “A” career before. Progression comes naturally at that point.”

Jac’s on Bond’s herbaceous and layered Caprese Martini is a lighthearted take on the classic Italian caprese salad, composed of Grey Goose Vodka, Lustau Blanco, Balsamic Vinegar, Pinch of Salt, and garnished with Skewered Cherry Tomatoes.
