The classic Negroni cocktail has seen many spins, but one that continues to stand tried and true is the Mezcal Negroni.

This cocktail offers an opportunity to dive deeper into the realm of mezcal. There are various expressions, showcasing the uniqueness of special agave breeds made by small producers with heart and soul.

While experiencing the nuances of an artisanal mezcal is best neat, there are certain top-quality mezcals that will make a classic Negroni come alive in exciting and unexpected ways. Let’s explore them all.

Mala Mia Cuishe

A newcomer to the mezcal crowd, Mala Mia may seem playful by way of its name (“mala mia” translates “my bad” in Spanish), but its mezcal lineup means serious business.

Of their four mezcal expressions, the Cuishe dances onto the bar ready to swoon gin lovers, luring them to the realm of mezcal. Cuishe is a rare agave variety that creates very distinctly herbaceous mezcal, with flavors that range from sage to clove to eucalyptus. Of course, we suggest sipping this mezcal solo, but Mala Mia’s Cuishe is so elegantly herbal that it will mix into a Negroni with finesse, a friend to bartenders eager to convert their gin-loving bar guests.

Ilegal Mezcal Joven

To us, this mezcal is a bar staple – especially when you see how handy it becomes when someone’s eager for a Negroni. Ilegal Mezcal Joven is made from 100% Espadín agave. It’s undoubtedly smoky with seductive citrus notes and a spicy finish that goes too easily with cocktails featuring sweet vermouth. Ilegal’s more pronounced roasted agave tones warm up the more bitter Campari, creating a little liquor love affair that makes for an exceptionally sippable Negroni.

El Buho


El Buho’s flagship Espadín is quite the fine mezcal for mixing. It slips seamlessly into a mezcal Negroni, with its clean and toasty flavors. It’s quite the compliment to Campari, making for an accommodating cocktail on cool evenings.

If you want to take your Negroni to the next artisanal level, El Buho Cuishe is something to experiment with. Italians Love G&T—Here Are 4 Italian Gins to Try

Heading to an Italian bar, you’d expect to hear the word Negroni far more often than gin and tonic.

But, Italians love their G&Ts. It comes as no surprise that the star spirit of both cocktails may trace its roots back to Britain and Holland, but the Italian peninsula laid an ancient foundation for one of the most beloved spirits.

Instead of diving into the nitty gritty history, we’re heading straight for the bottles. The Italian peninsula is now home to small-production gins with major flair. Whether you prefer your Gin & Tonic in its staple highball glass or a Spanish copa, these Italian gins will give a little more amore to your usual G&T experience.

Del Professore

The team behind Jerry Thomas Speakeasy in Rome was already known for its cocktail witchcraft. But, then they decided to bottle it with Del Professore.

While it began with vermouth, Del Professore soon extended into the liquor’s notorious partner in crime: gin. There are 3 expressions: the Monsieur, à La Madame, and Old Tom Crocodile. Each performs well in a classic G&T with Italian bartenders revealing their unique characters in a classic G&T.

So, which is the best? It all depends on your palate. Of course, you must begin with the original, the Monsieur, adored for its floral finesse. For those who like tea and spice, go for the à La Madame. It undergoes a deeper infusion of botanicals, transforming it into a spicy and seductive elixir. Finally, if you prefer things more British – fresh and direct – the Old Tom Crocodile is your pick.

Engine Gin

Don’t be fooled by this gin’s gasoline can bottle – this spirit is far from petrol, though it is just as organic. Engine Gin is an Italian gin made with all organic ingredients, a witty culmination of two forward-thinking Italians paying homage to not one, but two, histories.

The first takes us inside the gin; apart from the prerequisite, juniper, this spirit sings of sage and Sicilian lemon, a nod to Italy’s long history of aromatizing liquors, cordials, and any digestif with these quintessential flavors. Then, there’s the gin’s gas can-like packaging that takes us state-side with the retro days of the 1970s, dominated by Dodge Challengers and Ford Gran Torinos.

The result is a gin just as attractive as it is on the shelf as it is in a gin and tonic. The simple, yet robust flavors of Engine gin shimmer in the bubbliness of a G&T. Serve it in a highball glass and let the simple ingredients do all the talking.

Malfy Gin Rosa

Who doesn’t love a pink drink? Malfy may already be a household Italian spirit these days, loved for its bubbly brand evoking the essence of the Amalfi Coast. Yet, it’s their Malfy Rosa that really embodies this character, awakened by a secret ingredient: grapefruit, and it’s anything but bitter.

Malfy Gin Rosa lights up a gin and tonic year-round with its gorgeous pink color and zesty character. The infusion of Sicilian grapefruit and Malfy’s signature gin ingredients (lemon, juniper grown by the sea, and fresh Piemontese spring water) sparkle when combined with bubbles, transporting bar guests to a seaside aperitivo in Positano.

Plus, when served in a Spanish-style copa glass with a sprig of rosemary, a Malfy Gin Rose is arguably the prettiest G&T at the bar.

Vallombrosa Gin

When you think gin, you may not think Tuscany,but you should. The juniper many use in their gin production is actually from this region, which has long been prized for its gorgeous vegetation, yielding some of the country’s best herbs, spices, and veggies.

Traveling to the province of Arezzo, we find Vallombrosa, a distillery producing a dry gin that evokes the earthy elements of Tuscany’s rich terroir. The gin is undoubtedly juniper forward, undergoing a three-month infusion with berries hand-harvested from the San Sepolcro and Pieve Santo Stefano hills. The finished gin gives London Dry a run for its money; Vallombrosa is pure with finessed aromatics that light up in the bubbles of good tonic water. All you are missing is ice and a highball glass, rosemary sprig, optional.

Behind the It’s A Southern Thing Cocktail from SweetSong

Striking a balance in flavors and ingredients, SweetSong Kitchen & Bar’s celebrates the Native American legacy in the origins of the region, while also looking to the rich culinary traditions of Korean immigrants who call the Gwinnett area home.

Made with vodka, kudzu reduction, sauterne, and thyme, topped with sparking wine bringing a light and refreshing palate with each sip.

Kudzu grows wild in the South and is completely edible though listed as an invasive species. The Kudzu syrup replicates the taste of the flower that blooms on the kudzu vine. It is a refreshing cocktail perfect for the final hot days of summer!

It’s a Southern Thing

Ingredients

  • 1 oz. Wheatley Vodka
  • 1 ½ oz. Kudzu Syrup*
  • ¼ oz. Sauternes
  • ¼ oz. Dola Dira
  • 2 oz. Prosecco
  • 2 oz. Sparkling Water

Preparation

  1. Combine all ingredients (except for the Prosecco and sparkling water) and shake.
  2. Pour over fresh ice in a wine glass and top with the Prosecco and water.
  3. Garnish with a dehydrated bloom wheel**.

*Kudzu Simple Syrup


Ingredients

  • 150 grams White Sugar
  • 150 grams Water
  • 75 grams Strawberries
  • 75 grams Pineapple
  • 3 grams Dried Lavender

Preparation

  1. Combine diced strawberries, pineapple and lavender with sugar and water, and mix until sugar is dissolved on burner turned to medium heat.

**Bloom Wheel


Ingredients

  • oranges
  • simple syrup
  • micro flowers

Preparation

  1. Slice Oranges thin and dehydrate.
  2. Halfway through the process, pull the slices, paint on simple syrup and sprinkle micro flower petals (can get on Amazon).
  3. Complete the dehydration process.

Ingredients

  • 1 oz. Grey Goose
  • ½ oz. Grey Goose Watermelon Basil Vodka
  • ¼ oz. Dolin Dry Vermouth
  • ¼ oz. Berto Aperitivo
  • 1 oz. Honeydew Syrup
  • ¾ oz. Lemon
  • ¼ oz. Blue Falernum *layered
  • 8 dashes Butterfly Pea Flower Tincture *layered

Preparation

  1. In bottom of Collins glass, add Blue Falernum, fill with crushed ice.
  2. In shaker tin, combine non layered ingredients, shake and strain over crushed ice.
  3. Add more crushed ice and top off with Butterfly Pea Flower Tincture.

The Best of Saratoga Springs with Mixologist Michael Bohm

As a rare diamond or precious gemstone adorns the summit of a royal crown, so does the town of Saratoga Springs rest above the peak of the Hudson Valley, approximately thirty-six miles north of New York’s capital city of Albany.

For over two-hundred years the quaint hamlet has been a goldmine of tourism, entertainment and nightlife, earning its well-deserved reputation as one of the most beautiful and popular destinations in all of the North Eastern United States.

The town name was inspired by the presence of naturally occurring underground reservoirs of fresh water enriched with above-average levels of mineral content. The indigenous people of the Mohawk tribes regarded the water as sacred basins full of vitality that could dramatically improve your health in many ways. The Mohawk’s trust in the restorative benefits of the springs was followed by the later-arriving European settlers. They wasted no time and spared no expense building spas and bathhouses near the water sources, leading to rapid development of commercial real estate like the Grand Union Hotel, in its heyday, the biggest hotel in the entire world.

In modern times, the springs are still flowing. With such an exceptional pedigree of natural and cosmopolitan character for over two centuries, it takes a world-class bartender of extraordinary talent to build on and enhance the cultural cachet of Saratoga Springs. Mixologist Michael Bohm not only lives up to the task, he exceeds it with his veteran’s playbook of hospitality industry skills, dedication to quality, and easygoing, naturally friendly charm.

We quizzed Michael about his favorite cocktails for Spring and his experiences working around the history-rich town affectionately known as ‘Toga.’ Looking for a ‘French Vacation’ but your travel budget is more aligned with a road trip up Interstate 87 North than a round-trip flight on Air France? How long have you been in the Mixology / Bartending world & where did you get your start?

I’ve been in the game for about a decade now. I started barbacking at an awesome little beer and bourbon bar called Bondurants on the Upper East Side (of Manhattan). Got to work with some really talented people and learn what it takes to be behind the bar. I’ll never forget the first time I shook a cocktail and got reprimanded for not shaking with rhythm. Now I get compliments on it.

What are some places you’ve worked around Saratoga, or anywhere important to your career?

My first Saratoga gig was at the Adelphi Hotel on Broadway. Awesome Victorian hotel with a really great cocktail program. This is where I really started to get into the mixology side of the bar business. Playing with new ingredients, techniques and tools really helped to expand my concept of what was possible in the world of cocktails.

What is your favorite Spring cocktail to serve to customers out and about in this season of renewal and rebirth?

An old favorite of mine was something I called a French Vacation. It’s a pretty straightforward riff on a French martini but uses a really good white rum and adds some egg whites. We garnished it with some bright yellow edible corral which creates lots of bright, contrasting colors like a big beautiful bouquet of spring flowers.

French Vacation

Ingredients

  • 2 oz. of white rum
  • 3/4 oz. of pineapple juice, the freshest possibly available
  • 1/2 oz. crème de cassis
  • 1/4 oz. lime juice
  • 1 egg white

Preparation

  1. Combine all into a cocktail shaker with ice and shake.
  2. Strain into a chilled Martini glass.
  3. Garnish with yellow edible coral.

When you’re off-the-clock & not taking a break from the nightlife, what’s your favorite place (or places) to have a drink & why?

Tough to pick just one in a town full of great bars and restaurants but I love Seneca, Rhea, Hamlet and Ghost and 9 Maple. And if there’s a better dive bar than Desperate Annie’s anywhere, I haven’t seen it.

What is the strangest experience you’ve ever had working behind the bar?

Easily the time I asked a firefighter to stop sleeping on my bar and he implied that I was being rude and as a result he might be inclined not to come fight a hypothetical future fire at my bar. Firefighters are heroes and deserve our respect but c’mon.

What do you love about bartending?

I love getting to work with my hands, to create something that people enjoy right in front of me. Collaborating with talented people and that indescribable rush of relief and achievement after a busy service.

What inspires you about mixology?

I think the opportunity to elevate simple spirits with seasonal produce and ingredients is such a rewarding experience. It’s nice to see those of us in the front-of-house getting to do what the back-of-house has been doing forever. Making something, putting my signature on it and then seeing it be embraced is just the best feeling.

If / when you have the finances to open your own bar what will it be called, where located & what will the vibe be like?

I haven’t given a ton of thought about this beyond knowing I want a lot of rich leather and hardwood. Something homey but elegant, with an amazing bourbon selection and some good food. Somewhere that looks like a million bucks but only charges $20. Come to think of it, Ghostwood Country Club isn’t a bad name for a bar.

Tell Your Friends, a newly opened underground cocktail and live music lounge in North Scottsdale, aims to elevate the city’s upscale nightlife scene with a Gatsby-era ambiance featuring rich maroon velvet drapes, mirrored walls, and fanciful lighting.

Open Thursday to Sunday, the lounge hosts nightly live performances by vocalists and musicians blending classic sounds with a modern twist. Located beneath The Americano and accessed through a nondescript side door, the venue’s secretive allure is enhanced by its underground location with 16-foot ceilings, a rarity in Scottsdale. With a cozy 52-seat capacity, Tell Your Friends offers an exclusive and personal experience, ensuring attentive service that makes each guest feel like a VIP.

A collaboration between Creation and Clive Collective, Tell Your Friends was inspired by a gap in the North Scottsdale market, aiming to meet the high expectations of its demographic, according to Mikis Troyan, co-founder and managing partner of Clive Collective. Chef Beau MacMillan’s upscale small bites menu, including dishes like TYF Korean Fried Chicken and Caviar D’Aquitaine Ossetra, complements a cocktail menu curated by award-winning bartender Keifer Gilbert.

The menu features approximately 20 unique drinks, blending proprietary cocktails with classics, reflecting the venue’s Gatsby-esque atmosphere. A few signatures include Friends with Benefits ($25), whiskey, bitters, sugar – bottled and cured in beeswax; One Time Thing ($26), cognac, banana, Montenegro, sherry, bitters; Hops to the Beat ($24), tequila, citra hops, serrano, pineapple, lime, salt; Money, Baby! ($20), whiskey, strawberry, coriander, lemon, ginger beer; Flapper Fizz ($24), vodka, apple, vanilla, amaro, lemon, champagne; and In the Mood for Love ($22), gin, raspberry, red bell pepper, Genepy, lemon. Classic cocktails (all priced at $20) round out the menu with favorites like an Old Fashioned, Manhattan, Sazerac, Bitter Bee, Negroni and French 75 among them.

Live music is integral to the experience at Tell Your Friends, featuring some of the Valley’s top artists performing nightly. Justin Massei, co-founder and operating partner of Clive Collective, emphasizes the venue’s commitment to offering a dynamic musical experience, from three-piece to four-piece bands, with entertainment going until 2 a.m.

Immediate goals for Tell Your Friends include becoming renowned for the best service, vibes, and drinks in the Valley, perfecting their offerings, and becoming a community staple. The venue will eventually expand their hours to offer late-night drinks and entertainment, launch a robust champagne menu, and enhance the food menu with champagne and caviar options.

At the Kahala Resort & Hotel in Hawaii, where it’s always summer, Director of Food and Beverage Christina Maffei makes Endless Summer with tropical flavors of banana, pink guava, and pineapple. Amaretto, mint, and Prosecco balance the fruits’ sweetness. Check out the fruity drink below!

Endless Summer

Ingredients

  • ¾ oz. Cruzan Banana Rum
  • ¾ oz. Cruzan Guava Rum
  • ½ oz. Amaretto
  • ½ oz. The Perfect Purée Caramelized Pineapple Concentrate, thawed
  • 1 ½ oz. The Perfect Purée Pink Guava Purée, thawed
  • Fresh Mint
  • Prosecco

Preparation

  1. Combine ingredients, except Prosecco, into a mixing glass with ice.
  2. Shake with a Boston Shaker and strain into hurricane glass.
  3. Top with Prosecco.
  4. Garnish with large pineapple wedge and mint sprig.
  5. Enjoy!
