Monin Americas Celebrates 20 Years with its influential CIO Todd Cummings

This March, Monin Americas celebrates the 20th Anniversary of its influential CIO, Todd Cummings.

Bringing together technology and business, Todd has guided Monin Americas through the ongoing digital evolution towards an international score of success. Monin—the premier provider of flavoring products to elevate specialty beverages and culinary solutions—has manufacturing facilities on three continents and product availability in more than 150 countries.

Todd, the developer-turned-IT-expert, provides insight into the integrated systems and solutions he has applied during his career at Monin Americas. Starting as a Navision Business Analyst at Monin in 2004, Todd climbed the ranks by demonstrating his skills and leadership abilities, becoming Monin’s Director of IT in 2008, VP of IT in 2014 and finally CIO of Monin Americas in 2017.

Over the past 20 years, Todd successfully implemented Microsoft Dynamics Navision User Group (NAV) Enterprise Resource Planning (ERP), a Warehouse Management System (WMS), Customer Relationship Management (CRM) software, a company Intranet, Targit Business Intelligence Software and a company-wide recipe database and lead app. Now, we celebrate 20 years of his successes.

Outside of his feats at Monin, Todd was previously the President of the Tampa NAV User group and was honored with the organization’s 2018 Sapphire Award. He’s also an Executive Member of Gartner and belongs to the Bay Area Manufacturing Association (BAMA).

Todd Cummings is the Chief Information Officer of Monin Americas. Todd has a passion for integrating technology and business to bring increased value to the organization. Starting in 2004, he has spent the last 20 years playing an instrumental role at Monin: helping guide the brand through the ongoing digital evolution. As CIO, Todd’s mission focuses on bringing cross-functional teams together to provide direction, consensus and solutions that drive value in the pursuit of organizational success. Since joining the Monin team, Todd has successfully implemented Microsoft Dynamics Navision User Group (NAV) Enterprise Resource Planning (ERP), a Warehouse Management System (WMS), Customer Relationship Management (CRM) software, a company Intranet, Targit Business Intelligence Software and a company-wide recipe database and lead app.

Todd began his career as an engineer, but quickly realized his passion was in IT where he could use his creativity to design large integrated systems to bring efficiencies and value to businesses. He has invented and implemented a variety of reporting systems for both Honeywell and American Tower Consulting, as well as consulted for the Duval County School Board.

Looking at community engagement, Todd has influence in the local and national tech space. He was the President of the Tampa NAV User group and was honored with the organization’s 2018 Sapphire Award.

Todd is also an Executive Member of Gartner and belongs to Bay Area Manufacturing Association (BAMA). Internally, he is a member of the Monin Americas Strategic Team, with this group being responsible for strategic capital investments.

Todd graduated from the University of South Florida with a bachelor’s degree in electrical engineering and a minor in computer science. Todd and his family enjoy playing soccer, scuba diving, spearfishing and playing guitar.

Check Out Who Attended Pairing Dinner with Codigo 1530 Tequila at STK LA

On National Margarita Day, media and influencers attended a pairing dinner with Codigo 1530 Tequila and Tequila Avion at STK Los Angeles hosted by Entertaining Expert Paul Zahn.

Zahn hosted a brief master class on both Codigo Tequila and Tequila Avion and lead a tasting prior to sitting for dinner. Guests sipped Cadillac Margaritas with Codigo 1530 Reposado Tequila and Skinny Margaritas with Codigo 1530 Rosa Tequila paired with some of STK’s signature dishes including tomahawk steak and jalapeno pickled shrimp.

After dinner, guests were treated to a pairing of Avion Reserva 44 Extra Anejo Tequila with STK’s iconic dessert board.

Attendees included Mixologist Mia Mastroianni of Bar Rescue on Paramount +, television host Stuart Brazell, Dan Magro, author of Suck It Up: Extraordinary Cocktails for Everyday People, among others.

Ole Smoky Continues to be the Most Visited Distillery in the World

Ole Smoky Distilleries continued reign as the most visited distillery in the world for 2023.

According to on-premise traffic counters, the four Ole Smoky Tennessee distillery destinations welcomed more than FIVE million visitors last year, topping all their largest competitors by significant industry margins.

Ole Smoky’s The Holler in Gatlinburg welcomed 2.2 million visitors, The Barrelhouse in Gatlinburg welcomed 1.1 million visitors, Pigeon Forge’s distillery, The Barn, welcomed 1.3 million visitors, and Nashville’s 6th & Peabody welcomed over 700,000 visitors in 2023.

Cardamom-Infused Old Fashioned

There is no better time to celebrate the classics then right now! Mix an adventurous and aromatic take on the Old Fashioned using Fierce & Kind’s award-winning spirits.

“In honor of the cocktail, The Old Fashioned earned its name from the first recorded use of the word ‘cocktail,’ describing a simple yet elegant mix of spirit, sugar, water, and bitters. Add a dash of cardamom and Fierce & Kind American Bourbon, and you’ve got an unforgettable twist on the classic.” Fierce & Kind Spirits

Cardamom-infused Old Fashioned 

Ingredients

  • 2 oz Fierce & Kind Straight Bourbon
  • 3/4 oz Cardamom Syrup
  • 3 dashes Angostura bitters
  • Flamed orange twist (for garnish)

Preparation

  1. Make the Cardamom syrup: Toast 7 cardamom pods in a small pot until fragrant.
  2. Add 1 ½ cups water and the peels of one orange, then bring water to a boil.
  3. Once boiling, reduce heat and add 1 cup sugar, stirring until fully dissolved.
  4. Turn off heat, remove the orange peels and let syrup cool before straining out the cardamom pods and storing syrup in the fridge before mixing with your cocktail!
  5. Pour the cardamon syrup and bitters into a whiskey glass.
  6. Stir to combine, then pour the Fierce & Kind Straight Bourbon.
  7. Garnish with a flamed orange twist and enjoy!

Gin

Ginjito Royale

Ingredients

  • 3 oz. Highclere Castle Gin
  • 1 Fresh Lime
  • 4 Fresh Mint Sprigs
  • Crushed Ice
  • 1 tsp. White Sugar
  • Club Soda

Preparation

  1. Pour 1 teaspoon of sugar in a 12 oz glass.
  2. Squeeze the lime juice and lime pulp with 2 mint sprigs into your glass.
  3. Muddle gently to mash the lime, mint and sugar in the glass.
  4. Fill the glass ½ way with crushed ice and add the gin.
  5. Fill the glass with club soda and stir gently.
  6. Garnish with a lime wedge and 2 mint sprigs.

Preparation

  1. Combine all the ingredients in a cocktail shaker with ice and shake gently.
  2. Strain into your favorite glass and garnish a dash of black pepper, 2 celery sprigs, an olive and a lemon wheel.

Ingredients

  • 2 oz. Highclere Castle Gin
  • 1 oz. Fresh Lime Juice (1.5 squeezed limes)
  • 1 1/2 oz. Orange Liqueur ( Triple Sec or Cointreau)
  • 2 Tbsp. Simple Syrup
  • Lime Circle for Garnish

Preparation

  1. Take a large cocktail coupe and run a lime wedge along the entire rim of the glass.
  2. Be sure it’s wet enough so the salt can stick.
  3. Invert your glass and press into a plate of kosher salt so that the salt sticks to the rim of the glass.
  4. Chill the glass while you prepare your ginerita.
  5. Add all ingredients into your cocktail shaker with lots of ice.
  6. Shake vigorously for 20 seconds and strain into your chilled cocktail coupe with 1 large ice cube.
  7. Garnish with a lime circle or fresh herbs.

Happy National Margarita Day! Every February 22nd, we celebrate the harmonious combination of tequila, lime, and a salted rim.

Kickstart your weekend with the recipes below, because the only thing better than a margarita, is another margarita! Cheers!

Charles Voudouris, personal chef for Robert Downey, Jr., uses a passion fruit reduction to temper fiery serrano-infused lime juice in his Passionate Serrano.

Passionate Serrano Margarita

Ingredients

  • 3 oz. Don Julio Silver Blanco Tequila
  • 2 oz. Grand Marnier Liqueur (+½ oz.)
  • 4 oz. Passion Fruit Reduction*
  • ¼ cup Agave Nectar Simple Syrup**
  • ¼ cup Serrano-Infused Lime Juice*** (+1 Tbsp)
  • Lime-Sea Salt**** Rim

Preparation

  1. Place all ingredients in a shaker with ice and shake for 30 seconds vigorously.
  2. Dip the top of glass in serrano-infused lime juice then the sea salt mixture.
  3. Pour shaker into a tall glass with 1 square ice cube.
  4. Garnish with 1 tablespoon of chopped serrano chiles on top and half ounce of Grand Marnier floater.

*Passion Fruit Reduction


Ingredients

  • 1 cup The Perfect Purée Passion Fruit
  • Concentrate, thawed
  • 12 oz. Passion Fruit Juice

Preparation

  1. Place the Passion Fruit Concentrate and juice in a medium-sized saucepan.
  2. Reduce over medium heat and simmer for 1 hour.
  3. Remove from heat and place in fridge to chill.

**Agave Nectar Simple Syrup


Ingredients

  • ½ cup Agave Nectar, light
  • ½ cup Water
  • 1 piece Star Anise, toasted

Preparation

  1. Combine water, agave nectar and toasted star anise.
  2. Bring to a boil in a small saucepan.
  3. Let simmer for 15 minutes and remove.

***Serrano Infused Lime Juice


Ingredients

  • Juice of 6 Limes
  • 4 Serrano Chiles, deseeded and pounded in mortar and pestle
  • 2 Mint Sprigs
  • Pinch of Kosher Salt

Preparation

  1. Combine sea salt and zest of 1 lime.
  2. Juice limes into large bowl and deseed and chop Serrano Chiles.
  3. Muddle chiles with a mortar and pestle until soft.
  4. Add lime juice in batches while working into the chile.
  5. Season with sea salt and mint at end.

  • ¾ oz. Tequila
  • ¾ oz. Grand Marnier

Preparation

  1. Combine the blood orange concentrate and water in a small saucepan (2 to 1 ratio).
  2. Add ½ cup sugar, a small pinch of salt, the rosemary sprigs and bring to 180°F on the stove (no higher).
  3. Chill completely before using in the margarita.

  • ½ oz. Blanco Tequila
  • ¼ oz. Cointreau
  • ¾ oz. The Perfect Purée Carmelized Pineapple Concentrate, thawed
  • ¾ oz. Fresh Lime Juice
  • ½ oz. Simple Syrup

Preparation

  1. Shake ingredients with ice and pour into a highball glass rimmed with red salt or sugar.
  2. Garnish with a lime and serve.

U.S. Beverage Signs Partnership with Cervecería La Tropical

Cuba’s Oldest Brewery, remixed in Miami, taps U.S. Beverage for sales and marketing support of expansion to new markets.

US Beverage, LLC, (USB) one of America’s leading beverage companies, announced today that it has signed an agreement with Cervecería La Tropical, Cuba’s Oldest Brewery, remixed in Miami since 2021. USB will provide sales and marketing support for the La Tropical cerveza portfolio, outside of its key market in South Florida.

La Tropical was founded in La Habana, Cuba, in 1888 by the Blanco Herrera family, on lands once owned by Federico Kohly, creating the Cuban beer industry.  By 1958 it produced more than 60 percent of all domestic beer sold in Cuba. It also exported its award-winning brands to the United Sates and the world. During the revolution, the assets of the brewery were seized and the founding families of La Tropical were forced to flee into exile in Miami. La Tropical was lost, but never forgotten.

La Tropical has quickly emerged as one of the most popular destinations in South Florida, serving an award-winning portfolio of authentic and refreshing cerveza and tapas that capture the spirit of La Habana-Miami fusion.

Celebrating nearly 30 years of operations, USB focuses on building its portfolio of recognized craft, import, cider and FMB/RTD brands through a national network of distributors. Per the agreement, USB will provide sales, brand building and logistics support to La Tropical brands as they expand beyond their existing Southern Florida footprint.

In 1998, Manny Portuondo, the great, great grandson of Federico Kohly, began a decades long mission to regain control of and revive the La Tropical brands. Following a joint venture investment from Heineken in 2017, he opened Cervecería La Tropical brewery and tap room in Miami in 2021. The brewery sits on a one-acre property in the Wynwood Arts District in Miami and consists of a 28,000+ square foot production brewery which can brew and package more than 30,000 BBL per year.

We’re Recapping ELEVATE 2023 with Rabbit Hole—Bourbon and Boards

Of course, we are all familiar with the pairing of wines with cheese boards, but how many times have you done a bourbon and cheese board pairing? If the answer is none – then you are most definitely missing out!

Rabbit Hole Bourbon and Boards was a huge hit with everyone who attended this unique and innovative seminar. Rabbit Hole Brand Ambassador Kristie Duve and Jessica Mattingly, owner of Cultured Cheese Shop and bar, hosted this brilliantly fun workshop – pairing bread, cheeses, nuts, honey, and even pickles – with a selection of Rabbit Hole bourbons.

The passion and purpose of Rabbit Hole whiskies is based on creativity, craft, and care. Being committed to those standards is clearly a reason Rabbit Hole is a standout in the world of bourbons. Paired with our board, we sampled their Cavehill, Heigold, Dareringer, and Boxergrail bourbon, as well as Rabelo, which is finished in ruby port casks. Each expression offered a different experience and brought to the glass a style of bourbon that showed off both the traditional history behind this whiskey, and a glimpse into the sophistication new techniques can contribute.

Showcasing the same creativity Rabbit Hole is founded on, Bourbons and Boards really was a fantastic, interesting, and fun seminar with such a cool twist on the old tradition of pairing wine and cheese together. This was one of our favorite seminars at Chilled 100 ELEVATE 2023!

We’re Recapping ELEVATE 2023 with Log Still Distillery Bartender Zen Seminar

In the world we live in today, we are constantly exposed to stress, worry, hustle, an influx of media images, and more.

We also happen to work in an industry that places a lot of demand on us – both physically and mentally. For most of the people who have a career in the hospitality industry, we are working jobs that require long shifts at odd hours, being on our feet with very few breaks, dealing with the many different personalities of people and trying to maintain all of it with a gracious, happy attitude and a welcoming smile.

We are taking care to make sure every single person that comes into our establishments has an amazing time. It is, no doubt, both rewarding and challenging. So a good question to ask is—How often do we slow down and take time for ourselves to destress, relax, and recharge?

Log Still Distillery Chief Brand & Sales Officer and Certified Yoga Instructor Denise Ingle did just that for everyone who attended the Bartender Zen workshop at Chilled 100 ELEVATE 2023. Denise created a beautiful, balanced, and relaxing atmosphere in our seminar room and led a class that was tailored to include everyone, regardless of your level of experience.

Monk’s Road Small Batch Bourbon by Log Still Distillery lent its sweet, smooth flavors perfectly to the hot toddy we indulged in during our yoga session. There was no better way to wrap up our day than with the stillness and movement of yoga joined with the soothing comfort of a delicious hot toddy. An absolute perfect pairing!
